      It'll be cooked but just outside and looked too dry, not crispy as well. Oil can conduct heat to the inside of the raw food better than air. In the end it will not looked good and not tasty. For Thai food, pls. cook the thai way.

    I noticed that when you chop mild chilies they don't stain the cutting board that much; what comes out is mostly water. But when it's spicy chilies, they leave stains on everything from your cutting board to your knife and your clothes. The more spicy the chilies, the more they stain. Just something I noticed in case you find a chili and you're not sure if it's spicy or not just rub it against something to see if it leaves a color, or you know just taste it or whatever.

    I really love your recipes, but I'd like to make a suggestion for your production team: the slow-mo of the frying looks really pleasing, but I think it would be more helpful to see a few shots of how vigorously your oil is bubbling so I know if I'm doing it right when I make mine!

      Makrut lime is the same as Kaffir lime, but many find the term kaffir offensive so makrut is used instead.

      We use vegetable oil for deep frying, and most of dried herbs will add flavour to the oil as well ! -Team Marion's Kitchen
