No Wrap Pulled Pork Recipe - Carolina BBQ VS Texas Pulled Pork - Part 2

- Thank you for watching my no wrap pulled pork recipe. Who doesn't love pulled pork, especilly Caroline BBQ? On my first video where I compared Texas pulled pork with Carolina bbq, I didn't feel I represented Carolina bbq correctly. I spoke to one of my subscribers (David) that's from North Carolina and read lots of comments on what makes Carolina bbq so I felt I did a much better job representing Carolina on this video.
Thanks for watching

Thank you for the re-do. I was happy to see that you included the preparation methods used by folks in North Carolina. Chopping up the pulled pork matters. My father was from North Carolina so this is the style I grew up with. The vinegar cuts through some of the fat that otherwise coats your tongue and deadens your sense of taste a bit. That is why you get that punch of flavor. I actually prefer a mustard based sauce for ribs as it does the same thing, but compliments the rib meat a bit better. I smoked a plate of beef short ribs Texas Style for the 4th of July and they were amazing. Not my words but my guests. I humbly agree with their assessment. As a classically trained chef, I have found the places where you find the best and most plentiful of a certain ingredient tend to know how best to prepare that ingredient so North Carolina being the king of pulled or chopped pork and Texas the king of all things beef is no surprise. Other parts of the country can turn out some bodacious BBQ but when it is done right I will take Carolina pork or Texas beef anytime. Taking a Carolina BBQ tour is the perfect way to get to know and appreciate this outstanding regional cuisine. You will come back a changed BBQ man.
Thanks so much for the great comments. I can't wait to tour Carolina to try the different bbq styles. I'm sure they're all going to be great, especially the vinegar sauced bbq. I appreciate you watching.👍
Really good honest cook. Appreciate your honesty, doing a redo. Cheers.
Thank you so much Preston. I really enjoyed this cook. 👍
As a North Carolinian..... I most definitely approve and appreciate this video. Thank you so much for doing this Texas vs Carolina pulled pork video again.
I have to agree, Joe. Whenever I've had NC vs TX pulled pork sandwiches, there's just something about that vinegar-based sauce that takes it over the top :)
Hey Ry! It was really tasty and my neighbors all really liked it. Some even went in for a double bite like I was going to take the sandwiches away.😁 Thanks for watching buddy. 👍
Really? How come ?what do you think it makes it better :)?

Yessir 😁 every year my family has a pig pickin. We have like 3 pigs cooking for like 18 hours or so. Our barbecue is the best 🤤

I love the way BBQ can bring people together and celebrate the differences between cultures. Loved the video!
It really does. Unfortunately we can't get together like we usually do as neighbors but it felt great to see my neighbors and bring them some good tasting bbq. 👍
Joe, that was a great video. Your exploration of the flavor profiles of the vinegar, peppers, charred fat, and deep smoke were to the point. Oh, and you have nice neighbors! Semper Fi.
Thank you so much and thanks for your service.🤘🇺🇲
I've made this recipe three times now and everyone who has tried it agrees this knocks it out of the park. At one time, I looked at taking a job in Raleigh NC, and by marriage, I have family there. What I found is that a Carolina style pulled pork sandwich is normally topped with coleslaw. Just your garden variety recipe, but I prefer a vinegar based coleslaw.
Texas u don't stand a chance. We were barbecuing in the Carolinas before Texas was even a state 😂😂😂
Yeah Kas, I learned that Carolina is really proud of their bbq. No doubt its good. Thanks for watching.👍
True, ironically Virginia was barbecuing before NC, in the very early forts built by settlers. And now VA doesn’t have a characteristic barbecue...
Dave, I have a PitBoss 1600. How would you recommend placement of the pork butt in relation to the firepot for smoking? Shelf in or not?
Hi Joe, I Loved your video! Quick question, I'm using a Materbuilt Electric smoker, what type of wood do you recommend I use for the Carolina style Pulled Pork?
Hello David, hickory is what is traditionally used but use what's available in your area. 👍
Just found your channel Joe, looks great! Wow, even found a Bears fan. Cool you're sharing the BBQ with your neighbors man. Great job.
Thank you Robert! I appreciate you watching buddy.👍
Does the apple cider Carolina sauce added after its pulled give too much cider flavor or does the salt and pepper offset the cider flavor?
Pulled pork is my favorite and that means I love Carolina BBQ. Go Packers!
Nice Brady! 🤘
I am from Kinston North Carolina we usually have a bbq festival here every year but this year it got cancelled because of covid
Oh man I'm going to look that up. I bet it's a ton of fun. Thanks for watching.👍
Joe, I'm here doing a little Recon for the BBQ Pitmaster of youtube comp! You know how I love that N. Carolina Bark! Cheers brother and thanks for putting this together!
Thank you Tommy!🤘
Joe, that Carolina sauce needed about a tablespoon of brown sugar. Now imagine chopping and mixing all the different parts taste and textures of the whole hog into a sandwich ..... that is Carolina pulled/chopped pork.
A whole chopped hog sounds so good. 👍 Thanks for watching.
Do you simmer yours for a minute?
I totally agree on just a touch of brown sugar.
@@Jack-uj2vx Yes, helps dissolve the sugar and the red pepper flakes integrating through the sauce.
@@SmokinJoesPitBBQ
We agree, rather than mix it straight into jars, simmer it for a minute.
It changes it completely.
@@Jack-uj2vx I'm doing that next time for sure.
Awesome show Joe. I'm in south eastern Virginia and the Carolina BBQ is what is served around here. We are crazy for it. But coleslaw is a must.
you made my mouth water several times in this video...that rarely happens.Thank you for reworking this like you did Joe.
Great video Joe as always, thanks for all the hard work you put in your videos
wow this is crazy!! I love looking at different varieties of cooking. just in case I strike it rich, I'll definitely keep these recipes in mind 👍❤️
If you strike it rich, I wanna be your cook. 👍
@@SmokinJoesPitBBQ cool!!! I will keep that in mind!
Bob and Jeff repping Texas with wine coolers?!? 😂 Great video, that just struck me as funny!
Hey Joe - I’m with you 💯 on this one. This was a great redo comparison video. When I was in my early 20’s my first experience eating smoked pork was Carolina Chopped BBQ w/slaw. My girlfriends mom who was from North Carolina would make it. I love all types of smoked pork but, Carolina Chopped BBQ will always be my favorite. I’m always looking for that vinegar flavor when eating smoked pork, it balances the flavor of the fatty pork. I love that pepper based vinegar sauce. Thanks for sharing.
That's awesome Mark! It really does pair well with pork. Thanks for watching buddy.😈
Brother this was a fun video and really instructional. I learned a ton. I’ve never done a butt unwrapped but I can see the difference it would make on the bark. Perfect cook and great video. I wish I was your neighbor!
Hey there Gary! Thus was definitely a fun cook. The bark and flavor are both really noticeable on an unwrapped pork butt. I appreciate you watching buddy.👍
Any advice to get that black bark on the meat. I have an offset and can never get that type of bark on my food
Hello Cary, I spritz pretty frequently but it starts with a good rub. Start to spritz once your bark is set. 👍
@@SmokinJoesPitBBQ i wish o could send you pictures yo show you how mine come out. I salt and pepper but maybe not enough.
Hi Joe, I used your Texas style bbq brisket recipe and it came out fantastic. Your video enfluenced be to go right out and buy a pellet smoker. One of the best purchases I've ever made. Thank you so much.
Nice Greg!🤘
I did two shoulders of the Carolina and it is hands down the best shoulder I’ve done. Mine had a good amount of heat coming through from the bark and the vinegar sauce (my sauce went a few days rather than 24 hours). This is an incredible recipe - thanks for putting it up. I’ll be doing this one again for sure.
you do know Carolina (both of them) have at least 3 different variations? all refers to Pork...but Eastern NC (vinegar based), Western NC (more Red Saucy), and South Carolina BBQ - Mustard Based
Thank you Elliot! I like all of variations. I can't wait to try the tomato and mustard based bbq. I appreciate you watching.👍
Great video! Excellent experiment! All looked delicious!
Thank you so much for watching.👍
For many years I wrapped pork shoulder at about half way. On the advice of a friend, I tried it unwrapped and I will never wrap it again. Plenty of fat to keep moist, and the extra flavor is great,
Yes sir. 👍🏼
Glad I found your CZcams channel. I have learned so much.
I really liked that you had your neighbors do the taste test. Very interesting.
Thank you for watching.👍
I just cooked a butt Carolina style just the way the gentleman from Carolina said to do it.
Turned out very good think it was of my best chopped pork sandwiches.
I liked his sauce, I will watch this video when I get home from work
Thanks Tom! David did a great job giving us his recipe. Thanks for watching.👍
Awesome BBQ. Thanks for doing this video Joe!
Loved this. Think I will copycat this and see which way my neighbors go. Thanks Joe
That would be cool buddy. Can't wait to see your results.👍
Barbecuing is my favorite thing to do. When I can’t do that watching BBQ videos comes a close second.
Your videos are awesome Smokin’ Joe!
Thanks so much Buford! I really appreciate you watching my vids and always commenting.👍
I cooked a few briskets last weekend. Texas style. I decided to get me cleaver out and chop up the point on one. Threw some bbq sauce on it, mixed it. Best fang bbq sandwich I have made yet. Never thought to chop up the point
Very nice! That actually sounds delicious.👍
Great redo! I’m a new subscriber and I’ve thoroughly enjoyed every video I’ve watched so far. Keep up the good work and thank you for the bbq lessons.
Such a good video as always Joe. I’m going to have to try and make that Carolina style BBQ with my next smoke!
That was a fun comparison. Great work, Joe!
Thank you for watching buddy!🤘
Thanks for doing this again! You definitely represented better for Carolina. That’s just one of our recipes for pulled pork so there’s other ways for you to play around with brother.
Another great video Joe. My favorite BBQ channel for sure. Love how you keep cooking on a offset but you must have a helper to manage the fire on some of these cooks? Like your clot video......
Joe you nailed it. It made me hungry watching your video and I had just finished eating.
Thank you so much again David! You're recommendations were spot on and the Carolina BBQ came out so good. 👍That sauce is the key.🤘
Props to you for doing it again. Giving proper respect to Carolina style. Great content and I thank you for that. LOOKS AMAZING. You have very fortunate neighbors, 😂. Love the channel 👍
Thank you for watching. I love my neighbors.👍
Respect for going through the trouble of redoing this and also mentioning that while closer, it's still not the authentic method. I agree this is closer to Eastern North Carolina preparation but like you said we generally cook whole or half hog over open flame to get 'cracklin' to chop into the mix. We do also put sugar in the sauce, albeit a little less sugar than (Lexington) Western North Carolina style. It's also very common to see a hot sauce such as Texas Pete added for flavor depth as well but not always the case. You can find one of the most representative examples of Eastern NC BBQ in a video called "The Legendary Skylight Inn's Whole Hog BBQ" by the channel Munchies, and also "Anthony Bourdain A Cook's Tour Season 2 Episode 7: The BBQ Triangle" by the channel GoTraveler. I have eaten BBQ all over NC and Mitchell's and Skylight Inn are a couple of the best representations. Another good video that shows authentic Eastern NC BBQ is "The Pit Authentic Barbecue in Durham | NC Weekend | UNC-TV" by the channel "North Carolina Weekend on PBS NC" which showcases a BBQ place that I frequent quite often since it is the one closest to me. After watching all those videos one can see the common threads of must-haves for it to be considered genuine NC style, otherwise it's just pulled pork. But what you have cooked here looks mighty tasty and I wouldn't complain a bit if handed a plate of either style.
Thank you so much for watching and for the education. I'm fascinated with Carolina BBQ so much that I want to spend some time out there to soak it all in. 👍
Real old school Eastern NC barbecue is "mopped" with an actual mop. You have done Eastern NC barbecue proud. I appreciate this "Carolina pulled pork" video, becauss you actually listened. Thank you!
That is truly N.C. BBQ nice job.
If you ever do get to North Carolina for that bbq tour, the 4 kings of NC 'cue are Lexington BBQ (aka Honeymonk's) in Lexington, Red Bridges BBQ in Shelby, B's BBQ in Greenville, and Skylight Inn in Ayden.
Wow Joe, your pulled pork looked amazingly delicious, and your killing on the sub count congratulations buddy. Keep up the awesome videos. Thank you. Cheers 🍻
Thank you so much David. I appreciate you always watching buddy. 👍
Joe great comparison on those 2 different styles of pulled pork .. I'm deffently gonna give that Carolina bbq a try for sure
Looks amazing. What is your SPG recipe?
SPG MIX RATIO
3 CUPS COURSE BLACK PEPPER
1 1/3 CUPS KOSHER SALT
1/3 CUP GRANULATED GARLIC
1/3 CUP PAPRIKA
2 TBSP CUMIN
As a Carolinian who hates cole slaw, nc bbq sandwiches are the only time I enjoy ALIL bit of cole slaw on my food, they just compliment each other so well!
Great video. I grew up in NC and I can’t get used to any other region’s barbecue. True NC barbecue is whole hog or shoulders cooked over hickory embers so it’s not really smokey, but you really did justice to eastern NC style barbecue. Glad to see a Texan cooking NC barbecue. Love your channel.
Thank you so much Pat! I want to visit NC one of these daysm I appreciate you watching.👍
Here in Carolina we take our BBQ real serious, maybe too serious lol
Nice video my Carolina bbq had more crushed red pepper & black pepper in it . I really liked all that pepper in it, it wasn’t to much, just right. I have been requested to do another one for people at my job
Very nice Tom! The crushed red pepper adds some really good flavor. Thanks for watching buddy.👍
Well done for a Texan. Lol! Carolina is king, of course! We can’t touch brisket though, so you’ve got us there. 🍻
😁 Thank you Raleigh! Carolina is definitely king of pork. 👍
Hey Joe, I’m new to the BBQ game and I truly appreciate what you’ve done on this video. No shame in learning and trying again. Awesome and saludos para los de El Paso.
Just smoked my first pork shoulders this past weekend. That Carolina style sounds delicious. May try it on my next cook
Nice! Carolina bbq is really good.👍

I did the Carolina BBQ over the weekend. It was a huge success. Everyone loved it. Thanks for sharing!
Very nice. Glad you all enjoyed it. 👍
When the people making it are good at what they do it all works, eastern, western, and even that mustard based stuff in sc

Very nice! Thanks for watching.👍
You are the best Joe! You helped me grow my own yt! Hopefully, I can grow as much as you.
Thank you Goat! I appreciate the kind words and you watching.🤘
OK... If I can' t move to Texas and buy a house next to Joe's, the next best thing is to make some my own Carolina BBQ. My grocery store butcher had some boneless pork butts in the case (average 3 pounds) so I decided to go for it. I cooked it on my Yoder Ys640s at 275 with a bump up to 350 for 45 minutes at the end. Total cook time about 7.5 hours. That's a lot longer than I expected. I cut the rub and sauce to about 1/3 (Joe said his cuts were around 10 lbs). It's a little salty so next time I'll cut the salt back. But other than that... DELICIOUS!!! I definitely hit the stall around 160... I took it off at 199 and it was a little dry. Adding the sauce perked it up and it was just right in terms of moistness. Smoke ring and bark - amazing.
Hello Emmgee! Sounds good. I appreciate you watching.👍
Might be a stupid question but are you working in Celsius
No sir Julian, the temps are Fahrenheit. 👍
@@SmokinJoesPitBBQ thank you that’s where I’m going wrong
Wow, this was a very interesting comparison between the two recipes compared to your previous video on these two styles of pull pork. One thing I must have missed, what is the recipe for the Carolina sauce? Again, nice job in getting the neighbors involved in the blind test, thank you.
Thank you Steve! I used 12oz of apple cider vinegar, 1 tablespoon of black pepper, crushed red pepper and salt. Super simple.👍
Looks great bro. You cooked specifically Eastern NC bbq. Not sure if you used my sauce recipe. But it would be as authentic as you can get. I grew up in ENC and still here today. It runs through my veins. The difference between Eastern NC and Western NC is ketchup. We don't use it in ENC.
Hey Scott! I really appreciate you watching. I did see your sauce video and it looks fantastic. This sauce recipe I used came from a subscriber and it was on point. I cant wait to get out to Carolina to take a bbq tour. 👍
@@SmokinJoesPitBBQ Come on bro. I will be glad to take you to several authentic joints around.
Great video man, Them pork shoulders looked amazing!
Thank you brother James!🤘
Born and raised in NC.
I think you did justice with both of your Carolina style Pulled Pork BBQ. The second being the more traditional Eastern NC. The first being a bit of a refined and tweaked variety to try and impress judges. There's something to say for going with tradition.
Thank you so much. It means alit coming from a NC native. I really appreciate you watching.👍
@@SmokinJoesPitBBQ No, thank you for the entertaining content. The only suggestion to improve your NC BBQ would be a touch of brown sugar in the vinegar and simmer it a bit, but a bunch of people suggested that.
I hope you get to visit one day and get to try some while you're here.
Way to go Joe . Keepin it 💯👍🏽
Thank you Mike!👍
Love this type of video!!! i am going to move to your block!!!
Awesome job Joe! From Miami Florida
Outstanding!Outstanding!Outstanding!
The pulled pork looks great but....the Carolina BBQ looks fantastic! And it sounds like the winner.
I have never tried to do, now I am convinced.
Thank you for another of your educational and great to watch videos.

Really enjoy watching your videos...informative & non biased when comparing the various proteins you smoke. I just have to say....I really think you need to do a complete video of "HOW YOU CLEAN YOUR SMOKERS!" Your's always look like they are new, whenever watching any of your videos!? Pass on whatever process you happen to use, for "us viewers" to try and get those beautiful, clean grates in our smokers, too!?
Looks like it's Panthers over Cowboys! Personally, I'm a 49ers guy. Thanks for the video!

Great eastern Carolina bbq. Love all of Carolina bbq
I'm shocked.. Lately there's been so much state bbq debate & NC bbq always gets beat up.. Maybe your next video you can compare NC Bbq to Memphis Style or KC...
I love that idea Jason!👍
Great video carnal 🍻🍻🍻
Thank you brother!🤘
I live in NC, they mostly use propane around here.Personally I like smoke on my BBQ and subscribe to the theory that if its good enough, you dont need any sauce. The effort for me involved in making great BBQ is for me diminished by adding vinegar
I understand exactly what you mean. We don't normally eat Carolina style bbq so it's a nice change from the norm. Thanks for watching.👍
No BBQ restaurant in NC is using propane.
Whole family from NC. I live in Richmond Va. From VA to deep NC I have never seen or heard of anyone using propane. From the blacks , whits , to indians...... Never
Thank you, I am from LOS ANGELES!!!!!!!!!!!!!!!
Thank you for watching.👍
Wow that looks sooooooo appetizing and I don’t even eat pork. 😋 yummy yam yam
Thank you Zakhra. I appreciate you watching.👍
Great re-do. Im not totally surprised by the results. Texas does beef, The Carolinas do hog. I have only one suggestion on this cook. I couldn't help but think a nice cross hatch score in the fat cap would probably help crisp up the skin without any need to flip the meat and probably help get some more flavor to the meat. Im going to try the Carolina sauce next time I do a pork shoulder with the cross hatch. Great video sir.😃🐖🍻
Hello Victor and thanks for watching. I really like your recommendation on the cross hatch. 👍
@@SmokinJoesPitBBQ thank you. I have a 20 lb turkey im planning on smoking and it's been awhile since I have done a pork shoulder so I think I'll throw that in my 2nd WSM and do it with that Carolina sauce and do a 1" square cross hatch. A diamond pattern would look cool also but in the end it all gets shredded so it don't matter. I'll let you know how it turns out. 😋
I’m gonna have to try the Carolina style next time I smoke a pork butt.
I like my Carolina BBQ sliced, Bullocks bbq Durham North Carolina. Lexington bbq is Ronald Reagan favorite bbq and mine too. ❤❤❤❤❤
Now you doing it up right!!!
If I can make 1 suggestion, simmer that mixture in your mason jars. I'll leave you be if you do that!!
Thank you Jack! I'm doing that next time. 👍
Raised in Connecticut, North Carolina is known for the best Bbq.
Hey Brother Joe you didn't pass by me LOL 😆😆.... love these comparison cooks I know I didn't taste them but I'm leaning towards the Carolina one could be the Red pepper flakes and the Tangyness Apple Cider Vinegar . Great cook and content as always my brother keep it up. You and the family have a great weekend and stay safe. Cheers!
