BAKED GARLIC CONFIT SAUSAGE & PORTEBELLA MUSHROOM PASTA CASSEROLE

4oz Sherwood’s DARK ROASTED
Garlic Confit Spread
3oz Sherwood’s Garlic Infused Oil
6 Sausages
8oz Any Pasta
1 cup Red Wine
1/2 cup Heavy Cream
6oz Tomato Paste
1 Large Yellow Onion
4 Roasted Sweet Peppers
8oz Portabella Mushrooms
1 Tbsp Oregano
1/2 Tbsp Paprika
1 tsp Chili Flakes
1 tsp Apple Cider Vinegar
1/4 cup Freshly grated Parmesan Reggiano Cheese
1/4 cup Freshly grated Pecorino Romano Cheese
Salt and Pepper to taste
Boil pasta for a few minutes until it’s Aldente. Brown the sliced sausage pieces until they have color on all sides, then set aside. Sauté the vegetables in the pan drippings from the sausage. Add Cream, tomato paste, and cheese to the sauce. Then add the sausage back in to fully cook in the sauce and finally add the aldente pasta and 1 Tbsp pasta water (to thicken sauce) back into the mix and place into a casserole dish.
Top with Mozzarella and bake @ 400 F for 30 minutes uncovered.
Serve with Fresh or dried parsley on top.
