  • RECIPE
    Ingredients:
2 cups coarse bulgur 2 large tomatoes
    2 green peppers
    1 onion, diced
    Black pepper
    Directions:
    Salt
    1 tablespoon red pepper paste
    Vegetable oil
    5 cups water

Peel the tomatoes and dice them in small cubes. Finely dice the onion. Cut
the peppers in small cubes as well. In a pan, sauté onions with peppers in the vegetable oil. Then add the diced tomatoes and cook until they are tender. Add red pepper paste and cook stirring for several minutes. Next goes the bulgur wheat. Also stir and cook so it takes up the aroma from the vegetables. Add the water and season with salt and black pepper. Cover as soon as it boils and let it simmer over low heat until all the water gets absorbed.
1 cup Bulgur to 1.5 cups water
Cook covered for about 10 minutes until water is absorbed

The description box says “5 cups of water” and “1 tablespoon of pepper paste” but in the video you say “1.5 cup water for 1 cup of bulgar” and “tomato paste”. Please could you amend the description box.

Wash the rice to get rid of any toxins and for just general food hygiene. Also adding chicken stock can help lift the taste of the bulgur.

I have been extra fine bulgur; aside from the ratio, can I do pretty much the same?

No. Fine bulgur is for köfte ( meatball or bulgurball) or kısır salad.
