    I ran out of quinoa and was too lazy to go to the store, so I used brown rice instead. I added some grounded flaxseed and it worked - Came out thicker too with the flaxseed. I just thought I would share in case someone found themselves in a similar situation.

      catlover09 its very dense, so not really...I haven't had wheat bread in forever, bc I can't have gluten, so I may be wrong...I also like to make two smaller ones (instead of one large size) and use it as sandwich bread. 😊

    I tried this recipe for the first time today and I'm so happy you posted this video! I was skeptical at first because I've never tried quinoa and to be honest it smelled weird when I was blending it but it turned out great.     This was so easy and delicious! I made it savory with nutritional yeast and an herb blend. I will definitely try it for an easy pizza crust. Also would be good with cinnamon and a little sweetener for a healthy dessert.

    I know this is a few years old now but thought I would leave a comment anyway. I make this same bread for pizza crusts and after the first bake, I flip it, spread no oil hummus on it, a bit of marinara, kalamata olives, red onion, fire roasted red peppers, grilled artichoke hearts sliced up and peperocino and if I have it made up, some tahini lemon garlic dressing over the top and bake for another ten min.

      That sounds gorgeous! I was wondering whether the pizza toppings should be added before or after baking the flip side. I thought the crust might burn or be too hard if the toppings were added after the second bake. Thank you!

    Initially my batter was runny. I skimmed the ‘liquid ‘ then pulsed the quinoa, breaking it down, then slowly added the liquid getting a smooth consistency. The second batch, (I make 1/2 c batches) I ground the quinoa first; 1/4 c quinoa, 1/4 c ground flax seed & 1/2 c water - perfect consistency! A different flavor, really good!

    This looks amazing! Can't wait to try this for a Thai pizza -- mix 2 tablespoons red curry paste with three tablespoons organic tomato paste -- the one from Vitacost comes in a glass jar, not a BPA can. Take the baked quinoa bread or any other naan, spread the tomatoey mix on it, add sautéed veggies, and bake for a few minutes. It is SO good! Could also add Daiya shreds before baking.

    This recipe is Awesome!!! Became Vegan 2 months ago & trying different recipes...wanted to incorporate more protein since I also had gastric bypass 7 yrs. ago & getting enough protien is essential, also not a big bread & rice eater so this is just perfect!!!     I made this today with garlic, onion, and oregano. It's super tasty! The hummus I made to go with it wasn't :( Next time I'll use it as a pizza crust.

    Made this and really enjoyed it! Nice texture and taste. Make sure you rinse quinoa first as this makes less bitter. I added a little salt, sugar (naughty i know) and black pepper. Put garlic, mushrooms on near the end. Delicious! Thanks for the video.

    1 cup of Quinoa and 1 cup of water. Bake at 425 for 15 min then flip and bake 8 minutes more. I will try this.
    Update: made this today. Texture was very similar to the video. Trouble was I roasted my quinoa grains to make quinoa flour and so my bread came out tasting very roasted and smokey ish- not a favorite flavor in bread for me so in order to save my quinoa I repurposed it by blending some of the quinoa bread in my Dry Blade Vitamix and then I added a cup and a half of gluten flour and seasoned that up like a meat dish using savory seasonings and a little oil and a little psyllium husk powder. I tasted a little of that dough mixture and now it tastes pretty good. I have it marinating in my fridge right now and plan to fry it up tomorrow so if you don't like your bread you can still repurpose it into a veggie meat.
    You must like the flavor of quinoa and please know that it does have a very distinctive flavor.
    Newest update: the veggie meat turned out very good. I lightly pan fried it and me and my husband enjoyed it.

    In Australia we call
    Parchment paper , baking paper. Also for those in Aus 425 F is about 220 Celsius

      Mrs. Dash is an herb mix that people use usually to replace table salt with. I do think it's sodium free.

    So far, the best ever recipe for free gluten bread. I already baked several times with this recipe. It's purely awesome! Before this one, I tried several other recipes but this is the only one than I really enjoy working with and even to eat it.
    Also, based on my crazy researches I found out than adding some Xanthan, the dough receive some consistency very close with the regular dough which is made from regular white flour. Xanthan it sounds weird but actually it's a good (healthy) staff for human body.
    Again, great, great job regarding this absolutely fabulous post!!!

    I would go full Indian spices on this. cumin, mustard seed, turmeric, garlic, ginger, chili powder, pepper & salt.
    Also add some ground flax into the batter & blend to bring some oily flavor & taste.

    Nice! I notice that there are a few comments regarding rinsing quinoa to remove the saponins. I would say try getting used to the bitterness because saponins are healthy compounds. They are known to reduce cholesterol along with fighting certain types of cancer.

    When using this as a pizza base do you “half bake” the flatbread and then add pizza ingredients? Or do you add the pizza ingredients to the wet flatbread batter before putting into the oven to bake? Thank you.

    Just want to point out that the body adapts to high phytate consumption. So if you regularly consume foods high in phytate it will have little to no effect on absorption. Some studies have even shown that increased phytate consumption can increase zinc uptake. Phytates also function as a powerful anticancer compound.

    You don't find that you need to rinse off the quinoa to remove the saponins? (I find the quinoa tastes bitter when I don't rinse it)

    Do you soak the quinoa first to dissolve the bitter coating? I was told to do this the first time I bought quinoa. It's also recommended on packages of quinoa. Just wondering.
