- The Italian lemon cake with custard filling offers a delicious taste explosion and an enticing taste. This delicious dessert consists of a moist and fluffy lemon cake perfectly complemented by a rich and creamy custard filling. The zesty lemon flavor adds a refreshing zest to the cake, while the creamy custard adds a delicious sweetness. Pudding:
1 egg
a pinch of salt
50 g (3 tbsp) sugar
40 g (3 tbsp) cornstarch
300 ml (1 1/2 cups / 10.5 oz) milk
Lemon peel
juice of 1 lemon
Cook until thickened, stirring constantly
Dough:
2 eggs
a pinch of salt
100 g (6 tbsp) sugar
120 ml (2/3 cup / 4.3 oz) vegetable oil
1 tsp vanilla
220 g (1 1/2 cups / 7.7 oz) flour
15 g (4 tsp / 0.5 oz) baking powder
Baking pan 23 cm
Tip: If the batter is too thick, add a little milk and mix well.
Bake half of the dough at 190°C/370°F for 15 minutes
Add another half of the batter and bake at 190°C for 30 minutes.
coconut flakes for decoration (optional)

I just tried this, and it was delicious, i had too many limes, so added that instead of lemon, it was still so good.. the cake batter was slightly thicker than shown, but still did it's job... will try this again❤👍

Der Kuchen war sehr lecker, habe das Rezept etwas abgewandelt, weniger Milch, dafür 250 g Mascarpone unter die Füllung gegeben. Den Teig nur einmal gebacken und dann durchgeschnitten. War sehr lecker!

Questions... Do I need to thoroughly chill the pudding? Should I completely cool the first layer need to completely cool before spooning the pudding and first layer in? I'm guessing the "first layer" dough should be refrigerated until ready to use... should I bring it back to room temp before baking?
No, nothing of this kind. Just put layer by layer

Made this cake today, did not like the idea of lemon filling, so went with some rum and vanilla ext in the custard.....then my springform was only7" diameter, too small, apart from that it was excellent, with some alchermes on the slice when serving, tasted just like a zuppa inglese, thanks
