    For the Frangipane:
    Recipe for a pancake 20 to 25 cm in diameter:
    -50 g of soft butter
    -50 g of sugar
    -80 g of almond powder
    -1 egg
    - Bitter almond extracts
    - 100 g of pastry cream
    For the pastry cream:
    -125 ml of milk
    -20 g of sugar
    -15 g of cornstarch
    -1 egg
    Syrup to give your cake a shine (optional):
    - Bring 20 g of sugar and 20 g of water to the boil and leave to cool. Take the pancake out of the oven and brush it with the still hot syrup with a brush; let it cool completely; the syrup will harden.
