Easy Vanilla Butter Cake Recipe

VANILLA CAKE
3 cups (375 g) all-purpose flour
3 cups (600 g) sugar
2 tsp (9 g) baking powder
3/4 tsp salt
1 cup (226 g) unsalted butter, melted
3 large eggs, room temperature
2 large egg whites, room temperature
1 ½ cups (360 ml) buttermilk, room temperature
2 tbsp (30 ml) sour cream, room temperature
1 tbsp (15 ml) vanilla extract
1. Preheat the oven to 350 degrees F (176C). Grease and flour 4 6-inch baking pans. Sift the dry ingredients together into the bowl of your stand mixer. Set the mixer to the lowest speed and using the paddle attachment, blend until well combined.
2. In a separate bowl, whisk together the wet ingredients. With the mixer on low speed, pour the wet ingredients into the bowl of your stand mixer. Mix until just barely incorporated, scraping down the sides of the bowl when necessary. Increase the mixer to medium speed and beat until creamy.
3. Pour the batter into the baking pans and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted comes out clean. Allow cake to cool completely before decorating.

I added 200g sugar instead of 600 and it was still extremely sweet. So i do recommend reducing the sugar. Otherwise very delicious 🫶🏼

You can use yogurt. The oil could replace butter, not the sour cream.

You probably could! It may have less flavor than normal, but would be lighter in color. I’d probably experiment using 6 egg whites total and see what you think ❤️

I'm going to try this recipe out, but with slight modifications.
Cutting the recipe in half.
Cutting the sugar put in the cake in half.
Creaming the sugar and butter together to make it airy.
Whipping the egg whites to make them airy as well and folding it to the cake mixture.
Alternating the wet and dry ingredients.
So wish me luck everyone.
It turn out really good. It taste nice and moist. The one thing I would change is to not add shortening to my buttercream and maybe add less powder sugar as well.

Will this receipe work in 3 - 8" pans that are 2" deep
