As a Cincinnatian all my life, I never thought I'd see Skyline chili on this channel hahaha
Yes what is your Favorite thing to get at skyline?
@Seth Barry I have 2 go to orders. 4 conveys with mustard and onion and a small Greek salad. And if I'm not sober, 2 coneys with everything on them and two chillitos add hot dogs. Maybe a 5fth item if I'm brave. And of course everything top mlwith multiple packets of hot sauce. And if you ever make coneys at home I highly recommend adding pickled jalapeños.

What's the difference between skyline chili and other chilis?
@@ChargeQM many things, it has 100% dark cocoa in it which I believe a lot Chili's don't. It is made thinner because it's not eaten alone like a traditional chili but instead put on things, like the not uncommon chili cheese dog, called a coney, on top of pasta is the typical, and a tortilla which is a chilito, or on top of french fries. As someone born in Cincinnati but no longer living there it's definitely something I get every time I go visit.

Yay for Cincinnati chili! It’s delicious! We are all praying for Damar and you could feel the whole city take a breath when we heard the news that he had woken up and asked who won the game.
I think the country as a whole took a breath when he woke up. I feel bad for the Bangles player (I'm forgetting who) who hit Damer. Cause it was a clean hit in my eye but it seems like that hit was or may have been the catalyst that set this whole thing off.
@@TheDarkLink7 Its a play that nobody would pay attention to normally a tackle where the receiver tries to fight through (it was Tee Higgins btw). I think its fair to say that everybody wishes this play ended routinely, but from what I have heard the contact with his chest likely was exactly timed with Hamlin's heartbeat causing the imbalance that almost killed him. I have nothing but well wishes obviously for Damar and I hope for him his family his teammates and everybody who had to witness that event that he recovers completely and can live a normal life at the very least and maybe get to play or be involved with football again in some capacity in the future if that is his wish.

As someone who used to live in Cincinnati and used to eat Skyline a lot, I saw this in my youtube feed and went "surely not that skyline"... and lo and behold. This was a delight to watch, lol.

I always find it heartwarming how often Babish steps in to help with things like this. I know it's his channel, but he usually does it in a charming, comedic fashion as well and it's just wholesome that he's always there to help out his peeps even if it's not *his* show. Doubly so when they have about as much cooking talent as I have and try some pretty ambitious projects like this. Starting off the year strong already!

Human passion is nice + Babish worked hard to get here, watch his old videos, he’s filming in this tiny kitchen where he lived with like 4 roommates, he worked hard for that rolex lol

Here's an idea, instead of putting the chili over the pasta cakes, I would have seasoned the beef with the skyline chili spices, cooked it into patties, and put them between two pasta patties.
Well, here in Cincinnati, we put our chili ON things instead of eating it on its own. Particularly spaghetti or hot dogs

Crunchy pasta is something you would expect from that one aunt who comes over and makes when babysitting. You know, the aunt who isn't really related but looks pretty that you never knew you had until your parents got divorced. The onr that uses a smoke detector for an egg timer, who makes meatloaf that glows on the dark, who astounded the scientific community when it was discovered that all the flies in the neighborhood chipped in and bought her a screen door...

I'm originally from the Eastern Shore of Maryland, so crab cakes and Old Bay are right up my alley. I also love Cincinnati chili because Greek meat sauces are the bomb (think cinnamon, chocolate, allspice, cloves as main flavorings). I'm happy to see the Skyline represented here, but the very notion of having cinnamon and chocolate in an Old Bay-based crab cake made my tongue recoil. Some tastes just are not meant to go together!

Thank you for mentioning Damar. As a lifelong member of the Buffalo community, the Bills are a big part of my life and seeing what happened to Damar was terrifying. The outpouring of support from every single city was the reminder that I feel we needed that we are all human beings and we, at our core, do carry love for one another.

im not into football for several reasons, but i was so glad to see the caring responses for the injured player. the way that his team immediately shielded damar to give the man some dignity as he was carried off was really moving. im all the way on the west coast but i really hope he recovers well. football is a dangerous sport, so i really do wish the players well
Funny how much people care when the injury is instant and visceral. Meanwhile every single player is slowly killing themselves every play and everyone pretends it isn't happening. Kinda like how no one cares about car accidents or suicide until it happens in their social circle and suddenly everyone wants to "raise awareness".
@@NEPAAlchey Football is a dangerous sport. They know what they're signing up for. That's why they get paid millions as well. The reason Damar's situation is so different is because it was such a freak accident and it's never been seen in the sport before. Like Bills QB Josh Allen said, it was a typical football play. It just so happened to be the worst possible timing for the hit, which no one can ever estimate the "best" timing, either.

I know everyone associates us mostly with our beloved crab, but for this particular combo, you probably should have gone with pit beef for your Maryland fusion 😂
As a Cincinnatian that still hasn't acquired the taste for Skyline (or any other Cincinnati style chili) I think I would have tried to meld goetta and crab cakes together. How you may ask? I don't know, that'd be for someone else to figure out.
Eeep, I haven't made goetta in ages, now I gotta do it. (Cincy native by birth, expat in a place where they don't have any idea what goetta is - Houston.)
Goetta is a code word that instantly reveals you’re from Cincy or NKy. I’ve never seen it anywhere else.
@@dougfromsoanierana I believe there are a few different words for it that are used, depending on how you say it determines where you are from. In some states in the south Goetta is sometimes called Scrapple (might be Scrapie).

As a Marylander who went to college in Ohio, it took a while to acquire the taste for skyline chili
I enjoy that not only did Babish come out swinging by saying Skyline chili is bad, but they both basically ignored the half of Cincinnati that are Gold Star fans.

Having serious generalized hyperhidrosis is the worst, I can't run or exercise at all without totally soaking my shirt top to bottom, and even light activity like sweeping makes me pour sweat from my face!

As a Maryland resident and fan there is a clutch song called “Hot bottom feeder” that teaches you to make crab cakes! You just have to add that powder gold Old Bay
Exactly & Old Bay has cinnamon in it! I don't think they have the same ratio as the chili seasoning, but it's probably closer than you'd think.
I can see lining cupcake pans with the pasta to crisp up and fill up with chili and cheese. Also love the twist with dark chocolate as I've only seen mexican mole use that trick so it makes sense to me.
Im 99.9% sure that skyline chili does have chocolate in it lol

I know this is an old video I'm just discovering, but GD, this idea of the pastacakes in a cupcakes pan then filled with cincinnati chili, then cheese (most get this a little wrong: finely grated mild cheddar) is an insane idea that I am trying tomorrow. First, my heart as so many others go out for the Bills and their downed player. The field may see them as rivals, but many a black and gold has Damar in their prayers. That said, bit disappointed I won't get to see my Saints match up with another city this year. But I look forward to next year's match ups, as well as the rest of this year. Superbowl's gonna be a wild meal. Who Dat to all, and to all bon appetite.

You have no idea how happy seeing the words "Skyline chili" in the title of a Babish video made me. Cincy chili is the best! No idea how you don't like it, Andy, especially since I know you like Nick Tahou's meat sauce. I'm a native Cincinnatian and when I went to Rochester and had a garbage plate for the first time, my first thought was, "yum, this sauce tastes like Skyline."
It would be better if they didn't call it chili. It's not chili. It's a Greek spiced meat sauce for pasta. It bears very little resemblance to actual chili con carne.

As one whom hails from southern Ohio, I am both intrigued and appalled by this whole experiment. Skyline is one of the greatest things ever. Next time try some vinegar based hot sauce on it, Tabasco works as a perfectly adequate substitute for Skyline hot sauce.
I have to disagree on the Tobasco. Skyline sauce is more akin to Texas Pete or Franks.
If you shaped the spaghetti into cups, you could fill them with the chili & cheese.
Try Skyline Chili spices as a rub on pork or chicken, it's freaking delicious!

I've used Dinty Moore canned stew on egg noodles in a similar fashion to Skyline/spag someone might make at home. It's OK but I have done it more than once just for some variety, I added some extra veg too.
