How to Can Cherry Jam

    INGREDIENTS
    - 4 1/2 lb pitted cherries
    - 3 cups sugar
    - 1 tbsp lemon juice
    - 2 tbsp Kirsch
    INSTRUCTIONS
    - Have all the canning equipment, sterilized jars, lids, and rings ready before beginning the canning process.
    - In a large heavy-bottomed jam pan or Dutch oven, combine the cherries, sugar, lemon juice, and Kirsch. Bring to a boil, about 5 minutes. Continue to boil until the mixture reaches a rolling boil, meaning a boil that cannot be stirred down.
    - Remove from the heat and strain the juice from the cherries. Set the cherries aside and return the juice to a boil. Continue to boil until the juice reaches 221°F, 8-12 minutes. It can take longer one would think. Add the cherries back to the juice. If a finer texture is desired, use an immersion blender to achieve the target consistency.
    - Return the jam to a boil just to heat the cherries.
    - Remove from the heat and divide into prepared jars. Wipe the rims with a clean cloth and top with lids and rings.
    - Process in a boiling water bath for 10 minutes. Adjust for altitude using the USDA canning guide.
    Remove from the water bath onto a cooling rack. Allow to cool for at least 8 hours before removing the rings to store.

    I would love to see a canning video exploring different ways. I only say this because I remember as a kid my grandmother canned some things with a wax seal. I just love your videos and figured your mom might remember this way of canning.

    My Dad, was a fruit buyer. . And the cherries arrive fast and furious. My Mom, canned, .. the sour and sweet cherries exactly like you have ,Wyse. My Mom, was pie baker..so she had vested interest in storing, freezing an canning for her restaurant. Great video, and the cherries are very odd product, ..I agree.. to make preserves, or jam.. it does take practice.. I flip them for a minute after the hot bath. Great Instructions , Wyse :)

    I canned some strawberry jam in the middle 80s. Just finished the last jar during the pandemic. Yeah the color wasn't great and it was perhaps beyond peak flavor, but was still fine. I joked with my son that it was 10 years older than him! 😂

    Kaleb, made your cherry jam recipe today and it was fabulous! Did not have Kirsch so added almond extract flavoring. This recipe is a keeper to add to my jam canning recipes. I need that jam pan. Can you let me know the brand?
