    Ingredients
    - 5 red jalapeños
    - 1½ cup dried chiles seeds removed
    - 2 tomatoes wedged
    - 4-5 large shallots
    - 1 piece [4"X5"]kombu soaked in ¾ cup of water
    - ½ cup tamarind juice from wet tamarind used a ping pong ball-sized tamarind
    - 1 medium-sized onion sliced
    - 2 palm sugar round or sugar plus more to taste
    - 1 teaspoon salt plus more to taste
    - ½ teaspoon mushrooms powder
    - a few pandan leaves tie into knot
    - oil for cooking
    Coconut Rice (Nasi)
    - 4 cups Jasmine rice rinsed thoroughly
    - 4-5 cups of water
    - 1 can [400ml) coconut milk
    - 1 shallot thinly sliced
    - 1 lemongrass stalk white part - bruised
    - 2 slices of ginger
    - 1 teaspoon salt
    - a few pandan leaves tie into knot
    Sides
    - 1 cup raw peanuts used red skin peanuts
    - cucumber slices
    - pan-fried plant-based egg cut into slices
    - banana leaves cleaned and wiped dry with paper towel

    Buddhist vegan don't eat onions, garlic, shallots, chives and eggs. May we know what to substitute for these vegetables? Thanks

      I usually simply omit them and adjust the amount of chili and tamarind when I need make without allium.

    First time seeing kelp in sambal. Will try this version one day. Good job in making vegan asian dishes! We need more varieties of delicious home made vegan meals.

    Looks delish! Could I use lemongrass paste in place of the actual stalk in the rice or would it alter the flavour too much?

    Hi WoonHeng, I found your cooking video by chance. I like the way you cook. The sambal looks great! 😃 I've been wanting to make vegetarian nasi lemak but wasn't sure how to make the sambal. I am a vegetarian. Can I omit the onions when preparing sambal? Or is there a substitute for onions?

      Hey Cel, I actually made them without onion before and just use chiles. But I would adjust the sugar. Can you have other spices such as lemongrass or galangal? If yes, you can a small amount of those to increase the taste. If you can find curry leaves, that'll be even better. Without onion, you'll need to add more chiles.

      It will lack of some umami taste without the kelp. If you can't find tamarind, you can use lime juice. A little sourness goes a long way. :-)
