SPICY Drunken Grilled Pineapple - A New Twist on Brazilian Steakhouse Dessert

- OK, get ready for something completely different! This week we made a VERY spicy, drunken pineapple on a Big Green Egg grill on a Trompo King. It is a bourbon soaked, rubbed down pineapple that was cooked for an hour and let me tell you, it was definitely full of flavor......and heat!!! We used PS Seasonings "Honky Tonk" Nashville rub (AVAILABLE ON OUR WEBSITE STARTING MAY 15, 2022) If you are looking for a great summertime bbq dish that will wow your friends and family, look no further! My suggestion, cut WAY back on the amount of spice than what I used. My mouth was on fire!

You never mentioned the actual cooking time from the beginning stage to one hour later to the finish. Looks wonderful, I'm sure you'll perfect it to your liking, I'm like you find the right balance between the heat and the sweet with the bourbon as a bonus flavor. Very cool idea.

So I'm thinking cored pineapple whole, soaked in the bourbon, filled with montemorency cherries and smoked just like this. Looking for ideas here, I thought mint or something light like that to add to the cherry, but that doesnt seem right. Garlic is too much probably, I dunno, maybe just some chives...
I don't even know what montemorency cherries are but it sounds like a great idea to me. I agree about the garlic, although garlic usually goes well with anything. I actually think mint would be great with it or possibly some fresh basil leaves. Experiment, try some new combos. You just may surprise yourself!

Definitely too spicy for me. But I can see doing a brown sugar rub instead with that liquid poured over at the end.
Oh, I agree totally, WAYYYYY too spicy for me too. It was tasty tho. Yes, a cinnamon & sugar rub would be great too.
