- A discada is a great way to put on one heck of a show for your friends and make some great food outdoors.

Think of the disco as the original outdoor fryer and griddle ALL in one. This is a very popular way to cook in Northern Mexico and South Texas and they usually have all the ingredients you will see me use today, and in addition sometimes use chorizo and weenies. I personally like smoked sausage in mine since this is my own personal South Texas style, but again, run what you brung and use what you love. Here are my ingredients:
4 Slice Thick Cut Bacon
1 lb Pork (Country Style Pork Ribs)
1 lb Fajitas (Skirt Steak)
1 Smoked Sausage Link
1/2 Ham Steak
1/2 White Onion
1 Scallion
1 Serrano Pepper
1 Jalapeño Pepper
1/2 of Red Bell Pepper
1/2 of Yellow Bell Pepper
1/2 of Green Bell Pepper
1 Roma Tomato
Fresh Cilantro
Lime Juice

Even if you don't like the recipe for some crazy reason, you should still appreciate the love and passion that he cooks with! I enjoyed watching it and now want one of those discada discs myself!
A lady at work warmed some up for lunch today and it smelled so good and I think I fell in love 😂
I’m from south Texas but have lived in Japan the last 4 years… We move back to Texas in a week and man oh Man I can’t wait!! Been gone too long 😭
I’m seeing this comment a year later I hope you made it back safely and are enjoying Texas more than ever!!
I swear you got a gift for show this. The way you explain things and segment your presentation. Outlining your video flow, and even doing a segment on family history. Great vid
This is what we eat in Mexico (North) for parties where we want to eat a lot , delicious and cheap 🤭🇲🇽🌮
Hey Arnie, your channel has been a treasure trove. For years I've told my wife I could eat some version of Mexican food everyday. Thanks to you, she's currently finding out I wasn't lying. Got me thinking about a new barbeque too. So good man!
That Broshhha, Speaks Discada. Props, Jefe!
I need one of these. I made this recipe tonight and it was delicious. I just used a regular wok and had to do it in stages, though, by cooking everything separately and then bringing it together in the end. Turned out pretty good if I do say so myself.
Just got mine right now.
Brings back good memories of living in Monterrey...my mouth is watering
Being from El Paso, we ate discada meals all the time. This is a twist I have not seen. I have a Discada and plan to try this recipe! Thank you!
I grew up in Philadelphia. We never had any Mexican food back in the old days in the northern states. It’s changed now though
We do it little different in chuco town, but it's just as good. He was missing the chorizo and weenies.
This is like exactly the same what we make in Turkiye. We call it Sac Kavurma. Very old nomadic Dish.
Makes my day when I see you doing the dance. Don’t ever change.
Bro this is my new favorite food channel. I moved to NY from San Diego about eight years ago and there is nothing authentic where I live, so the last two years I've just been taking matters into my own hands and trying to perfect the tastes that they don't have here. This channel is right up my alley!
Great video, I still say you need your own television program you're 100% great!
Love taking my disco camping, and it's so old and well seasoned like my cast iron pans. Breakfast and dinner are always cooked on it.
Tell me you're a Tejano without telling me . . Lol I feel like discada is the ultimate Tejano party food & I love it! Looks delicious as always
It is a mexican dish not a "tejano" Dish.
Tejanos are mexicanos unless you're cherokee or a yankee
@@cordeliavic5692It’s very much Tejano.
@@cordeliavic5692 there’s a lot of “Mexican” in Tejano. Difference is Texas is added to it. Whether it be the food, the music, the culture. It’s a part of Texas. “Mexican” is just a part of the recipe.
@@kingeleven3820 na, Tejanos are TEX-mex. And we’re proud of it 💪🏼
I remember back in the 80's in Mexicali, Mexico of course. The welders welding that middle part of the disco, then it was OMG. Love it.
Nice now you’re cooking Arnie 😋 I love using my disco now that’s Mexican style cooking 🍺🥩🥓🌶🥑
Just got my first Discada......did not know this was a 'thing'! Ran across this great video looking for seasoning and Discada recipes. Great content - subscribed
Howzit Arnie, hey I really appreciate your recipes brother, we don't get really good Mexican style foods here in Hawaii, so your stuff is like magic to my taste buds and my family enjoys it so much. BTW, that photo of your father you put up, you look just like him, good looking folks!!!
lol, my father was not in the picture but the one in front is my grandfather and he was a handsome fellow haha.
In the famous words of Rock n’ Roll James…
“Nombre, Cállate Chet Up!!”
That looks delicious… Y con unas de harina y fresh aguacate y una salsa de molcajete!
Can’t go wrong with that!!
Saludos y aver si you can send a shout out to Chetumal, Quintana Roo, México… We love seeing your videos over here… Muchas gracias!
What an awesome man. Loving everything he's showing us. And I'm loving him love it. Lol.
I need to get one of these! I can use it with my cast aluminum chiminea which has a removable chimney. Really digging your channel because Latin American and Mexican cuisine, plus TX BBQ are two of my favorites - ¡Salud!
I really enjoy watching and learning how to cook these dishes! I feel like ur an uncle of mine because u have a great heart and are so nice ! Keep up the awesome videos sir. America needs more folks like u that’s for sure
I have a discada and it's great for preparing a good mix of foods for a large crowd. The two changes I can recommend to Arnie's project in this episode, which are to my personal taste, are (1) leave out the chorizo; I use only beef chorizo at times, mostly for breakfast, but even so, it overpowers the taste of the other meats. Chorizo is best for mixing with scrambled eggs at breakfast. Also, (2) cut up your pork and beef the night before, season with WOW, squeeze lime juice over them and store in separate gallon ziploc bags. Other than that, there's hardly any way to mess up discada cooking.
I have been seeing a lot of discada on socials, lately. My man Arnie out here with the BEST! WOW!~~
My favorite Mexican dish.
Awesome discada bro, I'm showing my Filipina fiancé how we get down in we Mexicans get down in Texas!!
I’m so hungry now for some tacos and chiles toreado‘s! And of course, some beer!

Thankful I came to CZcams University and stumbled across Arnie. You can tell he’s good people. Thanks for teaching me make this treasure. I’ll be making it next week for my Taco Tuesday live.

Wow you really take back home 🏡 south Texas!! Cowgirl who knows good eats! Ya eat well! I can not get enough mexican food. Or German! I was taught well in both! Make it quick 😜 feed a bunch, cuz your day or night never ends!!
If anything can bring everyone together, it’s with food. That dish looks amazing, thank you.
Love this guy, his chipotle salsa salsa is my go to.
The guys that used to come up in the summer to work on the farm next to ours used to cook these on a field disk. They asked our neighbor to buy one for them then they welded it on to a stake and shoved the stake into the ground over a grill
You remind me of my relatives thank you for that feeling
I’m Chinese American, much love to you! That reminds me of a Mexican style wok! Looks delicious thanks for sharing
Si señor!! That is a great dish, I make mine with chorizo and only add jalapeño rajas and white onion. Also, I cook over a mesquite log fire. Gotta try it with the WOW though.
My coworkers used to do this but with just a large hunk of beef cut like fajitas, and with a full 3lbs tomato, 4 whole onions, and 1.5 lbs of jalapeños.
The meat was seared well, then set aside, and then add all of the slices of veggies.
Cook until the veg is almost done then add back the beef and cook until it's almost a Con Carne like gravy and meat.
Absolutely stellar
I have a wok.. and a griddle... I chose the griddle... It was amazing!
You THE MAN!!
Looks delicious
This looked so good!
Vato you make me smile. Good job!

Thank you for all your sharing
Nicely done. Looks delicious
Man this looks amazing!
great video!
My dad and I used to eat our food using what you can a Mexican fork. Taking a tortilla piece curl it into a scoop and grabbing up a big chunk of whatever was on the plate, then splashing some salsa on it, followed by a Corona.
I love this recipe because the majority of the protein is not processed. I cannot wait to try it out as soon as my WOW seasoning comes in the mail. Hopefully by next weekend’s football game. Thanks Arnie🤙🏽
Where do I order this WOw seasoning..Blondie
Was all prepared to call you out on the “ discada” but you acknowledge what it was and used a “ reasonable facsimile “👍👍👏👏
I have watched a lot of your videos and should have known better.
My dad loves making discadas his west central style is definitely different from this gentleman's northern style for sure though.
I just bought me a discada pan and it's a big 1, it weighs over 20 lb now I have to figure out how to season this thing before I start cooking on it. Love your channel love your recipes and I can't wait to try some of them
You earned a sub for this one.
I’ll be following your recipe.
Discada looks delicious and tasty puro texjano 💯 showing you love from Houston Texas nice video cowboy
That looks delicious I am going to try it.
I can't wait to go back to San Antonio and cook this for my brother.
Dang that looks awesome my friend.👍👍
That looks delicious
Can not remember the last time I had this.
Thanks Arnie,
I'm going to try to make my own disco as soon as I find one at a barn sale.
