  • These Smoke + Fried Buffalo Wings are amazing. Chef Tom first smokes up some wings on the Yoder Smokers YS640 and then fries them in our Lodge 7-Quart Cast Iron Dutch Oven on the side burner of the Napoleon Grill P500RSIB.

    Been using this method for wings for awhile now, only exception is I marinate them for about 6 hrs in a cajun seasoning that really add some kick and flavor to the meat itself. Give it a try, best wings you will ever have.

      Sounds awesome. Remember at the beginning, Chef Tom mentioned that the sauce is the star of this show so less seasoning on the wings. I do love cajun.

    Oh my goodness that looks delicious!! I love me some wings! I'm definitely a flat/ranch kind of guy with a nice blonde beer to go along with it. And don't forget my celery and carrots lol
    Shoutout to Chef Tom and Malcom Reed, he's awesome too, you guys should partner up one day make some brisket or something.

    Love all your vids. Your cooks are so delicious looking but appear time intensive. Any chance you could do a cook series that can be accomplished in 30-45 minutes for those of us with small kids? That's about the time frame a lot of us have to get dinner cooked when you factor in homework, after school activities, and kids bed times.. Either way love your stuff.

    Tom, great job! I'm from Erie, PA, which is an hour from Buffalo, so I know what real wings are. They're not baked, they're not low fat, they're not lightly seasoned. I hope you come to this region sometime and check out where wings were born!

    100% EXCELLENT process to make some of the BEST wings I've ever had! One word of caution... careful not to over-season like I did; a light to medium dusting of rub is sufficient. Especially if you've brined in some of Malcom Reed's Buffalo Sauce!! BTW, I like my wings dry rubbed so I skipped the sauce and sprinkled a follow up light dusting of rub after the deep fryer! AMAZING!

    I do this with whole chickens cut up.... Then let em cool bread them ..into the fryer ... Smoked fried chicken.. Amazing ...

    Love Malcoms hot sauce, I got one in a combo pack I ordered a couple years back. I can find his BBQ rub at Walmart, bUt that's it as far as his products go. I get a lot if my Kosmos Q rubs at the local Ace hardware stores where I live which is convenient so you don't have to wait on shipping etc.

      Push the coals to one side, add some wood chunks, smoke dem wings, put said wings in some hot oil, apply homemade buffalo sauce. Boom! You can do anything we do on the Weber Kettle. May be a bit more work but the kettle is an amazing piece of cooking gear! Go get it!

    Chef Tom thought about this a while back because I smoke everything. My question for you is after it comes off of the smoker are they cooked enough to kill bacteria and let them cool before putting in fryer? I want to have this as a menu option on a food truck. Would be nice to have a case of wings smoked up and ready to drop in the grease as the orders come through.
