    HONEY & MAPLE SYRUP RESULTS:
    Honey Results: The 2-stage fermenting process into vinegar was successful and had NO detrimental effects to the yeast or acetobacter. The fermentation was as close to text book as it can get. End PH by day 27 was 2.9 with a very nice flavor. This is my only vinegar to ever begin to form a gelatinous SCOBY mother on the top within the 1st month.
    Maple Syrup Results: The 2-stage fermenting process into vinegar was successful. Although it was vinegar at the end of week 3 (about the same time as the honey), it was not "text book" during the process. Bubbles took longer to form than the batches with honey or sugar and the bubbles were different. Instead of being frothy, they were dense. I was never able to detect an alcohol smell like with the honey & sugar batches, but the alcohol fermentation must have happened since it did turn into vinegar. The smell remained neutral, like apples. The liquid also became the consistency of a non-sticky syrup, whereas all the sugar & the honey batches remained similar to water. End PH was 3.0. The flavor was accented with an ever-so-mild hint of maple syrup which was quite nice.

    Love making my own vinegars! Through the years, I have learned you can use not only apples, but also other fruits. One of my favorites would be raisin. I also use herbs, some flowers..my favorite being pansies😁

    I worked at a restaurant in Philly ~30 yrs ago where we had a most extraordinary customer. He used to make vinegars out of some of the rarest and most phenomenal wines I had ever seen. He came very often, and was very generous w/me in allowing me to taste everything he did. One that stood out was made with a 1970 Chateau d'Yquem Sauternes - a very rare, expensive and delicious dessert wine. Thanks to him I was very familiar w/the best of the white Bordeaux dessert wines - but the vinegar he made from this one was literally life changing for me. To this day it sits in my memory as a frame of reference for how delicious a complex sweet/sour taste is possible to achieve.
    Store vinegar is typically 6% acidity - this was ~3.75 - 4 % (so very mild). We poured barely 1oz into tasting glasses and drank it in micro tiny sips. It was delicious the way true 20yr Balsamic Tradizionale is, but SO different. This was light fresh and not overly viscous, where (true) Balsamic is thick, resinous and a bit too cloying to drink much of. That night I made him seared foie gras w/the Sauternes vinegar drizzled on just as is. Of course I couldn't put out anything w/out tasting it also! Dr. Feinberg brought in the first white truffles I ever tasted and so many great dessert wines and Champagnes.
    He was also very generous in sharing very detailed info about his vinegar making process. Years later I did a deep dive into vinegar production from good dessert wines. I also read through the few existing patents I could find for commercial methods of production. The strategy we used was based on the principle that a home or restaurant kitchens are heavily populated by bacteria that would contaminate the target flavors. So we found a good source for starter culture and used that every time. We also did everything possible to speed up the process - the longer it was fermenting, the higher the propability that it would get contaminated.
    Eventually I came up w/my own process - based heavily on the Surface Culture / Generator process. My method used a (brand new) glass bong (no joke - a cannabis water pipe!!), a bunch of glass beads an aquarium pump, and a chamber of HEPA filtered air. If anyone is interested in details LMK - I'd love to see if it could be improved upon. I also have a list of references I found helpful (Sandor Katz's book "Wild Fermentation" was SO helpful. Great to see him so heavily referenced in this video).

    *lol* I started my ACV six days ago..
    It's an ..apple year, more fruit is branches, friends and I can handle,
    well, two buckets, roughly cut apples from three (2½) different trees = 12 liters, + 10 liters of water to cover the fruit (and 10 dl of sugar)
    I "cheat a little", had a too old "champagne-dry yeast",
    in previous years I've made wine, it won't be bubbly ACV :D , it just means that the yeast can "tolerate" higher alcohol content, which would otherwise ..kill the fermentation..
    I have a .." mother ", saved since 5-6 years, I usually let .." her dive and swim", when I strain the fruit,
    to get speed/start on the vinegar..
    The first time, I had ..forgotten the jar of "mother" in my ..root/wien cellar for two years, expecting something dry to wash out, but "she" was as ..slimy, like a jellyfish, that day "she" moved in there :O

    I love making my own vinegars using all sorts of juices. My latest experiment was using a commercial pomegranate/cherry bottled juice. It’s bit on the expensive side, but the final product was spectacular. Unfortunately, it was so good that my grown children had to take some back home to their families. I only have 1 liter left from the gallon I made. I just put up another 2 half gallon ferments. The only thing you have to confirm is that the juice is only pasteurized and has no other additives (like preservatives). I add 1/8 cup of sugar per half gallon and transfer a well used mother that I started years ago (it is very active and I always keep it working on a new batch when a ferment completes). I use a huge amount of vinegar, so it’s a battle keeping my shelves stocked with a good variety. Love your videos. Thanks!

    Great video, easy to understand instructions - thank you for the printout too. I made 3 batches, a week apart, using cut up apples. Fermentation went great. Now, the vinegar has been sitting for a few weeks and is ready to cap. Ph seems good. My only comment is - the vinegar is tangy but smells a little like mold with a little white residue on the sides of the jar. No visible mold on top. Guess I'll set it in the cupboard and see if something develops. As it is, I can still add it to the chicken's water. 🙂

    I have really enjoyed this video. SO MUCH INFORMATION!! I have played with fermentations in the past, but not very successfully as a rule. But I love fermented foods and its that time of year again so I will be at it again this year. Thanks for the thorough information.

    Well, not only have I watched your video till the end, I did it 3 times now!! 😂 So much to learn and remember…
    My very first apple vinegar that I started on oktober 2nd is great!! I never knew vinegar could taste this good!! I’m very proud of it, it gives me great pleasure and I immediately started a new batch, since I had some apples left, from our trees. Yay!!
