    Classic Hong Kong Style Chicken A LA KING
    ingredients:
    1/2 onion
    1/2 red bell pepper
    1/2 yellow bell pepper
    1/2 green bell pepper
    2 chicken thigh / 2 deboned chicken leg
    1 tbsp ground garlic (optional)
    marinade:
    1tsp salt
    1tsp sugar
    2tsp cornflour
    a pinch of pepper
    1.5 tsp light soysauce
    White Sauce:
    30g flour
    30g butter
    250ml Full cream Milk
    (or 170ml Full Cream Evaporated Milk + 80ml water)
    300ml chicken broth

    Pardon my ignorance... but what is the difference between HK style chicken ala king and non-HK style chicken ala king?

      hi, I can say the marination of HK a la king and the ingredients we use makes the difference. For the Hong Kong Style chicken A La King, we use soy sauce to marinade the chicken which makes it so called "Soy sauce Western Cuisine". Since we did not have cream in the 1950-1970s, people used evaporated milk instead. That also explains why the choice of a good evaporated milk is so important as in the video I showed . On the other hand, as for the Western style chicken, apart from not using soy sauce for marination, they use fresh cream, some spices like cayenne, nutmeg, herbs like thyme and parsley and vegetables like carrot, celery, bean or even sometimes potato cubes in there which all these will make a very big different in taste and style from what we have in Hong Kong.
