This is superb, thanks. I think I need to spend hours and hours and hours playing Dorian scales and chords to try to get out of the Aolian/Ionian habit.
Habits can be hard to break! If you really limit yourself to four or five Dorian chords as an exercise it can help to begin with.
Another well-known song in straight-up Dorian mode is Oye Como Va (Tito Puente c/o Carlos Santana). A related common mixed mode configuration that I don't think you mentioned adds V7 at strategic points (Evil Ways, Greensleeves c/o Jeff Beck).
P.S. Beck's rendition of Greensleeves includes an additional often-used multi-modal twist - a "Picardy third" (I instead of i) at the end.
If I play in D Dorian but then use an A Major for the V instead of A Minor ( the true v ) then is that in D Harmonic Minor for that duration ? ( same as A Phrygian Major ) ?

Yes the major V chord can be thought of a belonging to the parallel Harmonic Minor Key.
when you play chord progressions as examples of what you are talking about, It would be nice to here these chords with voice leading. They sound too disjointed to really get the idea.
This is not possible in Hookpad, which I used for examples in this video. I recently got some additional software so I will be able to do this going forward.
