- (1:06 - Start of Presentation) Robert H. Lustig, MD, UCSF Professor of Pediatrics in the Division of Endocrinology, explores the damage caused by sugary foods. He argues that fructose (too much) and fiber (not enough) appear to be cornerstones of the obesity epidemic through their effects on insulin. Recorded on 05/26/2009. [7/2009] [Show ID: 16717]

We couldn't afford processed foods when I was young. We snacked on fruit from our orchard, chickens from our yard, veggies from our garden. We were RICH in nutritious food. Didn't realize this until I was an adult. Thanks, Mom and Dad!
I stopped eating sugar and drinking soda the weekend before Thanksgiving 2020. I started out at 212.8 pounds. I am down to 188.2 pounds, and I feel great. My doctor told me my blood sugar was at the level to be classified as a type 2 diabetic. That did it. I knew I had to change my diet. Sugar was my drug of choice. I have had issues with joint pain for years. I have arthritis, and being overweight for years, and the sugar made it worse. After stopping eating sugar, and losing the weight, my joints have stopped hurting. My mind is clear. I was having issues concentrating. Now I don't. I work 12 hour shifts. I used to feel wiped out by the end of my shift. Now I don't. My wife and I have started keto. She has gone from 235 down to 217. Her joint pain has stopped too. Sugar is poison. It's also addictive. It's literally killing people. Something must be done. Processed foods are formulated to be addictive. Eating healthy is expensive. Eating unhealthy is cheap. That's why poor people are overweight more than people who aren't poor. This has to change. Our society is being destroyed by sugar addiction. All kids should watch this video, as well as adults. Money is all that matters to the powers that be. Our health means nothing. Take control of your health people. It can be done. DO IT!!!!!
congratulations on making changes. I hope that you are able to continue on this path. It is inspiring that the joint pain can stop by cutting sugar out. I have just been diagnosed with arthritis at 52 and have terrible pain in the knees. Now I am inspired that I can live pain free again if I can resist the cravings for sugar. thank you for giving more details. Do you think cutting sugar helped more or doing keto was more helpful?
@@christineklem2099 I stopped eating sugar, and drinking soda before I got on the keto diet. My wife decided to do keto, so I am doing it with her. I think stopping the sugar made the most difference. But it's easier to lose weight if you're doing it with someone, so the keto is helping both of us achieve our goals. Good luck. If I can do it, you can too.

I have an undergraduate with a minor in bio-chem; my education is just fine. Ingredients with long chemically derived names are most certainly bad for you. Don't take my word for it though, go do some research.
Well, many of them are, but not all. It is a good rule of thumb, though, even if it is not 100% true. Natriumcarboxymethylcellulose, despite its ridiculous name, is completely safe. But the quality in your argument still holds, as it is almost impossible for a person to know all of these chemicals by heart, so it is better to avoid them, just to stay safe.

First he says that we are all getting fatter this is not true I'm not fatter I know a lot of people that are not fat, contrary to what the stereotype says most Americans are not obese.
Explain why six year olds are obese because they're not going outside and playing like they used to. And their family gives them unhealthy stuff all the time like sodas and candy and chips and stuff. Because unhealthy stuff is cheaper than heathy stuff
He also says that it is not the fault of the obese people it they are victims. This is not true even if what he was saying was true. You would still be the fault, even if he was right. because they're drinking all these sodas and everyone knows it bad for them and will make the fat.
But he says what he says because he wants to elicit your emotions not your logic and obese people like being the victims. He also uses emotionally charged words like telling you how sugar is poison or that these things horrendous, or the Coca-Cola conspiracy. Or how he says everyone is getting bigger which is simply not true. Of course none of these people are eating less or exercising, but I'm sure that's just a coincidence.

I was binge watching Andrew Huberman’s CZcams channel during this insanely long 2-month lockdown that happened accidentally in Shanghai. In one of his videos he mentioned Robert Lustig and I traced all the way to this video. This video and a bunch of others scared the hell out of me since basically all my family members have some kind of metabolic syndrome (Alzheimer’s disease, diabetes, high uric acid, hypertension) and not all of them are obese. Now I finally know that root cause of these metabolic diseases is the increase in percentage of sugar and processed food intake. Immediately after watching this video, I got rid of all my processed food and sugar in my diet. (which is easy during the lockdown but very hard after the lockdown, because sucrose is ingrained in the Shanghainese food culture) It’s been around 1 week and I noticed a dramatic improvement in my teeth. I no longer develop calculus on my teeth even if I reduced my frequency of brushing to once a day. And I feel much better psychologically. Thank you for all that information. I wish I have watched this video when I was in middle school. (Because that was the time for me to start eating more sugar and processed food.) @@tammv2306 I hate the global meat industry but that just led me to buy my food from a local farm instead. I can actually see the chickens and cows hanging out in the pasture, so I at least know the animals aren't being abused, and getting something much closer to a natural diet. It's a lot more expensive but I have a feeling the time of cheap meat will soon be over, what with the whole "eat zee bugs" signaling and "global supply chain problems", and the US government apparently now paying the big farming companies to NOT grow food, etc etc.
Do you like chicken soup? Just boil a whole chicken, with some coarsely chopped onion, celery, and carrots, and a tablespoon of thyme. You can also add a head of garlic if that's your thing. Bring up to a high boil for about 10 minutes, then lower to a simmer for 1-2 hours (I like 2 hours best). That gives you a bunch of good broth, chicken, and cooked vegetables, which I would recommend separating and freezing in lots of small containers. It's easy to thaw it by boiling the broth and dropping in the other stuff, so you don't need to use the microwave. That can take care of your dinner for about a week. (Soup and sandwiches!)

This mom took her kid to a Dr in Chicago who at the time was the only Dr around that recognized the term hypoglycemia. He gave an 8 hr glucose tolerance test. So my mom took me to see him and found that I had hypoglycemia. It saved my life. Sugar was killing me. Since hypoglycemia was discovered it released many people from mental hospitals. If your brain doesn't have glucose or blood sugar it won't function properly. Hypoglycemia is a condition where the body produces too much insulin that takes all sugar and gets rid of it leaving you with no brain sugar.
Billionaire George Weston whose bakery family business later grew to include British Sugar, Selfridges and Fortnum & Mason is quoted as saying, "People will eat horseshit if there's enough icing on it". "The fats are going down, the sugar is going up and we're all getting sick." Words of wisdom
@Jamie Rivet have you ever been to a grocery store? there is no fat in grocery stores it's all low fat (twice the sugar but that's on the back) products, most people don't eat fast food(which use omega 6 vegetable oils) all the time and you can get fat just eating the stuff from the grocery store despite the fact it's low fat and all the oils that remain are omega 6 hydrogenated vegetable oils - so there is barely any good fat in the food we eat today the only way to get it is to buy the most expensive oils or butter or an avocado whereas safflower oils are in every product and we need good fat for optimal function we need fat soluble vitamins (A,D,E,K) and omega 3's we need fat to rebuild tissue, and fat can also be used as a fuel source(including body fat) and that fuel source goes for way longer and doesn't affect your blood sugars making your energy way more stable and can be used in cells which already have an inhibited glucose metabolism like in Alzheimers patients or with Insulin Resistance/ type 2 diabetes
@Jamie Rivet Funny how the article you provide about fat causing diabetes, yet the first comment on the article is someone who followed the writer's recommendations for 3 years and still has a high blood glucose level.
Agreed but it is the sugar going up not any changes in fat consumption that is changing people's health for the worse. Don't get taken in by people who say otherwise who will try to say it is cutting down the fat as well so fat must be good for you which is nonsense!

Here's my notes for the talk:
There are many different types of sugars, but the ones you need to know about are: Fructose, Glucose, Sucrose, Lactose
Leptin is a chemical that your body releases that reduces hunger.
Ghrelin is a chemical that your body releases that increases hunger.
Sucrose:
- This is what cane sugar and beet sugar consists of.
- Sucrose is a combination of Glucose + Fructose.
-- Your liver will quickly break the bond between Glucose and Fructose.
-- So each sucrose molecule results in your body getting 1 Fructose molecule (which is bad for you) and 1 Glucose molecule.
-- So to understand the effects of sucrose (e.g. cane sugar), you need to understand what Fructose and Glucose do.
-- So essentially there is almost no difference, chemically at least, between eating Sucrose (e.g. cane sugar) and High Fructose Corn Syrup (HFCS).
- Coca-cola is 10.5% Sucrose/HFCS.
High Fructose Corn Syrup:
- A mix of Fructose and Glucose molecules, each of which your body must then process.
Glucose:
- Suppose you consume 120 calories of Glucose (e.g. 2 slices of white bread).
-- 80 - 90% of this Glucose will be used by all of the organs in the body. A small part of it will be turned into fat.
--- In contrast, Fructose is only processed by the liver with a large part of it being turned into fat.
-- Every cell in your body can use Glucose. Every bacteria in your body can use Glucose. "Every living thing on the face of the Earth can use Glucose".
-- Liver cells release insulin which signals to your brain "stop eating".
-- Thus Glucose consumption reduces hunger.
Fructose:
- Fructose (and consequently sucrose) is a poison.
- Fructose is processed almost exclusively by your liver (in contrast to Glucose, which can be used by any cell of your body).
- Fructose does NOT suppress Ghrelin (a "hunger hormone")
- "Acute Fructose does not stimulate insulin (or leptin) release.
-- "If insulin doesn't go up then leptin doesn't go up, and if leptin doesn't go up then your brain doesn't see that you ate something."
- Fructose causes metabolic syndrome.
- Fructose stimulates your liver cells to create new fat. Glucose does not do this.
- Fructose causes insulin resistance in liver cells.
-- Fructose causes more new fat to be created and more energy to be turned directly into fat.
-- Fructose causes the pancreas to work harder and release more insulin.
--- Higher insulin (if too high) cause the brain to not notice leptin as much as it otherwise would (this prevents hunger from being reduced).
Fiber:
- Fiber is (de facto) an essential nutrient.
-- The government not listing fiber as an essential nutrient allows high fiber foods to be exported.
- Causes your brain to receive the satiety signal sooner.
- Causes an increase in Short Chain Fatty acids, which help to suppresses insulin (thereby reducing hunger).
- "Reduces rate of intestinal carbohydrate absorption, reducing insulin."
-- The bacteria in your gut consume the excess carbohydrates, which ultimately makes you pass gas.
- Although fruit has sugar in it (Sucrose and Fructose), it has a lot more fiber than it has sugar so you don't gain nearly as much weight from eating fruit as you would from consuming the same amount of sugar in candy or a drink.
Lactose:
- Lactose is a sugar (not very sweet though).
- In a milk that does not contain added sugar or chocolate, the sugar content of the milk (on the nutritional label) measures lactose (and not sucrose or fructose).
-- So even though such milk has a large amount of sugar on its nutritional label, the milk doesn't make you fat like glucose or sucrose would.
Recommendations for losing weight:
- Get rid of sugared water
-- Only water and milk.
- Eat all carbohydrates with FIBER.
- Wait 20 minutes before a second portion.
Exercise:
- Improves skeletal muscle insulin sensitivity, which causes insulin to go down. (This reduces hunger).
- Causes TCA cycle to run faster thereby "burning off" the chemicals that are used to produce fat.
- Exercise causes weight loss primarily by increasing your metabolism and NOT by directly burning fat
EDIT: (Added November 2021 - info. from Wikipedia articles "Sucrose", "Fructose", and "Fructolysis")
- About 10% of the calories contained in the Western diet are supplied by fructose (approximately 55 g/day).
- Fructose has 95% the caloric value of sucrose by weight.
- "Fructose may provide **the bulk** of the carbohydrate directed toward de novo triglyceride synthesis (triglycerides are the main constituents of body fat in humans) in humans." [in short, "the bulk" of brand new fat that you gain comes from fuctose. So most of the fat currently on your body originated from eating fructose/sucrose.]
---- Under one percent of ingested fructose is directly converted to plasma triglycerides [but much more is INdirectely converted to triglycerides]. 29% - 54% of fructose is converted in liver to glucose, and about a quarter of fructose is converted to lactate. 15% - 18% is converted to glycogen. Glucose and lactate are then used normally as energy to fuel cells all over the body.
- Unlike glucose, fructose dose not cause insulin to be secreted, and can in fact lower circulating insulin.
- Fructose is almost entirely metabolized in the liver in humans, where it is directed toward replenishment of liver glycogen and triglyceride synthesis. In addition to the liver, fructose is metabolized in intestine, testis, kidney, skeletal muscle, fat tissue and brain, but it is not transported into cells via insulin-sensitive pathways
- "Sucrose is a disaccharide made up of 50% glucose and 50% fructose"
My own conclusion: So when you eat something that on the label says "16g of added sugar", then you may as well assume that a large percentage of that (at least a few grams) will be made into brand new fat stored somewhere in your body.
But sugar isn't bad for you as long as it's consumed within a fruit, maple syrup or honey.
@@crand20033 Oh yes it is. Sugar is sugar and todays GMO fruit is nothing like the original fruit it came from. Look at pictures of water melon from 50 years ago and compare it to today. Todays fruit is basically candy and should be a very occasion treat, in season.

Crazy, 2 healthcare professionals 2 totally different views on the matter.
@@nasimwehbe8410 I am so happy for you! You are doing the necessary work. Congratulations!
@@tonyadavillier9311 thank you so much. It's a lifestyle for me now, no longer just a diet. But thank you again.
Always makes me think of that sentence, "the future's here now, it's just not equally distributed".
Well. Look at the bright side, at least you and I know about it now.
Alcohol, tobacco, meat and sugar are most dangerous drugs - yet legally sold in every shop
Huh? Meat? In what way do you find it unhealthy?
Stopped drinking soda about 3years ago. Was not easy, so addicted! Best thing I ever did!
Congratulations
I get that all the commenters have their own "horse in the race" so to speak, but man have so many misconstrued what's being discussed here. He's not advocating against fruit, or even against a moderate to high carb diet. He's saying people are eating too many processed, fructose rich, additive packed, fiber-less foods and that's what's causing obesity. He's even said himself in another documentary that he's not the "anti-sugar guy" he's the "anti-processed food guy". If you're a healthy, active person with a good metabolism then there's nothing wrong with eating UNPROCESSED foods that contain fructose and glucose, along with fiber and other nutrients. He's even said that cells require glucose and that the best place to get it without any accompanying fructose is from starchy foods. I've never once heard him say he's against fruits, potatoes or other root vegetables, or having whole grains UNLESS they're eaten in EXCESS. He also doesn't advocate a high fat or high protein diet, he just wants people to eat real, additive free foods. What the hell is wrong with that?
And he's the only expert I've seen talking about diet/nutrition who's looking better and better as the years go by as he has learned to put his ideas into practice. Is he skinny? No. But if you think that ultra-thin/skinny is a measure of health more so than strong bones, good musculature, glowing skin, well functioning organs and good blood work, well..... bless your heart :)
Exactly.
He's against fruit JUICE, however. Which makes perfect sense, since fructose is fructose.
So many idiots act like fruit-juice is "healthy," when in reality it's TWICE AS BAD as sugar-soda, since it has twice the fructose-level!
Agreed
Well said Mikeila. Anyone who reads Lustig's book and examines the list of foods he advocates and groups into the Green, Yellow and Red categories can see that he is NOT against eating all forms of sugar. He lists fruit in the Green category (eat daily) and doesn't even discriminate between different fruits based on their fructose content. The nutritional advice that Lustig gives is that we should eat WHOLE foods and avoid processed foods as much as possible.
I've seen Lustig misquoted and misrepresented so many times and it always seems to be people who jump to conclusions about his message rather than actually listening to it or reading it properly. I've followed Lustig's advice and lost 30lbs and my fasting blood sugar has dropped.
If people want more information they can watch Fed Up, a documentary film I found on Netflix which features Lustig as well as a number of other writers who are campaigning to improve diet in the US and the West.
Thanks for the intelligent, informed comment. Breath of fresh air from some of the other nitwits spouting their stupidity around here.
141 pounds of sugar per year per person. That was a decade ago. Imagine how bad it is today.
Sugar consumption is going down. Obesity is still rising.
@@RunOfTheTrill how?
@@RunOfTheTrill Yeah right. Why everything is gettin even sweetier then
@@RunOfTheTrill Sugar consuption hit record highs in 2019.
I’ve been sugar free for two years but still buying quite a bit of sugar. I have three hummingbird feeder‘s. There probably aren’t that many of us but it does make me wonder how it skews the statistics.
The fact that this video is 12years old and still nothing has been done about it, is mind boggling to me.
Absolutely EXCELLENT!!!!! I learned so much about fructose being a poison and how ethanol and fructose do the same thing to the body!!!! Thank you Sir!!!!!
Very informative and helpful for me and hopefully others thank you
Same here, I'm beginning to cut down on those foods.
I’ve been addicted to sugar my entire life, and now at 35 I’m cutting it out.
Same. I turn 35 in a few months and I’m giving myself an early birthday present of health. I just gave up alcohol TONIGHT. I’m cutting sugar tomorrow. I’m done feeling like shit all the time.
take a quality multi vitamin, then add chromium picolinate and L Glutamine to your supplements. Side effects arre that they cut into your sugar and carb cravings.
I'm going to get extra sugar.
consider a good multi vitamin aand a protein shake daily as a base. Mix the powder with water. then add L-Glutamine and chromium picolinate as they direct, . These two build muscle and curb your sweet tooth and carb cravings.
good for you. you may find a licensed naturopath who can offer some dietary options which can help with your withdrawal and years ago one friend said she thought white sugar was as addictive as a drug... I have found that some pure maple syrup or honey can give me a lift but even that I go easy on as I guess it is sugary too... but since I quit white sugar my health has improved
I'm saving this so that when I need it for someone, it can help them understand as much as it did me. This was time well spent.

I keep coming back to this video, to remind me of how to be healthy, and how to raise my kids in the future. Thank you so much.
I've known for years the dangers of fructose - but hearing the biochemistry behind it was truly excellent. I wish I could have seen this when this first came out.
