These fun easy tasty budget friendly fingerfood will be a hit at your Christmas party table. The colours are very festive and traditional but why wait for christmas when they can be enjoyed all year round.
Ingredients:
1 egg
300 grams grated zucchini/courgette which had had the moisture squeezed out
1 sliced spring onion
40 grams flour
vege salt and freshly cracked pepper to taste
20 grams olive oil
30 grams low fat grated cheese
Suggested flavoursTo top use small pieces of cooked bacon, smoked salmon, creme fraiche, fetta cheese, cheery tomatoes, baby beets sliced. For the Christmas table try and stick to red, green and white colour themed garnishes.
