I don’t know how this I prepared traditionally, but wouldn’t the meat be more tender if one were to cut it against the grain?
Not needed if you marinate the meat. Some cuts of meats are more tender too depending where you buy it…. If you go to a Latino store and find “Bistec de Bola” you can ask them to pass it thru the machine (to tenderize it) or another one called “Diezmillo” this one is more tender and has more marbling no need to tenderize it. 🇵🇷✊🏽

That's a myth. Everything has gluten as long as it's from a plant. Even some meat has gluten depending on the cut (namely the more cartilaginous parts).
