Chocolate Babka with Swirls for Days | Food & Wine Recipe

- This amazing chocolate babka gets extra flavor in the swirl from chocolate cookie crumbs. As a bonus, the tender-crumbed babka is topped with a thick and luscious chocolate glaze.
Ingredients
DOUGH
4 cups all-purpose flour, preferably King Arthur
1/3 cup plus 2 tablespoons sugar 2
teaspoons fine sea salt
1 cup whole milk, warmed
1 packet dry active yeast
1 large egg plus 1 large egg yolk
1 stick plus 2 tablespoons unsalted butter, cut into tablespoons, at room temperature
FILLING
9 ounces milk chocolate, finely chopped
3 ounces bittersweet chocolate, finely chopped
1 1/2 sticks unsalted butter, cubed
1 1/2 cups finely ground chocolate wafer cookies
3 tablespoons honey
GLAZE
12 ounces bittersweet chocolate, finely chopped
4 ounces milk chocolate, finely chopped
1 1/2 sticks unsalted butter, cubed
2 tablespoons light corn syrup

Recipe doesn't work
It didn't work for you, seems fairly simple..what was it missing? I don't want to waste ingredients for nothing
This is almost identical to the babka recipe in the cookbook “a good bake”.
I found the recipe to be waaaay too wet . I’m guessing too much milk and possibly not enough eggs .

This is not babka. At least not original babka from Poland. First of all - there two major types of dough:
1. with baking powder - dough is more moist to the point that rolling isn't possible. Classic example is sandy babka (babka piaskowa), that requires a bit of potato flour (or potato starch);
2. with fresh yeast - this dough is rollable, but it doesn't rise for a long time and has more sugar and more flavoured oils (usually almonds or alcohol or orange or lemon or cinnamon or vanilla) and additions like raisins. Classic example is Easter babka (Babka wielkanocna). It's basically 'must bake' cake at Easter time in Poland.
Second thing is that babka is always baked in round baking tray - it looks like upside-down half-cone with wavy sides. There are two popular types of this tray:
1. with chimney in the center. Germans use that too for their Gugelhupf cake,
2. without chimney - this one is very similar to French brioche à tête (parisiene) baking tray.
Anyway type "babka wielkanocna" in Google, you'll see the difference.

Looks terrible tbh. The dough is under risen for sure. Trying to cram all that into one loaf didn't allow for a proper rise.
This is probably the best recipe I’ve found so far. Most the other recipes I’ve found are dry babkas. This is the only one with the chewy moist looking inside
Oof, too much. Americans love to turn everything they eat into candy or fried cheese. Just get some canned crescent rolls and a tub of frosting and call it a day.

What’s traditional one? The other recipes I’ve found are really dry. This is the only moist chewy looking one I found
