    For those who want to make a quart or a whole gallon and need to figure out the amount of sugar it is super easy. There are two half gallons in a gallon so if you are making whole gallon, simply double the amount. There are two quarts in a half gallon so if you are making a quart, then half the amount.

      Heidi, I just got through starting 2 half gallons of apple vinegar & dehydrating the apple slices,so now instead of having one product out of the apples I had,we will have 2,thank you so much & God bless 🥰🥰💞🙏💞

      My vinegar molded. Is it salvageable? I added 1/4 c sugar but set it on my counter. Missed the fact I should have stirred every day.

      @@debrabaer5037 Just allow it to finish out then lift/scoop the moldy parts off the top and strain. If it turned to vinegar as it should have, it will kill any mold that may have ended up in it

    Not sure if someone has already commented on this. The reason why vinegar will go flat and mold if not enough sugar is added is down to the microbiology. Acetobacter are pretty high up on the microbe food chain. First wild yeast (or added yeast) breaks down the sugars and turns them into alcohol. Yeast can't really live in a high alcoholic environment, so they begin to die off. Acetobacter loves alcohol/sugar and turns it into acetic acid. But it will also eat lower class microbes like molds, yeasts, and other bacterium. Once it runs out of food, they will start to cannibalize themselves. If they have not created enough acetic acid to ward off other ph sensitive microbes, the baddies will move in and take over. Having plenty of sugars (but not too much) will allow a smooth transition from yeast to acetobacter and eventually form a scoby. This means there are still living acetobacter (and probably some living yeasts) in the vinegar and the population has reached a balance that will safely ward off other microbes. Once finished, keeping it airtight will help vinegar to last (potentially) forever.

      Yes great point....like when making red wine vinegar you must add 64oz of filtered water to a gallon of wine before you ferment. The liquid must have an alcohol percentage of 9% or lower or like you so effectively explained the fermentation will stall.

    Your an amazing good hearted loving woman teaching how to live a better life, I was given a life sentence by my Dr. I lost hope became so depressed after months past taking 15 different medications aday I woke up and one of your video pop up since then I realized If I beleave him it will happen sooner so I took a big step weening off meds down to 5 and keeping up holding on to hope and remind myself that I can do this I will live !!! There's so much healthier ways. "I CAN DO THIS" !!! Thank you❤

      A doctor once told me you are 98% responsible for your health and treatment. She said she would work with me because I did not want to take a plethora of meds. Food is also medicine and your gut does alot of those processes, so that is one of the first things you want to take care of so your liver, kidney, pancreas, spleen, gall bladder can all get back on line as a team. Ferments are good to encourage your own body's good bacteria to grow. I noticed I felt really lousy to begin with, but as the days passed and I got better I really didn't know I was that sick until I started feeling better. I did still need the doctor, I did have 3 surgeries. I haven't been to a medical facility in a long time. Some doctors are also licensed to practice natural health alternatives. You have to ask around, some announce it, some don't.

      loboalamo what about people that have had their gallbladder removed? I had to have mine removed in 2016 and my body has not been the same sense! I goof around with my doctor and ask him if I can have a gallbladder transplant!!! I absolutely hate not having my gallbladder! My stomach hurts all the time! I know you are not supposed to eat high fat foods but even when I eat an apple it tends to hurt.

    Hello Heidi,
    I am a new subscriber (3months). I came over from Mary’s Nest. Between your tutorials and Mary’s, I have a science experiment kitchen. 🙂
    It is very rewarding, and therapeutic to work old style in the kitchen. I am enjoying this new journey. Currently looking for gallon buckets or larger to make vinegars. I started in quarts and loved it. But I need larger sizes with all the cleaning and laundry, I have little ones. It will save me so much money.
    Food scraps to vinegar? Good Lord, I wasted so much before!

    Just want to say Thank You Heidi. I never tried making my own vinegars before I saw your channel and now I make them all the time! I use them for everything from cleaning to laundry to using in the meals I prepare. I always hated to throw away the peel and cores and scraps from my garden grown fruits, herbs and veggies and thanks to you, now I don't have to! :) Blessings

    Our local food drive provided me with loose pomegranate seeds that had begun to ferment as the plastic seal was broken, I mashed them up with some blueberries and they're making one of the healthiest vinegars I've made thus far, a mighty pellicle has formed over top it and the smell is heavenly. just thought I'd share. thank you for helping me get into vinegar making.

    Bad leg break 5 weeks ago. Four surgeries regular antibiotic regimen. Spent time studying fermentation in between operations and rehab sessions. Have my kefir going. Carrots, beets, kraut, and eggs are finished and in fridge. Kombucha is in a quiet place will be another week or two for my scoby to mature.
    Vinegar started this morning

    I make apple sauce with my leftover apples after my cider is done. I add cinnamon and sugar or honey to taste and blend it smooth. Its really delicious :)

    I loved this video!!! I made vinegar for the first time this year using the scraps from muscadines given to me and used for jam. I got a basic recipe online, used half a cup of sugar. So many of these tips you gave were things I had to wing.... but the vinegar turned out so good!! And I was so excited about my big fat scoby! And now I feel much better about my little thin one, too!

    Wow it looks so easy. I'm going to make 5 vinegars today. I'll start with banana peel and mint. My ex gave me a bunch of ripe bananas last night to make banana bread with. I'll make banana bread, and use the peels to make vinegar. I foraged a few cups of wild mint on Thursday. I'll add some of that to the banana vinegar. Then I'll make a rose and cherry vinegar, a rose and apple vinegar, and an orange and herb vinegar, and a beetroot, chive flower and lemon grass vinegar.

    Glad you decided to do this one Heidi; Lots of questions going around on this one!
    Oh ya: Update: The apple peal and core vinegar that went alcohol on me is now resolved! I had already removed the fruit, so I simply I added the mother from my other batch and threw in parts from two more apples. It is no longer alcoholic and has become sour headed towards vinegar! Success!

    Heidi I just love your videos! This one just affirmed what I have in my pantry. I usually use up gleanings from making an apple pie. I’ve always been mystified what the result was. Sometimes I ended up with a really fizzy and flavourful cider! So I just seal them and put them in the pantry and forget them. Suddenly I have a great vinegar and it tastes wonderful in a glass of cold water! Sure settles the old tum!

    Heidi I finally made Apple Vinegar!!! So excited! I canned a bunch of apple jelly, pie filling and apples and had a bunch of cores and peels. It was so interesting watching it ferment the last several weeks...sounded like backwards Latin sometimes 😄
    Just tested it and filtered it out and it tastes like vinegar!! Now onto citrus vinegar!

    Great video as always! I use to make it without a starter but this time I added a little kombucha and ACV from a previous batch and the fermentation got so much stronger and sooner.

    Thanks for the update on making vinegar. The first 2 I tried failed but decided to give it another go. I made a raisin and a mixed fruit one. Came out great! I currently have 3 going, an apple, a pomegranate and a floral for using on my hair. I love making vinegar. 😃

    Heidi, you are such an inspiration, I am right now attempting to make banana, grapes, & blueberry vinegar. The first time in my life to make vinegar in 25 years.
    I wanted to ask how long does vinegar last? I actually did use a Martha Washington recipe about 30 years ago when I made blueberry vinegar and it’s still in the glass bottle with a cork on it. I was wondering how I know if it is still any good?
    It looks a lot like a thick syrup. Also I’m making persimmon wine for the first time. We have 4 gallons, two I’m using your method and two my friend is using, Let’s say a more purified method, with all kinds of stuff he put in it to keep bad yeast from forming. I’m trying your way. And mine is still bubbling. Anyway God bless you for inspiring me.

    Floods here cause of rain. Still: God is good. Overwhelmingly good. I want to thank you for your teaching how to make vinegar. I followed your description and have made vinegar with roses, lavender, camomile and use it for cleaning and hair-'soap'. Also I had cacao-bits left over and thought to give it a try. It looks and smells good: for baking later.. Also with mint, which is a fine soft vinegar and with a combination of raisins and basil another one. All fine.     My apple & herb vinegar turned out wonderfully! Now I have apples that will go into another batch. I need to move up to a bucket to make it though. 1/2 gallon jars just don't hold enough. I make a mess when I stir 😁

    I have a big bag of dried mixed fruit and I wondered if I could make vinegar from that. I’m sure it would be perfect I’m just not sure if I add sugar or not. I make lots of apple vinegar - raw, and i drink it. 😋

    Hi Heidi, For my first try of vinegar, I couldn’t think of anything but making lemon 🍋 (the whole fruit) vinegar. I know expensive but it is just like I was compelled LOL. I HAD to try it, I wanted lemon vinegar SO BAD!! Anyway I took 5 nice size lemons, cut them up a bit and gave them a buzz in the blender. Much of it got really pulped, that could have been my first mistake! Then I put 1/4 C sugar in my 1/2 gal jar with my well water, gave it a mix and covered with a coffee filter and rubber band.. Stirred it every day for WEEKS, took white mold off DAILY after about 2 weeks. I added more water once, then after a few more days I added another 1/4C sugar and some fresh, small chopped up lemon and still stirred it every day… Well, here we are May 6 and over the months, (almost 2) there is STILL white mold on it constantly and I am now DONE with Lemon vinegar. I am going to throw it out, bleach and scrub the jar then add it to the dishwasher for the next load… I might try banana vinegar now because I have a whole bunch that is ready to bake with this way I will not add the peels to the compost till later and I might add a nice handful of spearmint to the jar also because it is growing nicely out in the yard……….I want to thank you for all of the important info you share with us here on CZcams OH and that I have watched your videos for quite a while and for some reason I didn’t subscribe till now I guess I thought I did… Anyway, Stay Safe and God Bless!!

      It may have just been kahm yeast on top of it, which is said to be harmless. Some batches just don't turn out well though.

      Yes, it was either kahm yeast or even a SCOBY trying to form though adding sugar after two weeks can bring the fermenting process to a stop

      Heidi I recently tried making strawberry vinegar on April 20, 2023. I used a 1/2 gallon glass mason jar, filled with strawberry 🍓 caps, spring water, and 1/4 cup sugar. I put a piece of cloth on top with a rubber band. Stirred everyday. After about a week I started noticing a pink film on top. I don’t know what I did wrong. I gave it another week, added another 1/4 cup sugar. No bubbles, but the pink slurry. I dump it out. I just don’t understand what went wrong.

      The benefits of apple vinegar and ACV would be the same. Your other vinegars will also have many similar benefits but some will be a bit different depending on the fruit and herbs used but they will all be probiotic

    Aha, happened to my oregano vinegar, it was fine, bottled it, then I wanted a different bottle for it and found it was no longer sour, not at all, like colored water, no mold either. Guess I will use it to water my plants😂

    You can read thoughts, Heidi! I just started a new batch of apple vinegar 10 minutes ago :D I think, I'll start a citrus vinegar soon.
    Do you use it for cleaning as it is or is it too concentrated and needs to be mixed with water?

      I use it as is myself, I never dilute but some people may want to depending on what they are using it for

    I have tried to make banana vinegar several times but it gets slimy. All my other vinegars have turned out great! (apple, peach, pear, mint, basil, bell pepper, cucumber, kiwi, prickly pear, floral, and a "hair" combination) Any suggestions? I love your videos! I have learned so much from them. Thank you for sharing your wisdom!

      Not sure what to tell you on the banana vinegar, are you using only the peels? That is all I use in mine and they always turn out great. One of the most dependable ones I have made

    Such a great video - I think I watched it a few times but really paid close attention this one. I am so glad you said that about ACV- I made apple scrap vinegar and I thought I did it wrong because it was very thin and clear. Almost threw it out but makes sense. Going to try that banana mint combo.

    Thank you, Heidi. Rewatching the video today. I’m making apple butter and applesauce, so I’m using the scraps, peels, cores and ends to make vinegar. Not as much actual fruit, but figure it’ll work, right?

      Yes, it should work well. Scraps like that are usually all I use anyway when it comes to fruit vinegars

      You could but they would turn black and may make for an unsavory color of vinegar

    Heidi, I’ve had my apples brewing since 10/20/22. It is still real bubbly and doing great. When do I strain the apples? I’m having so much fun making different vinegars. Just haven’t completed any yet. Once I know the complete process, I will feel much better. I feel like a mad scientist.😂 learning so much from you. Thank you! 🙏♥️

      some people strain it by now but I do not bother until it is done. If it is still fizzy, it is not finished yet. Once it goes flat, taste it and see if it tastes like vinegar and then you will know

      @@lauracrandall3439 no, it is not done when the bubbling stops because at that point it is mostly alcohol, it still will need two more weeks for the alcohol to turn to acetic acid

I made up some ACV (For my hair rinse) & I sealed the jar with lid & put in the refrig., then I watched this video, which made me put a square T-Shirt on top with a rubber band & returned to the refrigerator, but once all the healthy items I put in. as this year I also grew herbs, garlic, turmeric & ginger etc... Do I still need to shake/wiggle the jar to keep it mixed up or just leave the jar alone, please? Wish you could have seen my tall "Love Lies Bleeding", I grew 4 of them, not so easy while living in an apartment, lol... Take care, loves & hugaroonies my funluvn friend... L8er

      You don't need to use soap in your intimate areas. I haven't in years. I'm actually healthier... no more infections nor fungus. I've also changed other things
