- How to make a super moist and velvety Lemon Velvet Cake. So rich but refreshing kind of cake. Bake along with me with an easy step by step recipe.
Here's what you'll need:
CREAM CHEESE FROSTING:
250g cream cheese
1/2 cup unsalted butter(110g)
1 tsp lemon extract (5ml)
1 tsp vanilla extract (5ml)
1 cup confectioner's sugar (130g)
2 teaspoons of lemon zest.
CAKE:
2 and ½ cup cake flour (300g) or all purpose flour
1 cup sugar (200g)
2 and ½ tsp baking powder (12g)
1/2 tsp salt (3g)
1 cup unsalted butter (220g) (room temp) skip the salt if using unsalted butter
3 large eggs
1/2 cup milk (125ml)
4 tbsps fresh lemon (50ml)
1 tsp vanilla extract (5ml)
1/4 cup yogurt (60g)
2 tsps lemon zest

Wouldn't you know it. This lovely recipe uploads the day after my milk is expired ☹ Savor have you ever swapped evaporated milk or even coconut milk from the can for reg milk in your cake recipes? I always have cans of those on hand. I'm also out of cream cheese but I'd still make this and frost it with a SMBC frosting... 😋

On the cake can I substitute milk for lemon juice?
I just tried it using all purpose flour and sour cream instead of yogurt (thats all I have ) but it's dry after I put in the fridge overnight. But the taste is really good. Maybe next time I will not put in the fridge just put the refrigerated filling when it serve .

There's no baking soda in this recipe, but plenty of baking powder. Could that be the reason my cake flopped big time. Or becuz the temperature. Normally I'd bake a cake at 350°F, and not. 320°F, so is there some typos in this recipe you posted????
