Here are some impressions from the Callebaut Chocolate Academy in Belgium. It's a wonderful place for professionals to learn about new products and trends in the world of chocolate. We all had great fun preparing these cakes and desserts. :-) - Zábava
Wow. The level of dexterity is no less than a surgeon.
It's called a "stackable frame set". :)
It's a clear glaze called nappage neutre. It's used often in professional baking to glaze cakes like tarts or the ones shown in the video.
It's praline mousse with layers of brownie, jelly, and praline. You can see more pictures of this cake (with the layers) when you follow the link in the description. The last three pictures on the page show what this cake looks like when it's finished. :)
Man! You are on fire! I loved watching every second of this video .
***** i did too !! lovely ahah
@3000Crystal It's called "nappage neutre". It's used to cover cakes with a shiny glaze.
My goodness.I want to reach in the screen, and eat every cake.Thank you for the video.

@meneltane It's "nappage neutre".
These Cakes look too beautiful to eat *-*
@TheParisIvy When you buy cakes like these in a patisserie in Paris, for example, then it will typically cost 25 Euro (that's $32)... or above.
The cakes in the video were made during training, so we ate them after the session... and they were VERY yummy. :)
@rmolisak1 Actually, I also used this the first time in the academy. We called it "cake frame"... but I don't know where you can buy this online. It's really useful for creating perfect layers.
It's clear glaze mixed with apricot puree. The color comes from the puree.
It's an apricot glace with nappage neutre and apricot puree.
It's an "automatic portionner funnel". Or in French: "entonnoir doseur".
Oh I can't wai to become a pastry chef :D
All of this looks so wonderfull and tasty, wow I envy you for being able to take such an amazing trip :D
it's just perfect... congratulations for ur job :)
all this is pretty simple to make...all i would really need is some of the pre made glazes and the straight edges for the cake/mousse assembly.
I recently made the apricot cake it was fantastic
I've never understood people that don't like chocolate or cakes. I consider that a big flaw in their character.
Ellen Aim those are fake people !!!
+Ellen Aim somtimes people act like they arent into sweets but when you get really good friends with them it turns out they have diabetes

Hello thanks for the video, one question: at minute 2 what is the man pouring on the white sweets? Thnaks again.
im jealous.i love the art that goes into pastry making. i try to do what i can with what i can get my hands on but i still got a long ways to go and understand in terms of trying to recreate these masterpieces.
i would really love to study pastry arts but where can i make money off this...i feel like, with everyone so worried about their weight, that its not a profitable business to have. not so much as savory food.
Q profissionalismo !!!!!!

Are these cakes expensive? Because looking at the quality ingredients, I simply cannot imagine a average price at your ordinary bakey.
It's an advanced tempering technique called "tablage au chocolat".
Would you send me a link to the recipes? Or give me the desserts' names? That would be absolutely wonderful - my thanks in advance. :3
