I'm no gate guy but rather a locksmith that has fixed a whole lot of poorly installed hardware, self tapping screws are the bain of a good installation/repair, much better to drill and tap for a proper machine screw. If you install a lot of these, consider making some jigs with some hardened steel drill guide bushings.

Just curious if and when you guys install 6, 7 or 8 ft tall fences for example all the farm gates out there on the market that are affordable are only 4 feet tall really so what do you do to install taller ones or to make the shorter ones taller without paying a fortune for the rot iron ones?

Goats are bad....I had one eat every connection off my trailer right after a total rewire....I was pretty hot. I charge extra to fence if the goats free range That's my favorite latch too.

Typically on a custom job like that we would make our own gate to accommodate the height of fence.

No! Gravity did.
Personally I can't stand those latches. There are way better weld on slam latches that don't require your hand to be in the pinch point of the gate.
