А чего над ними трястись? Не уверены что получится пышным? Добавьте стабилизаторы пышности: сода пищевая, разрыхлитель.

Меня тоже это обстоятельство крайне удивляет…. Выпекаешь этот бисквит, не дай Бог стукнуть , вмиг осядет…! А тут колошматят его и ничего! Видимо добавляют какие-то стабилизаторы.

That is seriously one of the most beautiful cake designs I have ever seen! As an American, what I find amazing is that even though this bakery is making hundreds of cakes, it still uses REAL eggs, REAL butter and REAL everything else. So many of our production bakeries have reduced it all to powders (I know this because I once asked) and I am sure the flavor, texture, etc. are just not the same. I love this channel!

8:07 tremoline is an Invert Sugar Syrup paste. It is very concentrated and very thick, used to prevent crystallization, resists humidity, acts as an anti-oxidant, increases carmelization, improves texture, preserves aroma, flavor, and color.
It is used in baked goods, yeast doughs, butter creams, etc.
i had to google it, so i thought i'd share for those who also didn't know what it was

They do it on purpose to get rid of the extra air. In home baking, before and after the oven we need to tap the pan on the counter for a few times.

Краситель с малиновой эссенцией? - так то вы не наблюдали приготовления домашнего молочного желе, где в качестве красителя использовалась обычная зеленка ( бриллиантовый зелёный).
Здесь нет химии, всё натуральное.
Все те же ингредиенты , что и в домашних условиях используются
