This uncle had a long history...they have been around since 70 or early 80s. The time I knew them, they were at kim tian/ jalan membina road area and they used to sell satay besides hokkien mee. After they moved to ABC market they were still selling satay but maybe due to not having enough helpers he stopped.
just by watching I cook HOOKIEN MEE here at home....just put all the ingredients but my prawns and calamari are pre cooked already...my soup base was chicken broth...so yummy coz' I prepared it myself.....thanks for the vid.....😀😉😍😘🤩
I agree please do not go there and form part of the already long queue and please go somewhere else, lots of other place can find suitable for you especially at food courts. Shoo shoo. The initial oil might look a lot but that’s because he is doing many portions in one go, the broth will be soak up by the noodles. He would wish to have time to clean his wok but even before he opens with a clean workplace the 15-30min queue have already been formed and doesn’t stop. Btw noodle with thick beehoon version is better in terms of consistency in taste thin beehoon cannot soak up enough broth. Yes the egg shell does bother me and sight of relief when he finally spotted it.
I second your comment. If queue were never ending, how would one expect the wok and its surrounding to look like? Why cant reality be accepted? Clean every time after a single plate is served? 😂Look at the age of the uncle. There must be a reason why this stall has been there for long yet no one suffered from any food poisoning. Otherwise this stall would have been closed down long ago by NEA. 😂

Of course in that type of environment, you cannot expect its cleanliness to be like as if in a air conditioned food court. But certainly not placing that big tub of soup right in front and below his face level. This is certainly unacceptable at all. Instead of promoting, this should be reported. Apologies to the world as this is solely an isolated case. We certainly have better ones out there whom they are clean and hygienic.

As a kid I lived in Singapore for a few years (early 80s). We lived near Newton Circus and regularly ate there. I ordered this every time and loved watching it being cooked as much as I loved eating it. Great memories.

I am a chef for over 40 years . I totally understand the way the kitchen work and street food but he must improve himself , today people eat less oil and more healthier , no matter how good a chef you are , you must change with time !

I agree. It is dirty and messy and much too wet. That's not how to cook Hokkien Mee. You need to add cornstarch mixture, not shower with just water/broth. The cooked shrimp and squid that added in the end must taste cold, real cold!!!

A lot of us do notice that he should kept his prawn stock some way else. He clean something with a white towel on top the prawn stock, thing can be drop into the stock. very dirty and not appetizing. so many bad comments about this stall. Do you still wanted to eat here ?????

The wok is hot so it's fine. He is not serving the scraps from the sides of the stove. That is the dirty part. Noodles seem overcooked though.

就回覆你吧,brick works hawker center,俗称ABC小贩中心,下午五点才开卖,星期四休息,炒得乱七八糟,变成一镬糊,不过令人意外,竟然天天大排长龙而且年青人居多,我只赞他的《峇拉煎》辣椒,挺贵,只吃过2次
