Tofu and Mushroom Adobo Recipe

  • Hey Foodies! Here's a vegan version of a Filipino classic dish, Adobo. This dish is easy to make and requires only a few simple ingredients, vinegar, soy sauce, laurel leaves and garlic - it’s a delicious medley of savory flavors perfect paired with a big bowl of rice!

    Ingredients:
    400g silken tofu (freeze, thawed and pressed for 3 cycles)
    3 tbsp nutritional yeast
    1 tsp garlic powder
    2 tbsp cornstarch
    2 tbsp soy sauce
    1 tbsp oat milk
    2 tbsp oil
    Air fry at 375°F for 12-15 minutes, flip halfway through
    150g king oyster mushrooms
    Air fry at 375°F for 8-10 minutes
    1 head garlic
    1 cup mushroom stock
    1/4 cup cane vinegar
    3 tbsp soy sauce
    2-3 pcs dried laurel leaves
    1/2 tbsp peppercorns
    1 tbsp coco sugar
    slurry 2 tbsp cornstarch + 1/4 cup water
    cooking oil

      Hi, you may use white vinegar instead. Coco sugar is coconut sugar, you may also use brown sugar. 😊 Happy cooking!

    it looks very yum i would like to try it. But can the cane vinegar and coco sugar be substited ? Those ingredients are too expensive to use only for one recipy. I always buy stuff i only get to once and then have to throw it away.

      Hi, nutritional yeast will make this savory, you may swap with mushroom powder, veggie powder etc. note that you should adjust the quantity since some of the savory powders are too strong. Thank you

    Try shitake mushrooms too, they are amazing with soy
