Hello, very inspirational thank you for sharing. I don't know what it is but I can watch bread baking all day every day.
We got our first Lame today, a classic one like the one Emerald is using here. A huge “thank you” to Emerald for her videos demonstrating the use of the lame and to whole team for your countless Patience in recording the many ways to score bread. My husband and I have spent many hours listening to/watching Your Channel since early 2020. We have been very thankful to see your strength in getting through all the challenges and wins. We are beyond happy for all of you and the Team. It has kept our focus on the strength of good people getting the good things hard work brings. Although we don’t know you we are hopeful to visit Proof Bakery in the future once we are all the way through this pandemic. Wishing you continued success. Thanks again.

Have you ever made a loaf for yourself or your colleagues, where you can just try out technique? (like different types of eye "cutouts" or very fragile stuff?)
i do this pretty often! i usually bake one or two of these a week do work on new ideas and techniques. my coworkers are typically pretty happy to take them off my hands.
anyone else think it looks like the dinosaur is on the moon? with the white rice flour and the big circular function score around the whole loaf?
How do you keep your loaf from falling flat ? I try to score pretty but the load starts to spread

Developing dough strength and producing a proper sourdough bread might be better explained elsewhere IMO
it comes down to the strength of the gluten, the tension from shaping, and scoring the loaf when it's cold and before it's too fermented!
@@nikolovesfood I agree. Flour here is relatively good in quality but so low in protein. I can't get bread flour over 11% protein here
Beautiful! What tool are you using to score the pattern before using your lame?
it’s nothing special, just a traditional lame without a blade. any thin, blunt stick would work. sometimes i will use the dull end of a skewer or a cooking thermometer, just whatever is handy!

Are you using white rice flour on top? Is standard bread flour ok to use when decorating?
yes, i use rice flour! i have heard of other bakers using all purpose or bread flour, but can’t attest to that myself since i haven’t tried it personally.
Does anyone know why my sourdough goes flat when I turn it out of the basket? It raises so well, to the top of basket but deflates to 1/2 the size when it gently comes out of basket. Help!!!
Likely it is not shaped in a way that creates tension with a solid shape. We have several videos that cover shaping which I would encourage you to browse.

Decorative is nice but let be real , let say this take 10 min of your time for 1 piece , this mean costomer need to pay the bread 3$ to 4 $ more only for the decoration , just my 2 cent peace
For a center piece type of bread that would be very much ok, other decorative scoring will be combined with the functional scoring and takes very little time per loaf. Also to compare production time per loaf with regular fabricated bread (and that includes products from a lot of actual 'bakeries') will never seem to make sense... My 2 cents 😉

@charley222 I didn't think you were, just trying to point out that the segment that this bakery is targeting are probably likely to appreciate the craftmanship and art involved in creating the end product and are willing to pay for that. The bakery will never be able to compete from just a cost perspective with something like supermarket bread. Live long and prosper and may the force be with you 😊
I agree! Most of the loaves I score are very minimal in comparison to this one. These are really just for gifts or special occasions. I only make a few a week unless it's a big holiday.
Since she uses these as a display piece at the market, they would also bring in more customers who are interested in seeing the designs. The extra time spent on the loaf could be worth it in terms of advertising.
