I have something I think your son will be happy to hear: the ice cream brand Ben & Jerry's makes both an original & a non-dairy bananas foster ice cream so when you all manage to come to the US, if you have the authentic dish in Louisiana but then you're in maybe Connecticut & you find yourselves craving it, just go to the nearest grocery store & look the the B&J ice cream. Also, I can't remember where it was because this was pre-COVID, but a restaurant chain had bananas foster French toast at one point.
The banana pudding: it's Nilla wafers, not biscuits; we don't even call them cookies here in the US (no matter the brand, they're Nilla wafers). It's pretty easy to make (my mom made it all the time when my sister & I were kids).
The look on Garin's face while the Jollybeans were eating banana pudding was PRICELESS!! haha YOU NEED TO VISIT NEW ORLEANS, GARIN! ^_^

When you visit the states you will find the better food at local restaurants rather than corporate restaurants. Corporate restaurants can not do bbq, desserts or a breakfast like local restaurants can.

It seems that every culture with access to wheat flour comes up with some form of fried dough -- doughnuts beignets, youtiao, funnel cakes, schmalzkuchen, pisi.... If you're ever in Indian Country you'll have to try fry bread, which is our version of fried dough. It is served either sweet with honey or berry pudding, or savory with taco meat, beans, lettuce, cheese and taco sauce.
If you're in the south or southwest you need to try pralines. They are a candies made with pecans, sugar, butter and cream. Some area of the country they are creamy, almost fudge like. In Texas, there is a chewy praline, which is caramel like.

What's fun on a New Orleans tour is a food tour... they either walk or simple bus tour to several restaurants and eat things at each place.
I am from New Orleans and I like beignets, but not to have it often. Café au Lait (which just means coffee with hot milk in French) I have all the time. I also knock most of the sugar powder off the beignet before eating it.
The good news: I used to live within walking distance of a restaurant named Beignets. The bad news:! I never got one. 😢
