- Stir fry Romaine lettuce with garlic and preserved beancurd.
Here is another quick and easy Asian dish. This recipe only needs 5 ingredients. So if you want a quick and easy meal, you are at the right place.
The type of lettuce I use is called Yao Mak 油麥, a type of local Romaine lettuce. You can substitute it with any lettuce you like, for example, iceberg lettuce.
Recipe:
Ingredients:
300 g lettuce, weight before cut and wash
4 cloves garlic, coarsely chopped
1 large red chili, removed seeds, cut into small strips
3 cubes of preserved beancurd
1/2 tsp salt, more if you omit the preserved beancurd
2 tbsp vegetable oil
Method:
1. Cut off about 1cm from the stem of the lettuce.
2. Separate the lettuce leaves, wash thoroughly and drain.
3. Heat the oil in a wok. Saute the garlic until slightly golden.
4. Add the chilies and preserved beancurd.
5. Mash the preserved beancurd to become paste with the wok spatula.
6. Add the lettuce into the wok. Stir-fry over high heat.
7. When the lettuce is about to shrivel (about 2 minutes), remove immediately and serve.
Cook’s note:
1. High heat is crucial to generate the wok aroma throughout the stir-frying process.
2. If you omit the preserved beancurd, please use more salt.
3. You can increase the amount of garlic if you want.
4. So not add any water during stir-frying. Water will be released from the lettuce during the process.
5. Do not overcook the lettuce. Otherwise, it will lose its crunchiness, the vibrant green, and no longer looks plump.
6. Cast iron wok is best for stir-frying. Alternatively, use a heavy-bottomed skillet or a large pan that can withstand high heat. Non-stick pan is not suitable as it is not designed to cook over high heat,

Do i need to use that preserved tofu? I can't find it. Can I use regular tofu?
Yes. It tastes completely different from fresh tofu. The best bet is to check at the Chinese or Asian grocery store.
