Yea user testing is so important and can be hard. Me and my team make training VR simulations, and its the same problems: users wanting to handle things that are just part of the environment, mashing all the buttons, wanting to give them a hint where to go, etc. Because we're doing training and trying to gather stats, I can't give hints while the employee is in the sim. We are trying to do a lot more with in-play instructions and guidance as we tweak our simulations, but this is a challenge.

you still learn a lot from tutorials which can give you ideas for new games/mechanics, trying to find a solution to one specific problem in a tutorial video is probably not a efficent way to go ! but i still recommend all the great tutorial youtubers ^^
On the question of working solo vs working in a team - I'm a professional VR dev working for one of the biggest social VR platforms and I'd love to work in a team on hobby projects but finding someone who's enthusiastic enough is near impossible. I've got a bunch of unfinished projects that I think are pretty impressive but I just don't seem to meet the right people who have an appetite to be involved. I really don't understand what I'm doing wrong, though I don't have a big internet presence so perhaps that's why.
What do others to to find other people that might be enthusiastic about working on a project?
My biggest hack to finding people is joining game jams! Jump in the Discord server or forum, introduce yourself and join or start a team to do the game jam with. It really is a cheat code.
