Once each of them had presented their creation, we asked food scientist Rose to weigh-in on their choices. Would you eat all three? Which one are you tucking into first?

As a general rule, Flour tortillas have far better structure and are a blank canvas, and are much more better for Tex-Mex dishes like Quesadillas and Burritos. Corn Tortillas are softer and have a nuttier and earthier flavor and are best in dishes like Enchiladas.

For me that was weird, My family never used jalapeños for that kind of salsa, it is rich already, but I will give it a try.

Truvak T ... You know it’s Optional & every family has their own tweak. If you wanted your enchiladas to be spicy... then add jalapeños. I prefer without it. Also my mother’s recipe is quite similar to Raul. The sauce is exactly the same minus peanuts & jalapeños. Tortillas however are store bought & fried about 18 seconds. When done we dip the tortillas in the sauce & then add the shredded chicken & roll. Done. We always like to add crema & cheese Saul used with shredded lettuce on top of our enchiladas. Up until recent years I was baffled many use OVENs to make their enchiladas. But then again it’s usually Americans...
@@nic558 It has guajillo, pulla and chipotle chilies already. I dont think the jalapenos are really adding much spice at that point. Probably just likes the salt/vinegar flavor from the fact those jalapenos were pickled.
Matthew Sharp I know, there are various versions & quite frankly I just never had an enchilada that had a spicy “salsa” just the ones that had Chile inside. Sorry 😐

Level 2: not completely authentic enchiladas but is an interesting approach. I would eat it.
Level 3: real delicious Mexican enchiladas

The only good one would really be level 3. As a Mexican, we do not heat up pre-made store bought tortillas with oil and don’t use a “rue” for our salsa. It’s true that they weren’t authentic, but it was a interesting approach

In defense of Anthony, I cook tortillas that way every time I make any variant of enchilada, but I also think that salsa might be awful... Just jalapeño con orégano >~

Yes the real enchiladas from GUADALAJARA are better since this are NOT enchiladas, enchiladas dont have peanuts and the main thing is that they are fried in Oil is a tapatio traditional dish here in jalisco and this enchiladas are disrespectful to out traditional cuisine, but yea I understand its american version, but real enchiladas dont have that much Salsa and they are SOFT.

The thing Anthony does at first when he heats the corn tortillas in a little of oil is actually pretty accurate to Mexican cuisine, if you don’t wanna make your tortillas from scratch as Saul, you can do what he does.

I worked in a grocery store deli for two weeks in high school and my job was like 90% making those damn chickens! I was so happy when somebody in produce quit and I got moved to that, stocking bananas and apples is so much nicer than shoving a pole through raw chickens all day lol.
Love Saul's enchiladas! The only thing that I would change is that I would dip the tortilla in the salsa before filling it up. Like my tortilla to be covered in sauce.

@Linh Carrots are a bad substitute for meat. You end up eating a lot of carbs and fat from the pastry and nothing else much.
Breakfast enchiladas is something we do pretty regularly in El Paso actually. Here we usually stack the tortillas flat, adding layers of cheese, Chile, chicken, and onions.
