- In this video, MeatEater Producer Janis Putelis runs through the procedure for removing a hindquarter. The hindquarters of a deer, also known as hams, contain a large portion of the total meat and some of the choicest cuts. It’s where you’ll find the sirloin, round roasts, eye of round, and others. Careful knife work means more meat in the freezer, so watch this video and make sure you don't miss a mouthful next hunting season.

could you take spine, the pelvis and the rest of the bones and meat thats not typically used and use it for stock?
A 6” curved flexible boning knife would be my choice. Love the meatcrafter tho.

Great video guys, but I'm never buying Benchmade again. They've donated to anti 2A causes and made anti gun statements. I will, however, definitely be trying this technique out come fall.
