Great podcast with my woodfired oven hero Clive. Looking forward to his book. Built my oven after lots of research and use it regularly and as you both say its all about the insulation and heat retention.
Thank you for watching Dave, it was an honor having him on!
Love Clives content. It's so mesmerising and hypnotic. I could listen and watch Clive all day. Looking forward to more content, Im also incredibly jealous of his oven!.
Thanks for this video. I really enjoy Clive's videos. i have watched all of them multiple times.. I recently bought an oven and we did pizza night last night.. Quite a disaster :)
Totally normal! Personally, I have learned more about making pizza from the times I screw up. Good luck on your wood-fired journey.
Love the woodfired oven chef! Clives videos are amazing! Very relaxing and inspirational
Could not agree more!
Great Interview! Clive is the man. Ireached out to him and he supplied me with lots of info. Currently designing my outdoor kitchen and of course its based around a wood fired oven! I would love a Forno, well see how the process goes.
He is an incredibly down to earth guy. His passion is inspiring, and it doesn’t surprise me that he answered your questions and offered guidance. He is one of a kind!
I have just discovered Clive’s channel and have binged all of the episodes. I started with an Ooni and it lit a fire within me to learn more about wood-fired oven cooking, now I am planning my next-level oven. Thank you for hosting Clive!
Thanks for watching!
Love it!
Great video. I used my oven today to cook our New Year dinner. I use the oven at least twice a week. Pizza on Friday night and lunch on Sunday.
The Blanc Creative pan that Clive mentioned in the video on cook ware is my favorite pan to use.
The steak and Brioche recipe went very well. I do all my potatoes using the method Clive demonstrated.
Having cooked our New years day meal in the oven I put the door on and on Jan 2 there was enough retained heat to cook a loaf of bread.
When I first started with my oven I created a time temperature graph so I have some idea of the oven's cooling profile. Pizza Friday, bread Saturday morning and maybe a Boston butt on Sunday. All on one firing. I did accidently smoke a turkey one time. Started the turkey but found the oven had cooled too much so I lit a small fire. As it heated up I thought that I had damped the fire down so I put the door on. About 30 minutes later I checked the progress only to be met with a cloud of smoke. Turkey was good but it had an Oak smoke flavour.
Thank you for the inspiration.
Great podcast! Every time I see Clive now I can hear that soft Spanish guitar playing in the background in my head! I wonder if his book will do that as well! ;-) James from Southern Germany
So true 🤣
Wait... Clive lives in California? I suppose based on his patio, and all the other subtle clues, that he was somewhere in the Mediterranean.
Great show
Thank you for watching!
Loved the interview with Clive, what model of yours does Clive have?
I understand Clive had his oven custom built but what I meant to ask what model of your ovens would be the closest to the size and style of his excluding the exterior of his oven.
Our Casa 110 in stucco would be the most similar to Clive's oven in terms of performance and the overall look.
Was very excited to see this interview but was enormously disappointed. interviewer spoke for 80% of the time (saying not very much) and hardly asked any questions. so much left unsaid.
It has been a while since my last interview; apologies for the disappointment! I appreciate your feedback and will take it into consideration on the next podcast.
