How To Make Easy Divinity

    Ingredients
    2 & 1/2 cups of sugar
    1/2 cup of light Karo syrup
    1/2 cup of water
    Pinch of salt
    2 large egg whites
    1 tsp of merengue powder
    1 tsp of vanilla
    1 cup of chopped pecans
    Whole pecans for garish if desired
    1. In a heavy bottomed sauce pan, stir together sugar, water, corn syrup and salt. Heat mixture on medium high heat and stir until sugar is dissolved. Do not continue stirring after sugar has disolved. Bring mixture to a low rolling boil. Cook syrup until the temperature reads 250 on a candy thermometer.
    2. While the syrup is cooking, mix egg whites and merengue powder at high speed until soft peaks form. Let egg whites sit until syrup comes to temperature.
    3. Turn mixer on high speed and carefully pour syrup into the egg whites in a slow steady stream. DO NOT TURN OFF MIXER. Continue to mix at high speed until candy holds its shape. This takes anywhere from 5 to 10 minutes. If you over mix and candy gets to stiff add a tsp of water and continue to mix until blended and softened. Add vanilla and pecans. Mix at low speed until blended.
    4. Using two spoons, drop the Divinity onto ungreased wax paper, using one spoon to push candy off the other. Dip your spoon into hot water from time to time to keep candy from sticking.
    Allow candy to cool and set at least 1 hour....2 is better. Store in an airtight container. Enjoy!

    Love the stem-bath/double-boiler trick to re-soften. I collect divinity recipes, and I can tell you that tips to save problematic recipes are few and far between when it comes to divinity. Thanks so much for adding that tip! Also, I see the "Dothan" magazine in the background, and can't help but wonder why you don't get your pecans from Priester's in Fort Deposit, Alabama. Those are the gold-standard! All the best!!!

    Your poise even surpasses Martha Stewart! I've made divinity twice years ago (I'm 77) and both times I burned out my hand mixers. You're encouraging me to try this again with my Kitchenaid. Maybe I can actually make it successfully before I leave this earth!!! LOL My family used to put a marchino cherry on top of some of them.

    Finally somebody that knows it's a myth. I live in south Mississippi and I can make it when it's storming outside in the middle of the summer and it comes out just as perfect. I wash every single utensil, mixing attachment, mixing bowl and my magnalite Dutch oven in hot sudsy water before I start.

      Thought it important to follow up from my comment! Guys, this recipe is a sure thing! I felt like such a pro! I'm now looking at 45 perfect pieces of Divinity. To me your tip about the boiling water and dipping your spoons was the most important thing. Every time I thought my candy was getting too difficult to spoon I dipped them and went right back to it. I definitely impressed some of my elder church lady friends--they said they steered clear of Divinity since it was so complicated. Maybe it was a bit of beginners luck but I told them your tutorial really made it seem easy--which is just insane!

    Just tried this tonight & came out perfect. Tried last year (a different recipe that said to boil until 260 degrees) & it was too dry & crumbly. Maybe boiling to 250 made the difference… I don’t know but thank you!🙂🎄❄️

      Thank you so much! Welcome to my channel. The glass done you're referring to is one of my favorites. I bought it in a little gift shop in Texas about 20 years ago. I've seen some similar on Amazon. I've often wondered where I would get another if it broke. Hopefully thst won't happen😫
