How to make a SERIOUSLY GOOD Turkish Bulgur Pilaf | Burghul Pilaf

  • Today I'm making my favorite bulgur pilaf, which is very rich in flavors, with fragrant spices and is simply delicious. Turkish bulgur pilaf is an extremely filling, satisfying and quite healthy dish that is easy to make and a really nice alternative to rice.
    Bulgur is very rich in nutritions and one of the many benefits of consuming bulgur Pilaf is the rich amount of fiber that the whole wheat contains.

    Ingredients:
    • 2 cups of bulgur (coarse bulgur for pilaf)
    • 3 tbsp vegetable oil
    • 2 tbsp butter
    • 1 onion
    • 1 clove of garlic
    • 3 green chilies
    • 1 sweet red pepper
    • 1 cup tomato sauce or grated tomatoes
    • 1 tbsp tomato paste
    • 1 tbsp chili paste
    • 2 tsp salt
    • 2 tsp dried mint
    • 1 tsp black pepper
    • 1 tsp chili flakes
    • 4 cups of hot water (about 800 ml)
    Instructions:
    1. Finely chop the onion, garlic, green chilies and the red pepper
    2. In a large pan with a lid, heat up the oil, add the onions and cook for 1-2 minutes until fragrant
    3. Add 1 tbsp of butter and continue cooking until the butter is slightly browned
    4. Add the chopped garlic, green chilies and the red peppers and stir and cook until soft
    5. Add the tomato paste and the chili paste and cook 1-2 minutes until fragrant
    6. Add the tomato sauce or the grated tomatoes
    7. Add the salt, dried mint, black pepper and the paprika powder; stir and cook for 1-2 minutes
    8. Add 2 cups of bulgur and cook & stir for another 3-4 minutes
    9. Add the hot water and stir until the ingredients are mixed
    10. Add the remaining 1 tbsp butter and stir until the butter is melted
    11. Cover the lid and bring to a boil, once it’s boiling bring to low heat and let it simmer
    12. Cook for about 10-15 minutes until the bulgur is soft and no water remains
    13. Gently stir to mix and combine all the ingredients
    14. Place a paper towel or kitchen towel on top of the bulgur and cover the lid on top
    15. Let the bulgur rest for 10 minutes before serving

    I searched for a recipe as I bought Burgul and didn't know how to cook it 😊. As we have great Turkish friends I gave this a try and it came out beautiful!! Yesterday we had guests and my second try at your recipe came out just great and was loved by everyone. Instead of Chili's (not our favorites) I used yellow and red capsicum and green peas for the added colour. The rest as is and I sure will make this now on quite a regular schedule. THANKS a lot!!!

    I made this recipe, it was great thank you so much!
    I'm fortunate to live near a lot of Turkish restaurants (North London) and this is such a good dish. I'm trying to make a bunch of it to have for lunches throughout the week. Any suggestions for things to add to, or have it with to make lunch more filling?

      We usually eat it with meat and also add braised cubed meat to this pilaf.

    tried it, my peppers were HOT AS HELL, so i didn't add any other hot spices, but it's fucking delicious, thank you so much, this is actually an amazing recipe! PS: pls taste the recipe as it develops, not all people can tolerate this amount of heat, I can, but still went for a softer version, keep this in mind!

      It's mild chilies and the chili paste is Turkish style chili paste, you can find it in Middle Eastern or Turkish groceries, it's called "biber salcasi". If you cannot find it, you can use tomato paste.

    my bulgar always turns out soggy. Do you have any tips? I have always used the same recipe and never managed to get it right so I am going to try your recipe next time. The paper towel technique looks like a good way to draw out excess moisture.

      Try reducing the water and the paper towel definitely works. Also make sure the pilaf is rested (steamed) at least 15 - 20 mins covered with the towel.

    Just a question , I love to eat chicken , expecially cooked and fried chicken .
    What of if I put every ingredients but pour in the hot water of my cooked chicken into the sauce instead of hot water ,
    Will the test still be the same or will it still be bulgar pilaf

      You an also add cooked and shredded chicken into the pan together with the bulgur, then it will become bulgur pilaf with chicken.

    Made this today good recepie, but i used 3 and a bit cups of water instead of 4 cups because of the amount of liquid inside the tomatoes. And I used chicken stock.

      Usually a side for meat, but I eat it with yogurt sometimes for a full meal.

    Not insulting your technique but what do the paper towels under the lid do that the lid alone couldn't do? Does it hold the steam in better or something

      It absorbs the excess moisture and to avoid dripping back into the pilaf. It is a widely used method when making pilaf in Turkey and many other neighbor countries.

    Real bulgur pilaf comes in grains. It needs to brew a little more.
