      Thank you very much for your feedback. I remove the fat for health reasons and because I don’t like the taste of fat. It’s a personal decision and the beauty of preparing your own meals means you know exactly what’s in it. You can add it omit ingredients to suit your personal Taste. Feel free to leave the fat if that is your preference. Rich or fatty food causes me to suffer from reflux, more so as I age.     Hi again. You have helped me before. I'm having trouble getting my pastry nice in my pie maker, like in a real pie. Is there a secret? Do you use all puffy pastry?

      Thank you for your question. I think you will find bakeries use short crust pastry for the base and puff pastry for the top. I have used both methods and have been pleased with the results. The pie maker immediately starts cooking the base because it applies direct heat to both the top and the bottom at the same time whereas commercial bakers use convection heat, like a souped up version of your household fan forced oven. I personally don’t like thick stodgy pastry like that found in cake shop pies. The main reason I love the pie makers and sausage roll makers is the ability to choose ingredients and cook them to my families personal taste. I have also found a big difference between pastry brands, some are much nicer than others. We don’t like the taste and texture of Aldi brand pastry and during COVID, when it was difficult to source baking ingredients we found pampas and borgs pastry to be very well suited to the pie maker but sometimes you just had to take what you could get. It’s personal taste, availability and trial and error. There is also different results between different pie maker models and different sized pie makers too. If you are after a crisper more cooked finish…. Try cooking your pies a little longer and experiment with different pastry brands.       Haha, we absolutely adore honey. We have visited the honey display centre where we were treated to different blossom honey samples, videos on its production and experienced the smell, sight and sound of a real working bee hive. We know exactly where it comes from, how long it takes to make and collect it, how much different types of honey , from different locations taste, even the colour varies but we are massive honey fans for many reasons. It is the only food known to man that doesn’t spoil. It’s even been found in urns in the Great Pyramids. I wonder who the first person to eat a chicken egg thought “I’m going to eat the next thing that comes out of a chickens butt tastes?” You have a valid point and I thank you for your interesting feedback and for watching.;-))

      At the same time, prep chicken first, set aside with lid onion dreampot, get rice ready, in the small top pot and add to the dream pot on top of the chicken, seal up and let it do its magic.       Thank you for your feedback David, I understand and appreciate your very valid point . Sadly in days gone by families had time to prepare meals the conventional way but now with most families work long hours, life packed with extraneous activities with children and other commitments , it can be very easy and convenient to rely on takeaway and convenience foods. Here we try to show our audience appliances and gadgets they may be interested in so they can judge for themselves if the subject item is suitable for their budget and cooking styles. I find it a helpful research tool to watch a few videos by regular unbiased cooks, not affiliated with companies or using a high pressure sales pitch to sell products. I will point out the things that I don’t like and the praise the things I do like, kind of like doing the research for our audience so they don’t have to. Most appliances nowadays come with very limited recipe books or instructions, if one is supplied at all. I have adapted hundreds of recipes for use with my appliances, taking the guesswork out of their use, helping people overcome nervousness about using their new appliance and hopefully ensuring they get the absolute most out of their investment. We also rekindle old fashioned recipes to ensure they aren’t lost and make the use of every part of an animal possible.       Thanks for your question. I don’t like to cook them too hot otherwise the resultant stock becomes a bit bitter. 160 deg C-170deg C should do it, depending on your air fryer and the amount of meat on the carcasses. Cook them until until they smell cooked and are dry golden colour, the further cooking will absorb the rich baked flavour and make a hearty healthy natural broth for all your stock and soup requirements.       Thanks for the question Philip, I never keep them for more than 4 or 5 days. If I make batches like this it’s usually for a party, scotch eggs, potato egg salad, devilled eggs or just for snacking a high protein low carb light bite. They are good in Caesar salads, my favourite sandwich is egg and lettuce with a bit of mayo. Great for school lunches, picnics or when travelling. Hope that helps and thanks for watching.;-))

      Yes you can but it won’t be as crisp and light. You will also need to add a little baking powder for lift. I use corn flour and egg when battering food for Chinese dishes, like sweet and sour chicken etc, makes the sauce stick well without getting too soggy. Hope that helps and thanks for watching.;-))

    Hi Cheeky. I hope you are well. I think about how you're getting along these days. I had just recommended an Aussie 🇦🇺 style mixed grill to an english foodie and thought I'd take a look at what's current, and there you are. Wow time flies. 11 years ago you posted this mixed grill video. Unfortunately the mixed grill has fallen out of favour in the pubs and clubs and replaced with more modern cuisine. I can remember my very first mixed grill. It ended up as a share plate, there was so much. Cheers Cheeky 👍🤤😀

      Hey John! There you are, can’t beat the old Aussie mixed grill, still a favourite here, although cholesterol control is a bit more of a priority nowadays. Yesterday on 2nd anniversary of the devastating flood that destroyed my idyllic paradise I left….. for good. Don’t know what to do now or where to go but I do know I’ll never again live anywhere, that where I am vulnerable to what ever Mother Nature decides to throw my way. The last 2 years have been the most distressing, financially breaking, difficult, soul destroying and overwhelming period of our lives. Richo bought me a new video camera after looters helped themselves to much of my camera and editing gear, amongst lots of our other possessions. We feel a great weight has been lifted from our shoulders and whilst we are beyond exhausted, there is much work to be done sorting through what we were able to save, despite the river and unsavoury visitors best efforts to break our spirit. I look forward to getting back to my channel, I have missed my viewers and friendly chats. I feel guilty about my absence but I am Keen to get back to uploading. I haven’t stopped cooking, every week I volunteer and bake or cook meals at a number of residence centres for my fellow ‘floodies’. Bulk baking, then delivered whilst still warm, participating in fund raising and working to rebuild the house has been a priority, with no time to film, edit and upload. I do have many recipes and ideas up My sleeve to share when I get another kitchen of my own. You have no idea how much your continued support has meant to us. Richo has overcome cancer, I had an emergency gall bladder removal and a nerve stimulation device inserted in my spine. Numerous falls and bouts of vertigo have plagued me over the last year or so, 2 rounds of Covid, despite being fully vaccinated. We have welcomed a new grand daughter and Richo is now cancer free so there are some good outcomes in spite of the trials and tribulations we have faced.       Thank you very much for your question. The appliance is called a TM5 made by Thermomix, I have since upgraded to the latest model the TM6, which has a few additional features and is able to cook at higher temperatures, perfect for cooking candy and pralines. This recipe never fails to please and is packed with fibre and cholesterol lowering oats. Whilst the recipe is a great economical slice to make all year round it is especially nice at Christmas time, appealing to kids more than the traditional fruit mince recipes. I must apologise for my delay in replying as we have recently moved house and had to do major renovations due to our home being seriously flooded, resulting in the loss of much of my camera equipment and cooking gear. I hope 2024 is a great year for you and we look forward to eventually getting back to our much missed CZcams channel and our lovely viewers and subscribers. All the very best Cheeky & Richo

    Happy Saturday morning Cheekyricho, I just acquired a 2 well Wolfgang Puck Pie Maker, and it did not have the Pie Cutter with it……so I wondered if you would know the size of Cutter needed for Tops and Bottoms of Pie Crust …providing that you do have that Pie Maker….It has 2 Deep Wells…thank you for your help!!       Gee Carmela, I’m away at the moment and can’t measure my cutters but mine is a Sunbeam pie magic and an Anko Kmart brand one. I don’t even know if they sell the Wolfgang puck models here in Australia or if they are the same, I’m afraid I’m not much help this time perhaps you could contact Wolfgang Puck Customer service with your enquiry. I’m sure they would be only too willing to help. They may even have them as replacement parts. It’s definitely worth a try. Good luck with your new pie maker, I know you are going to love using it. Following the 2022 floods, I prepared this meal a number of times as a volunteer for fellow flood affected families and it was always a hit and often requested. There were never leftovers.       Thank you very much for the great feedback. I have never cooked nor even seen pressed roe. I hope you enjoyed this light crisp batter and it enhanced your pressed roe. Depending on what filling I use eg: if the filling needs longer cooking time I use temperature about 180 degrees, never over crowd the pan and if it’s small Pieces or pre cooked food that I am battering, 200 degrees C is perfect. Providing the perfect balance of crispness, whilst heating the contents through. Hope that helps and thanks for watching.;-))

      Thank you for the feedback. I have been to Beijing, I never tasted a Chinese Omelette the same as my recipe. This recipe is very similar to those served in Australia, Canada, New Zealand and United States. It is a more westernised version than traditional Chinese Cooking. Even my Peking Duck is different to the Peking duck I tried in Shanghai. Personally I preferred my version as did my travelling companions but it was because that is the style we have come accustomed to eating. My apologies to you if you did not feel my meal presentation was authentic but I learnt it from a Chinese chef here in Australia and we discussed how he had to modify his traditional cooking to suit his patrons at his restaurant. Facebook and CZcams is not available in China. My audience there is through methods not sanctioned by the government. During my visit to China, I was unable to access my audience and comment or reply to feedback as it was blocked. I hope you get a chance to try my recipe to experience how western countries have adapted your lovely cuisine. Thank you for watching.;-))

      You need to dissolve the honey in the milk. Cold honey does not amalgamate as easily when it cold. Honey which is stored in the fridge becomes very thick and hard to spread or dissolve in cold liquids.       Your beautiful words and poem warm My heart Stella. Just this week our northern shores were struck by a cyclone called kirrilly, flash flooding damage to shoreline properties and trees uprooted crashing onto cars and houses. Many people in the North were without power and it’s a tropical Climate there so food would be spoiled without refrigeration and people admitted to hospital with heat related illness due to air conditioners left without power. We were lucky this time but who knows what Mother Nature has in store for any of us. You must be very proud to have taught your son and husband to cook. So many men these days couldn’t prepare a meal for themselves or their families. Which is very sad. I don’t think there is men’s work and women’s work. We are all equal. I have never been to England. I would love yo go some day to see the history, try the food and experience the culture. We have many traditional English meals in our menus here as many of our early settlers came from Great Britain to live. At the moment I am spending a lot of time preparing meals for other flood victims as many have been unable to return to their flooded homes and are living in temporary accommodation, sheds and caravans. I am Needed here to cook for people it is my contribution to the community as we support each other and return to normal.       Ahh what a very interesting question. I recently made a Lemon meringue cheesecake. Cronuts are labour intensive and time consuming but extremely delicious. I’ve made a few wedding cakes and decorated birthday cakes for my grand daughter, themes like Dora the explorer cake, complete with rope bridge, waterfall, flowers and butterflies, a seaside themed cake complete with mermaids, sparkly fish scales all sorts of sea creatures. An Aladdin cake with a secret cave of hidden lollies inside I also make a child’s version of a crochembouche with snakes and rocks worms woven out of it. It’s hard to pick the most challenging but these are just a few I have made that have taken. A bit more time and effort. I’m sure more will come your way mind if I think about it longer but I love inventing my own recipes and sometimes they are a combination of several Themes like my pumpkin pie cheesecake.       Dearest Stella Maritza, your lovely comment has cheered me up. Yesterday we phenomenally torrential rain. It brought back bad memories, there was minor flooding but the house was safe, thank God.🙏🏻 The news is filled with pictures of damaged homes, cars being washed away and swift water rescues as the people are caught by the surprise flooding. Many lives have been lost, including children playing in storm water drains and getting swept away. They don’t realise the danger When my house is repaired I will be selling it. I don’t know where I will go but the risk is too great to stay. I know I will lose a lot of money on its value but my families safety is more important. I have been blessed to have lots of people help us, they cleaned up the mud, brought us fresh drinking water and meals. Some travelled long distances to assist and others came at night in boats and broke into our flooded homes and looted what wasn’t destroyed. We saw the best of humanity during our darkest days and the absolute worst. We will make a fresh start, somewhere new, I will get back to cooking channel, which I love so much and miss dearly and that will signal my recovery from a very sad period of my life. I look forward to that day and a brighter safe future. Your beautiful words give me strength and hope and I thank you from the bottom of my heart for your compassion and sympathy. Take care of yourself and your loved ones , it’s almost 2am here in Australia and I can’t sleep.     Hello Cheekyricho, I am Italian and have made Arancini often, but this is a genius way to make them in the Pie Maker…..Arancini bought in the store are really expensive and made in Pie Maker is so inexpensive….so thank you for your creativity and making great recipes in the Pie Maker….Grazie Mille!       Wow Stella, what a delightful comment. We too are animal lovers and fully understand your warning regarding children left unattended with pets. There have been some terrible injuries and Even deaths caused through inattentive care when people play with animals. Your garden sounds lovely, we also had a wonderful garden, filled with vegetables, herbs and numerous fruit trees, unfortunately last March our home was de estates by an unprecedented flood. 3 metres of water ravaged our gardens and destroyed much of our house and belongings. The clean up has been long, hard and soul destroying. I hope to be sufficiently recovered from the secretary on to return to My CZcams channel, I know my audience is missing my uploads just as much as I am missing sharing them. I haven’t stopped cooking, I still volunteer cooking several times each week for local people in our village who are still without kitchens. My contribution to the recovery effort is wholesome comfort food. Unfortunately the flood destroyed much of my camera and video equipment as well as my lighting and editing gear so it has been a slow expensive recovery in that department. I will be back soon I hope with lots more budget family meals to help beat rising prices, whilst providing healthy varieties of meals for my audience. Our bay leaf tree was washed away and we lost many citrus and an avocado tree as well as our salad, tomato and herb gardens. Our succulent plants were all destroyed but surprisingly some of our roses survived. Thank goodness for small Mercies. Your kind support is very much appreciated and whilst we gather our ourselves for the return to our channel, don’t forget we have about 1,500 recipes and ideas on our channel to keep you entertained and inspired until our return.       When I am rinsing the seeds to make a fresh Passionfruit drink I usually add enough to cover the seeds by about 3 cms. The more water you add the more diluted the drink. Each Passionfruit, indeed different varieties of Passionfruit, contain different levels of moisture. Fresh young ones a full and less sweet but are still worth using even if you do need to add sugar or sweetener to taste. Thank you for your comment and for watching.;-))
