Egg yolks raised on pasture have orange egg yolks, you rarely see that in grocery store eggs! When we were in Scotland the food was so much healhier. Beautiful orange yolks, all pasture raise meats! Food was cheaper too. American food is factory farmed crap.
10 years ago beef was tasty, now it is as plain as water, what is going on?
i pay a lot to by pasteure raised organic eggs...worth every penny. Agribusiness to blame for bad food here!! Sad.
I ate a lot of eggs (daily) while I was at Medical School in England (1969-1975). I’m 75 and doing well.
👋 Thank you & stay healthy till 120😊.
When I was in primary school in the early 60's, my parents esp my Dad is very strict we should have a proper breakfast before we leave for school (there were no roti canai nor nasi lemak those days). My bunch of sisters hate eggs, they wait for Dad to leave & skip their eyes. Good for me, I will have their shares as well. From those early days till now, I have my 2 half boiled eggs without fail ..... am gonna be 75 soon. To me eggs are the best source for healthy proteins !
Roti canai sangat popular kat Malaysia.. not knowing how bad it is to health.
When I was a nurse in the 70's /90's I noticed the patients that ate farm fresh eggs had the BEST cholesterol levels of anyone. I raise chickens free range and share my eggs with neighbors and food bank
We raise free range hens for eggs. They are the happiest creatures. The yolks are indeed bright orange and absolutely delicious!
egg yolk color depends on what food hen eats, not depends on if pasture raised or not.
😊 we call eggs "bum nuts" in Australia. Grandma lived to 97 eating chunks of butter everyday, salt too and cream. It is the ultraprocessed food that is the killer.
My mother ate 3 eggs every day. Cream and butter in large quantities. Died of healthy old age at 90.
Exactly, grass fed milk, butter, cream and meats are very good for you, and contain Vit K2, which is essential to keep calcium out of your veins, and get it into your bones where its meant to be. calcium build up is one of the main causes of blocked arteries. and I'm Aussie as well, and my Mum used to call eggs 'cackleberries', lol
I misread; I thought your Grandma was eating 97 chunks of butter every day. It sounded delicious!
@@maiaallman4635 nah that was my mum! Unfortunately, she passed at 77. But Grandma had cast iron bones. Butter and cream are full of vitamin K! Both had delicious lives so you are right.💜
Butter (or even better, ghee) is healthy too. 8-/
PS: Even better is organic, grass-fed ghee, which is what I cook with when eating animal products, partly because it's high temperature tolerant. I do add organic extra virgin olive oil to other foods.
Balance is the key
There are some really beneficial things in Good Butter.
My grandmother raised chickens and sold eggs in the 1940s & 50s. She didn't feed them because they naturally ate bugs and produce scraps. She never refrigerated the eggs. The hens keep them warm when they nest so they don't need to be cold. She only washed the shells prior to cooking them. Washing them is what makes it necessary to refrigerate them. Great video! ❤
lie, I eat 3 dozens of eggs a week. how many chicken not fed can produce that many eggs or your family did not eat eggs?
@@waynewang8904 I said that they did not feed them, not that the chickens didn’t eat. They were roaming free on a farm and only came into the coop at night (unless they were nesting). They had fruit and vegetable scraps, seeds, leafy green plants, grasses, worms, and bugs to eat. They ate what birds naturally eat, but were not deliberately fed commercial “feed “. I know many people in my area that do not feed their chickens and they are much healthier than those in factory farms. You might want to try pasture raised eggs since that’s often the closest to natural that you can buy in a grocery store. 😊
@@waynewang8904 Wow, what’s wrong with you to be so quick to call someone a liar?
How about asking for clarifications or more information? I thought she provided useful and on- target information. My grandparents had a family farm on the Iowa and Minnesota border. I visited there a couple times when I was little. I remember the chicken coop and hens and rooster walking about and watching them feed the chickens, pigs, and walking their dairy cows out to the pasture every morning and back again at night. If it was a super cold day I was told the littlest baby pigs got to come inside to stay warm in the room off the kitchen. They cared about all the animals in their farm. A different day for the most part, now. That’s why I hate to contribute to the cruelty and why I am vegetarian.
in this case you must have a big farm. make sure the chickens are not snatched by raptors or other predators if they wander too far from home. 😃😃
@@audreyfischer8662 thank you 💙 I’m vegetarian for the same reasons.
I am amazed! I never saw Red-yellow egg yolk. I never knew all the health aspects. I stopped eating eggs regularly because of my misunderstanding of cholesterol risk, and I didn’t know that healthy eggs do not need to be refrigerated. I have no problem with paying more money for healthy eggs. Now I know what to look for. Thank you once again, Dr. Li!
The difference is not if they are healthy or not for refrigeration. You can leave any egg out of the refrigerator for some time and they will keep for a bit. If they are from a Farm and unwashed they will keep far longer. I test mine before eating. If they float in water they're no good.
We Euros do not remove the cuticle from the egg and we vaccinate our chickens against salmonella. In Germany you have to go out of your way to even find non pasture raised eggs. Caged "battery" chicken are illegal. There are some that are just "free range" without specifying pasture but those all go to the fast food industry and large scale industrial processors.
So happy to hear Germany makes caged chicken illegal I wish the UK government would do that too. 🐣Thanks fir sharing
i do not think this is true. as a german we complain about bad conditions. and caged and non caged usually are the same despite a few cm more space and somewhere a hatch. if you have a hall with 10.000 chickens and one tiny hatch to the outside they are called free range... despite never have seen the sun light.
german industry is pretty strong in fooling and shitting customers in the face. do not believe those stories.
@@amandayoung4398 ditto USA
Our food industry in the US is criminally corrupted. There are so many things banned in Europe and other countries they dump into our food supply.
The color of the yolk does depend on what they eat, but pasture raised may not be that dark orange color. It depends on the pasture. And...whether pasture raised or in a factory, you can put things in the feed to get a dark color - which may or may not indicate carotenoids.. Get to know your chickens :)
Wow. All you need to know about eggs in one video! Thanks Dr Li!
But this video missed the down side of egg: cancer risk, many other issues. There is no perfect food. All choose their own cherry-picking for their ideas.
Okinawan centenarians only eat about 1 egg every three months. Evidence based medicine is better than pure theoretical analysis (easily wrong conclusion with pure subjective reasoning).
I needed to know this as I love eggs but have cholesterol problems. I look to you for trustworthy information!
If your taking Statins research them heavily. You NEED cholesterol for your brain.
Thank you Doc, great video! I grew opposite as you, didn't have eggs in the fridge till later in my teens, I'm 57 now, and everything you say is true. My grandma kept the eggs in her special basket and I befriended all the chickens and roosters and the geese and turkeys and so on. I was amazed by the younger generations, for some time now, they don't like anymore the eggs, meat and diaries as well, that are naturally produced - they say the taste is different and they don't like it. I hope your videos will change their mind and I'm grateful if this might educate them, at least on how to eat. I thank you as well for your videos and for sharing your knowledge with the world, for the work behind them! ❤
Thank you for defending the humble, wonderful egg.
I have two eggs every morning with sourdough toast and 15 g of baby spinach.
This breakfast starts the fat burning process in my diet plan.
I lost 8 kg since last Christmas.
Thank you, Doctor !

Thanks for all the tips
Again a great video filled with super info. Thank you❤
Nice video! I love and pay the extra for pasture raised 0:03 eggs. They are certainly worth it! My favorite brand is ‘Vital Farms’ raised on family run farms. I cook my pasture raised eggs in pasture raised dairy butter. The flavor and nutrition cannot be beat. I do not cook with olive oil, I put it on my salads. 😋
Thanks for the info 😊
Thanks Dr Li for this very informative free information . I really appreciate all your posts 🙌🙏
Hm, I have read that saturated fat is better than poly-unsaturated fat because it does not break down as easily into harmful free radicals. Btw, I generally use lard to cook my eggs, has a higher burn point than butter, so fewer advanced glycation end products. I also would like clarification on the difference between butter from organic free-range non-CAFO cattle vs. cattle raised with chemicals and glyphosate-impregnated soy and grain.
Please keep telling us good foods ur the BEST ❤
Thank you for sharing you knowledge and paying it forward. 😊
Egg yolks are very healthy unless its some store bought kinds, then the levels drop some, eggs do not cause cancers...overfrying can be harmful, but beyond that eggs are VERY beneficial, especially homegrown ones with a good diet!

Thank you, Dr. William Li, that was an interesting video on eggs.
Eggs-cellent information! Thanks!
Hey Dr., great info. Regarding egg yolk color it seems some farmers now use additives to "dye" their yolks to meet the demand of people wanting orange yolk eggs. Looking online I have found that paprika, marigold petals, chili flakes, and alfalfa feed as some of the popular additives. Also, I have read that many of the bigger feed mills automatically have started putting these additives to change the yolk color. Just fyi.
Awesome info video enjoy my healthy eggs thanks for sharing
This is so true...I have been eating eggs 2 to 3 a day and my Lipid profiles are perfectly fine! As long as you do not mix it with high saturated fat foods, you will have great benefits from eating eggs everyday.

The question I have about eggs is how many can one eat in a week. I have high bad cholesterol and was told by my Dr that I could eat only 1 omega 3 egg a week. I usually buy large eggs because I like to bake with these, although they do sell small and medium. Does the size of the egg matter as to how many one should be eating per week?
I find the information you provide very interesting and I am looking forward to reading your book! Thank you so much!

There is nothing wrong with butter. These doctors always talk about gut health but omit the butyrate in butter that is excellent for gut health. While I like olive oil, it does not compare in comparison with butter when it comes to flavoring an egg.
And is a medium chain trans fatty accid. 👍🏻
Not much butyrate in butter - Plus 100% grass fed dairy of any kind is far superior.
most high saturated fat sources are associated with high LDL. Something thats been proven by thousands of studies.
eggs don't have that much so its typically fine for me

We still have horrible studies that don’t regard other risk co-factors or interpret with sufficient clinical knowledge.
We just had this total confusion in the xylitol world - and also in some mouthwash studies that have scared everyone in 2024.
Why don’t scientists doing studies talk with clinicians to see if their hypothesis is missing something?
I heard one published study said that the increase in TMAO because of egg consumptions due to the conversion of Choline in the gut by some bad bacteria. But there is another study seemed to contradict with that assertion by stating that increasing eggs consumptions did not result in a correlated increase in TMAO.
I was surprised to see eggs on the shelf in 7-11's in Thailand and Cambodia unrefrigerated... Had to look up and learned what the Dr. in this video explained.....thanks for the video
I ate 40K eggs ( approximately) beginning from 2009 and my HDL is around 80, triglycerides 50.. i eat 5 to 10 eggs a day with plenty of butter..
Dr. Li,
Does it matter how you cook the egg? Does it have to cooked till solid?
Can you eat pouched eggs and not be worried as long as you follow your three rules?
Also note that caffeine potentiates the choline in eggs, making it more nutrient available. People have been drinking coffee and tea with eggs long before we knew what choline was. How cool is that? Healthy cravings are your body requesting what it needs.
Branched - chain amino acids & chronic dietary exposures to choline and TMAO were associated with development and progression of chronic kidney disease. consuming dietary choline from animal products can actually lead to health problems. The New England Journal of Medicine published a study looking at egg consumption and found that TMAO, a byproduct of dietary choline, can lead to greater risk for heart attack, stroke, and death.
It’s been five years now, I have two raw eggs which I have been told is not good, but never had an issue. Feel great and it save me time in making breakfast.. yes, feeling great.. I am 65 now.. my eyes are ok.. should I eat more???
Is frying eggs in coconut oil healthier than using olive oil? Thanks!!!
Very interesting. Thank you. I'm sure eggs are great for people who have no health issues. What about if one has gallstones or some other issue?
Egg yolk contain a rich source of lecithin which has been shown in some small studies to reduce cholesterol
You don't have to keep any eggs in the fridge, I have been doing it for years and zero problems. But I also eat 15 plus per week, so they dont last very long. If you need really good eggs from a gorcery in the USSA, Sprouts has good ones.
How are we squaring away the elevated PFAS/PFOS content in eggs, though? (and in rice, coffee, etc)
Grass fed butter so healthy
really want to watch this video at some point but pressed on time with appointment! Just incase I have time to run to grocery store, are regular grocery store eggs fine?
EVOO should never be heated, so no cooking, but excellent at room temperature. Also note that even organic eggs don't come from the nest as clean as you find them in the market. They always have little bits of feather, or whatever was in the nest, on them. So the seller wipes them. Even so, they will keep well outside the fridge, as long as it is in a cool spot. As a child in the Fifties I used to fetch the eggs from the nests in our yard, so I know. In South Africa eggs in supermarkets are kept outside the fridge, but of course there is air-condintioning to keep the store cool.
When I had chickens they would hide their eggs in nests. By the time we found them they may have been in the garden a week or more. The eggs were still fresh and good and never harmed us.
Dr Li, some say extra virgin olive oil should not be heated. Would you please inform us about this? Is there a maximum temperature that we can heat it?
Heating olive oil will cause oxidation. Personally, I only use olive oil cold, and add it after cooking.
As an alternative, use tallow or lard, which are much more stable, for cooking. Even so, avoid burning, as even saturated fat will eventually be damaged by heat.
Use organic coconut oil for cooking.
Egg's are great. They are a food that has not had mineral level collapse as in almost the entire edible plant's catalogue. Black salt if taken before every drink well do more for your health than every other product.
I learned that in order to keep all the nutrients from the eggs that we cook, we need to keep the yolk intact. So, boil the eggs is the best way to keep the nutrients. Scramble eggs diminishes the nutrients because we break the yolk.
That's not true - scrambling eggs causes a decrease in B vitamins and selenium, but keeps more healthy fats, vitamin D, and vitamin K than if they're boiled. A fried egg may be best
What about sunny-side up 🍳?
I heard you shouldn’t eat uncooked eggs.
@@audreyfischer8662 some people even eat raw eggs in smoothies after working out. I only eat cooked eggs. Sunnyside egg is ok, can you make the eggs cooked all the way? I do not know what to answer you.
Steamed eggs 9 minutes for soft 10 minutes or 11 for hard use your veggies steamer not as harsh as boiling
Sorry if someone already mentioend...I'm surprised you said omelet using olive oil. Wouldn't omelet pass 140° heat threshold would turn olive oils omega-3 to 6 which is bad for us? We use avocado oil.
