Ep 15: Whole Roasted Branzino from the Wood Fired Oven

  • In this episode I roast two whole Branzino and serve them over Potatoes Anna, with some Roasted Tomatoes and Grilled Lemon.
    BRANZINO
    2 Whole Branzino
    Olive Oil
    Lemon Slices
    Fennel Slices
    Parsley
    Sprigs of Thyme
    Fennel Powder
    Salt and Pepper
    1 Lemon cut in half
    POTATOES ANNA (Pomme Anna)
    4 or 5 whole Potatoes, peeled to roughly the same diameter
    Melted Butter
    4 Cloves of Garlic, thinly sliced
    Chopped Thyme
    Salt and Pepper
    ROASTED TOMATOES
    15 to 20 Small Tomatoes
    Whole Garlic Cloves
    Sprigs of Thyme
    Salt and Pepper
    TOOLS
    Roasting tray
    Mandonline

    You have no idea how helpful those bloopers u add at the end of each video for me to snap awake from your hypnotic material. I dunno why I feel this way about ur videos.     Clive, great video and great series. A comment or two and a question or two! The roasted tomatoes are a highlight here -- we just expanded on that by roasting them further, and with more garlic, until the tomatoes have really broken down, and served them over pasta -- a very easy, delicious way to enjoy them!
    Next, we've had trouble finding a Tuscan grill like the one that you utilized . .. . .the only one we could find was stainless steel, and it was really difficult to remove the fish without everything sticking and the fish coming apart.

      These are my people Logan, there would be no Wood Fired Oven Chef without them. I usually aim for about 700f/360c in the center of the oven floor. That, and using the variable temperature between the fire and the opening, gives me the flexibility I like. Happy holidays!

    Listening to you talk about your oven is so relaxing and unpretentious, love it! One thing I would have done different with the fish? arrange them head to tail on the grill and present them the same way, kinda like a tilt at the, "Pisces" symbol, or "Yin-Yang" ? Whatever floats one's boat.

    After watching the entire series, i just wanted to say thank you very much for this incredible series. Because of you, my oven that has stood dormant for 3 years will now be fired once again. Also from a million other chefs and/or presenters/series yours is one of the best i've seen so far and i think it's because of your genteelness. The way you talk, the way you move, the way you handle your fire and food, and the way the dog looks at you (i am sorry but i don't now his/her name) it all expresses a very warm and good person.     My husband Bernard built me a woodfired oven as a thank you for donating a kidney to him. I love your videos. We've tried pizzas, leg of lamb and pork ribs with mixed levels of success but as you say, it's a wonderful cooking experience and sharing with friends takes our outdoor entertaining to a whole new level. We live in the damp climate of the north of England so that adds to the challenge! I was wondering what temperature you used to cook the branzino meal.       Hello Carolyn. I can't think of a better reason to build an oven. Cooking in the wood oven will always be a reminder of the love and compassion you have for your husband. I heat the oven the same for almost everything I cook, which is around 700F/370C in the center of the oven floor. Then I take advantage of the varying heat between the fire and the opening to regulate where I place the food. Hope you are all safe and well up North. Clive

    Regrettably I cannot ad pictures but my branzino pommes Anna and roasted tomatoes where lovely. The potatoes took only almost double the time , but anyway a big succes . Thx for your videos they where a big help in how to learn use my new woodfired oven 😃
