My first full length video of 2023.. LET'S GOOOOO!
Today we visit a popular Italian restaurant which has one of the most acclaimed carbonaras in London BUT.. is it the best?! Watch me meet the owners, get in the kitchen with them and then cook it myself at home. I hope you guys enjoy the video and are as excited as me about the awaited return of my long form content! Will be uploading plenty more longer CZcams videos from here on...

80g spaghetti
40g guanciale, cut into strips
2 egg yolks
1 whole egg
40g pecorino, grated
Pinch of black pepper
1 tbsp of guanciale fat (from after rendering)
2 tbsp (splash) of white wine
1. Bring a pot of salted water to a boil. Add the spaghetti and cook until al dente (8-10 minutes for dried pasta). Note: if the pecorino is very salty, use less salt in the water.
2. Meanwhile, place the guanciale into a cold frying pan and cook over a medium heat for 5-8 minutes until golden. Once golden, remove 1/3 of the guanciale for topping and 1 tbsp of the fat for the sauce.
3. Beat together the 2 yolks and 1 whole egg, grated pecorino and black pepper, then gradually mix in the guanciale fat until fully incorporated.
4. Add the wine into the pan of guanciale, and mix until emulsified. Turn heat off, then add in the al dente pasta. Pour over the egg mixture and add a splash of pasta water. Mix until creamy and combined then serve.

Awesome video! I just got back from a summer studying abroad in Italy, and I had some incredible food experiences. Carbonara is my favorite dish to make at home, but you gotta have it “senza crema” (without cream)! Just uova (eggs), pecorino, and guanciale! 😊
I also visited Trastevere in Roma- it’s an amazing neighborhood for foodies in the city, but it isn’t overrun by tourists. Many locals swear by it!

10/10 for the production, the presence and everything basically as always! The very last shot actually got me quite interested in a dishwashing guide and how to make it less intimidating idk if anyine else is interested in that. (it's been my worst enemy for quite a while aha)
Put everything in hot water and come back an hour later : super easy 😂

Congrats for your first carbonara. It looks like so good!
It isn't easy even if it has few ingredients and few steps to the final goal. So actually you choose a difficult 'pasta'.
Anyway with more practise you will reach very soon high levels of carbonara.
Imo: no wine, just yolks and left the pasta far the flame almost a minute before to add the final yolks-pecorino-pepper cream.
Sorry, but CARBONARA is a real RELIGION in Rome😅 so for a roman it's impossible not sticking own nose into the other carbonaras (SORRY AGAIN). Truly.

A quick question Sam :
The chef, in the restaurant, slightly heated his pan with the flame when he mixed pasta and the sauce. Imo it's a bit counter intuitive, as I'd be affraid that the fat split and that the egg cooks too rapidly, but the chef's result looked so creamy... and in your version you didn't go with this solution, why ? You were not confident about this option ?
