Baked Ziti - Easy Pasta Casserole
Ingredients:
1 Lb. Ziti or Penne Pasta
1 Lb. Lean Ground Beef (85/15)
1 Lb. Ground Mild Italian Sausage
1 Sweet Onion (diced)
2 Tbsp. Garlic (minced)
2 Tsp. Salt (divided)
½ Tsp. Black pepper
5 Cups Marinara Sauce
1 Tsp. Basil
½ Tsp. Red Pepper Flakes
1 Tbsp. Sugar
1 Cup Ricotta Cheese
2 Cups Shredded Mozzarella Cheese (divided)
1 Cup Grated Parmesan Cheese (divided)

Growing up we made something similar all the time. We call it Cavatelli. We actually made it last week.
Cook large shell pasta half the time directed on the package, and drain. (Cooking the noodles half the time is desirable since noodles will continue to cook in the oven and will be less likely to be over cooked.)
Brown mild Italian sausage with onions 🧅 and garlic. (Green Peppers 🫑 are great addition too)
Two jars of pasta sauce added to large mixing bowl. Fill one of the jars halfway with water. Shake to rinse the jar then pour into other jar to rinse it out. Then add to mixing bowl with the sauce. (The extra water is needed to help finish cooking the pasta and will be absorbed so don’t worry about the mixture looking soupy that’s what you want)
Add the cooked meat mixture to the sauce.
Add the pasta to the bowl
Add 1/2 pound to 3/4 pound of mozzarella cheese to the bowl (need 2 pounds total the rest goes on top)
Mix everything together
My wife enjoys sliced black olives and mushrooms so I usually divide the mixture in two so she can have her half and I can have my half. Her half gets the olives and mushrooms and my side I make hotter with jalapeños or sometimes I mix in some homemade Carolina Reaper powder.
Pour contents into 13x9 baking dish
Add the rest of the cheese on top.
(I usually place a couple olives on wife’s half so we can tell them apart after cooking)
Place several toothpicks spread out sticking up (this helps cheese from sticking to foil)
Cover with foil try not to poke holes from toothpicks.
Bake 350°F for 30 minutes
Remove foil and toothpicks bake another 15 minutes to brown the cheese.
Let it rest for 5-10 minutes before serving
While it’s resting is good time to make garlic bread (with or without cheese)
We like to serve with cottage cheese (sometimes it gets mixed on the plate and still tastes great)

When you guys were talking about his old Dutch oven and how beat up it was, brown and used etc. How you had to buy a new one just like it and then right at the end Miss Sheila says “I still cook with it at home”. I felt that right in the feels.
Yes I still use it here at home. It was used by Steve so much. My mother bought that for him as a Christmas present one year. He loved it. It is a heavy pot but they are a good pot to make so many things in.😄

Looks good, everybody makes it different, I seen a recipe where they later the ricotta cheese on the noodles and then sauce and then mozzarella cheese, never seen a recipe where they mix it in the sauce but everyone has their own way lol.😀😀

Just putting in a bit of baking soda (1/8 tsp.) helps neutralize the acidity from the tomatoes also. I learned this from an Italian woman who happened to be my girlfriends mom who made memorable to this day tomato sauce. The sauce will actually foam up a bit before it calms down! 😎

I grew up on pasta even making the pasta from scratch. That's a wonderful recipe nicely done. Adding a layer of spinach on top gives baked pasta a boost. I use freshly grated picorino/romano cheese. I cook my sauce from scratch and while cooking if it tastes a little tart I add two hard boiled eggs. I'm going to make this recipe though right after the Sloppy Joe's 😃

I usually make my own pasta sauces because almost all of the commercial sauces have way too much sugar/sweetness for my taste. That said, this recipe looks delicious.

Great video. I think I'll reduce for one but it really does show the non-cooking and cooking public how a simple recipe can be delicious. Many people I know don't have cooking skills or experience. I just recently learned how to cook/fry fish and chips the "southern way" and I've watched my Mom and done it wrong for fifty years. Duh. I even listened to Steve say do not add too much fish or the oil will cool. It's like saying don't drink alcohol after this treatment without saying if you do it is grimm. I started measuring temps and with a stainless 10 " skillet when I dropped (one potato) fries in a 360 degree skillet with 2" of oil it dropped 100 degrees.

Yes you can. Just get you some freezer containers warm it back up. You can try to put a small dish of water in the microwave to keep it moist.may not need it.

What happens when you over cook garlic. I think I might have done that with Pasties I made once... or put too many cloves in.

My Mom passed away and my Dad is heartbroken. He’s 78 and I want to make him food for the week since I’m only here on the weekend. I live 3 hours away. Can I make this and freeze it in containers for him to reheat during the week. I’m so lost on where to even start making him meals. @@CookingwithShotgunRed it really is a great thing. Cast iron. My great Aunt had one in Boston. Another Aunt had a word burning cast iron stove in Maine. She would heat the whole farm with that thing. Best testing food(s) from both of them.
Fast forward to present day.
…stuck On the left coast…gas consumer range : no yard per se’ but the Lodge pan works for me 2-3 times per day.
Treated right/(seasoned) it does build a nonstick surface. Yes.. eggs can be fried on it. If it sticks:leave it alone folks. It “ain’t done yet”. Lol
Still learning but yum, food(s) definitely have a more char/broiled vibe thing going.
