      Hello, just a recommendation for the coleslaw - in Czech Republic we utilise sauer kraut into Zelnacka, which a soup/stew with spicy paprika klobasa / pork. Ingredients include :
      sauerkraut
      potatoes
      smoked pork loin
      spicy paprika klobasa
      sour cream
      bacon
      white onion
      red onion
      garlic
      extra fine flour
      salt
      sugar
      vinegar
      crushed caraway seed
      ground pepper
      dried marjoram
      ground sweet pepper
      hot pepper
      ground smoked pepper
      broth
      water.

    As a child my grandmother and i would can everything.
    We did things by seasons.
    I loved going into the store room to get a jar of tomatoes or peaches.
    I am now a grandma and those memories are still in my heart.

    I watched someone say her grandmother taught her to store all empty jars filled with water in case of emergency you will have drinking water on hand. It can then be emptied into canner when next season rolls around. Tedious, but never goes to waste and may just be a lifesaver! No empty jars for me anymore. Made such perfect sense....

      If you sterilize the jar and can them they will keep for years. If my canner is not completely full I add jars of water so I always run it full.

    You definitely need to secure those shelves. You can see them bowing in the middle with the weight of your jars. We have these same style shelves and used 2x4's laid along the underneath of the shelves and screws put through the side slats of the shelving unit into the ends of the boards. This makes the shelves extremely solid! If you lay them along the shelf with the 4 inch side, you won't see the boards sticking out underneath the sides. Get a darker screw and it will blend pretty well with the color of your shelves.

    Becky, please please please place some kind of barrier in front of your jars. Something like skinny baseboards or even bungee cords. If you have an earthquake (or even a stray animal) it would be heartbreaking (let alone a huge mess) if they come crashing down. I'm sure Josh can come up with something. 💕

    Becky...please add another to-do to wonderful Josh's list... you live so close to the Mt...and we have suffered many earthquakes here in the PNW...please have him attach your canning shelves to the wall and use something (bungee cords would work) to keep your jars on the shelves...it would be such a huge loss!     hi, I love your videos. One hint: I think the wine is supposed to be stored so that the wine is touching the cork to prevent the cork from drying out (dry corks can leak air into the wine which changes the taste) :-)

    Hi Becky,
    We freeze our leftover stock as a full carton isn’t always needed. We do it in ice cube trays, as this makes it easier to get the amount that we need for particular dishes out. Depending upon what you’re cooking, you can add frozen cubes straight into the dish or pan.

    To make a thick tomato sauce run your tomatoes through your squeezo machine. Place a colander over a bowl. Line colander with several layers of cheesecloth. Pour the tomatoes into the colander and leave over night. You will wind up with a very thick tomato puree which does not have to be cooked to death to thicken up. You will also have all the liquid to use as a soup base. You can also use the tomato liquid to thin the puree if necessary.

      I second this! I do it for my yoghurt so i end up with a nice thick cream cheese like yoghurt i can use for cheesecake and carrot cake type icing and the whey ends up being amazing for homemade soups and juices and even plain as a probiotic you drink when you take your morning vitamins! Its good for whipping luke foam too on top of tea or coffee etc if you dont take milk products in your drink but like the foam experience.

      I do THIS to make my tomato paste that I freeze. I just toss it in a sauce pan and bring to a boil for just like 5-6 minutes then I will can it in 1/2 pint jars. I do NOT eat ketchup nor does my family so we make a LOT of bbq sauceand this paste like base is perfect! This is a very valuable tip for people who do not know this trick. Thank you for sharing.

    BECKY!!! FREEZE DRYER TIP! Take your freeze dried tomatoes and blend them to a powder. You can then add a tiny bit of water to make tomato paste, or a little more water to make tomato sauce, or a lot more water to make tomato juice! Its great!!!!! I got really tired putting up tomato sauce AND I just got my freeze dryer so I did batches and batches of sliced tomatoes and then just powdered them! AND the best ever are the orange sun-gold cherry tomatoes. I roast those with a tiny bit of salt, pepper and oregano, then puree them. It tastes just like bisque!

    Add your coleslaw to crockpot with 5 chopped onion, whole chicken and a very generous amount of paprika for a Polish Paprikash. It will blend the flavors you don't like with the savory chicken and onion in a complementary way! Make sure to cover with chicken broth and remove bones once cooked. Serve over your homemade noodles.

    Hahaha. I bought a pressure canner and it stayed in the box for a year. Then I took it out of the box and it sat for 2 weeks. Then I read the instruction book and freaked out. I started watching you tube videos and realized how easy it is. I love it!

    Hi Becky, I just wanted to share with you what I just made. I made cinnamon rolls and put a dollop of my homemade cranberry sauce on each roll before I baked them. I then baked them and put on a rack to cool and then added the icing. Oh boy were those ever good! It was a great way to use leftover cranberry sauce (or if you have canned cranberry sauce in your pantry) you could also use a dollop of fig jam or any other kind of jam you have. Trust me, it will wake up your taste buds and is wonderful with morning coffee or as a snack. 😊

    It's now recommended that all tomatoes be pressure canned because the acidity level varies so much between varieties.
    Two other caveats: infused oils can be botulism factories and leaving the skins on canned potatoes can harbor disease organisms from the soil they were grown in.
    Better safe than sorry!

    ❤HUGE RECOMMENDATION FOR ALL PANTRIES IN THE PNW AND BEYOND!!❤
    I love having a store in my house too! You have a great system. My heartfelt recommendation is to earthquake proof your pantry. Even a small tremor will have jars dancing off the shelves! We just took wooden slats and drilled holes in each end. We then ran a zip tie through the hole and around the shelving uprights. I would do it on the sides too.
    I live in Washington too Becky and so I know that we are waiting for the "big one". The subduction zone fault line is within miles of me and not far from you either!

    Your pantry looks amazing! That’s a lot of work girl, you should be proud of yourself.
    One thing my mother taught me growing up, always always can as much as you can of a product.
    Because, like you said this year might be a great year for peppers and next year might not. So harvest as much as you can and preserve as much as you can in that year.
    Then, if you have two years in a row or your pepper harvest has been amazing you can try the new recipes that you’re always searching for and saving.
    A couple suggestions, I don’t have the recipe handy, so I can’t tell you exact measurements. However, you’re an experience canner, at this point you’ll figure it out.
    I used to make a peach salsa that is to die for. It was a peach and tomato-based salsa. I don’t recall if I substituted or I added in the Adobe peppers and sauce in the can. I think I added it in because Im pretty certain I adjusted the vinegar to accommodate it. It is amazing, the flavor, that is added is incredible.
    I would imagine, adding those peppers to your ketchup recipe this year will add great flavor as well.
    The only other thing I can suggest to you, is to get a nice, very nice bound notebook. Not a spiral notebook. Something that has a nice cover, thick and is bound.
    Actually buy several because you need to take these with you to your moms and have her write down her recipes in that book.
    And she needs to hand write this. She may need to hand write several, depending on how big your family is.
    Trust me when I say, that this will be treasured in your family. I have two of my grandmothers cookbooks, where she has hand written notes in the margins. There are several handwritten recipes, stuck in the cookbooks. I treasure it! It’s been 30+ years since my grandmother passed away, and I can’t hear her voice in my head anymore. But I have her handwriting and I have her recipes.
    My mom is in her late 70s, and this is not a bad thing when I say it but the grand daughters are already claiming her cookbooks. And the one that is going to cause the biggest uproar will be her hand written cookbook.
    grab yourself some of those books as well, and as you get a recipe that you truly love, that would be a staple right in that book. One day, that will be a treasure as well. Write your notes in the margins make a Little Notes about your kids and the food that you’re making. If it’s their favorite, if they hated it, or possibly what was going on in the garden at that time. Maybe it was a bad year maybe the bugs were crazy bad or maybe it was a cooler summer than normal or hotter summer than normal. Put those notes in there you won’t regret it.

    I think I’d store some of those boxed foods/ pasta and things like that in big plastic totes so bugs or rodents can’t get into it. I’ve ended up doing that in my small kitchen pantry to avoid ants and other pests. It also helped when my kitchen floor got flooded. I didn’t loose any boxed items that were sitting on the pantry floor.

    Becky, I also was not a fan of coleslaw or pickled cabbage in a jar, I rinse mine and have been making eggroll bowls with the rinsed cabbage/carrots, ground meat, onions, ginger and garlic with soy sauce and sesame oil. Really good.

    I'm sure you've already tried it, but to use up the spaghetti sauce that is a little strongly spiced, just make a batch with one jar sauce and one jar plain crushed tomato. The extra herbs will help balance the unseasoned sauce and then you can adjust it only by a bit of salt and anything that may be missing once they're mixed. Normally that might not work for two people, but since you like to make large batches and have leftovers, it should work!

      I got mine a couple years ago and you’ll love it! My husband loves seeing food being preserved too. We just did up sweet potatoes that were on sale .19 lb. I love love love mine. Easiest thing to can is stew meat, just load the jar with raw meat and process.

    Becky, I had a thought. If you found your spaghetti sauce to be too heavy with the herbs you can combine one jar of that spaghetti sauce with a jar of your Tomatoes or ready-made sauce with onions and garlic and kind of "dilute" it. Maybe when you're making a big batch cooking day and need a lot of sauce.

    A tip for your broth. For those who choose to freeze it typical broth can take up a lot of space. If you concentrate your broth it takes up far less space. My broth is concentrated 6 to 10 times. Because it's frozen I can take a tablespoon or two and add to a quick stir fry and not have to open an entire jar.

      I'm assuming you just cook the broth longer to evaporate more of the liquid...does it still freeze solid? Or is it more paste like similar to better than bouillon? Thanks for the tip, I will likely try that!

    I bought the presto electric canner after hearing how much you love it, now I love it too. No more baby sitting the pot. I haven't canned for years but after watching your videos I jumped back in

    Just an FYI: You will need to peel your potatoes before canning. There are no safe tested recipes for canning potatoes with the skins on. Removing the skins by peeling potatoes reduces the amount of bacteria on the potato.

    Totally agree! Last year our pear trees did amazingly. I canned over 400 pounds. This year, all the blossoms got frozen, and we won’t get a single one. Can them when you can!

I’ve only recently started pressure canning and I’m glad to say it’s growing in popularity here in the UK. We still rely on the knowledge of all you canning friends over the pond, so a big thank you.       In my 60s and just learned to pressure can, even though I always had a moderate interest. Dehydrating and fermenting, too. It is fulfilling, isn't it? I have heard that canning supplies are difficult to source and are expensive in the UK, is that so? Best wishes and God bless from North Carolina, USA. 🙂

      @@micheleyates3625 hi Michelle, yes it’s true canning supplies are expensive here. I’m hoping that as popularity grows it will become easier to source what we need. Over here lots of us use lug lidded jars successfully to can, much cheaper and easier to get. You’re right, it’s so satisfying to learn something new in later life. I’ve discovered the joy of making kombucha recently, adding a few frozen cranberries for the second ferment, delicious. Have a lovely Christmas and happy canning. X

    We like the commercial kitchen metal shelving from Sams or Costco. They are a bit pricey and you still have to add shelf covers, but you can also get ones that have wheels for easy re-arranging 🙂 I suggest you buy an extra rack for the shelving for every 2-3 full racks. That way you can put the shelves closer together 🙂and use less floor space. I speak from experience.

    I just watched Jammerell Stewart can frozen tomatoes. She took the frozen tomatoes out of the freezer, put them in a roaster pan for them to thaw out.
    The tomato juice comes out of the frozen tomatoes, then you are able to can-(I mean bottle in mason jars) the tomato juice.
    No effort needed to get the tomato juice out of the tomatoes. Jammerell Stewart is who did the tomato canning that I watched recently.

    You will be surprised how fast Baby eats all that delicious applesauce and pear sauce! To appease those that are worried about stacking jars, you can put a piece of cardboard between your layers and it solves that issue:)

    Becky I made the same mistake with canned coleslaw... Make Mo Sho Chicken. Drain your jar and rinse your cabbage strain, put into saute pan (oil or butter) add onion, mushrooms ( I use my canned goods) chicken, garlic, ginger and sesame oil or oyster sauce... Sure helps empty those jars! Keep stacking that pantry!!! Right there with you! Love from WA!!!

    Here's another idea or two for your homemade grocery store chow chow. It's cabbage, peppers, onions, seasonings (can't remember all of the seasonings right now). The other idea was a product we buy in NC called Veg-All®. There is a style that's vegetable soup size and one that's stew size.

      what you need to do is treat each day as if its your last day on the planet.i dont get depressed but i have friends that do so plan each day in advance keep on the go all day you will feel satisfied you have,achieved so much you will always sleep well life will then feel so different for you it becomes exciting.xx

      If you have SAD (Seasonal Affective Disorder) look into getting a light box or full spectrum light bulbs. It can help immensely.

      Staying busy helps me in the winter. I also struggle with depression. Running helps me a lot. But if you're already depressed could you start something? For a few minutes, set a timer. It can be really hard but little steps. Writing things down so you can cross them off might help.

      Ironically, i found when depressed- if i make myself do something like making batches of sauce, cleaning a room each day or weeding in the garden (something that i can see the progress of at the end) boosts my mood as i can see what ive done, feel accomplished and it motivates me to do more. I dont always enjoy it in the moment and its hard to keep going but i always appreciate it afterwards.

    When I over herb my marinara I just add more crushed or diced tomatoes to thin that out and add in some more onion/garlic powder. Might help your marinara to do that but it will obviously be lots more sauce. Love that I have gotten to see you can so much! It is amazing to see just how much it actually is on the shelf!

    Once people discover the sheer convenience and affordability of a well built pantry they will love it. It was thought to be a way of life gone by but so functional for our modern lives for both young and older. There are many canning projects that can be done over the winter especially canning deals. I live fairly rural and our food store is a distance away and expensive. Being able to run downstairs and grab everything I need is such a blessing. No fighting the crowds in the stores or running out in bad weather. It makes me sad to see so many tomatoes and apples hanging on the plants at the end of a season not being preserved. You are so right about home made enchilada sauce! No comparison to the store bought. I got sooo many tomatillos this year and processed all of them.

    The baby will love the applesauce too. My daughter does blueberry applesauce and other varieties. She also cans lots of pears and peaches and figs. She has 7 kids from11 down to 6 months. They rave about their mamas canned goods. It’s so sweet

    Hey Becky…love your platform and have been watching for two years. First time commenting. That coleslaw pickle. Use it in a cabbage hamburger soup…we call it “autumn soup.” Or strain it and use it in a sour version of lazyman cabbage rolls. Yum!

    Becky- I look at your beautiful home canned pantry and worry….What about earthquakes? We lived in SEA during the big ones there 🎉so know it can happen. Josh has probably anchored the racks down, but personally I’d want at least chicken wire doors on each section. Living in AK now we just take “shaker security” as a part of everyday planning.

    Good video for explains how you store and deciding how to put up your foods ie a bumper crop as opposed to having to buy from a local farmer. I think you've given those the permission to release feeling as if they have to grow everything and feel like a failure if the crop doesn't do well. ON A SIDE NOTE: I half way expected Becky's Mom to be on saying "Sorry about me being the host, but it's because Becky had the baby! " LOL! 🤣😂

    I love that more people are canning/preserving foods. It is a lost art. I can each year all I can because some years are better than others with produce and I don't want to run out. I always share extra with family and friends. It is an amazing feeling to be able to share.

    Do consider carefully aligning a strip of green painters tape, blue painters tape, or white waterproof medical rape a.omg the outer edge of your shelves. Then use a pen to label your jars' shelf space. It will be very useful when someone runs down stairs to grab something for you; and likely yourself when pulled too many directions at once. Optionallym use a pen that can be removed such as grease pencil or white board marker.
