When you KNOW yours is the best, you can be nicer judging the others.
Except for vegan. Cheese comes from milk. Milk comes from a cow. Requires a "Mac and Stuff" category if it doesn't contain cheese. Like an "Impossible burger". It's impossible that I am going to call it a burger. I'll call it a "Veggie Patty", might even enjoy it, but it's still not meat.

its because they have an open mind and pick and choose what works from any source they can find to make their own better. thats why you always see the close minded ones being nasty and getting worse scores cause they think they cant make their food better and it can always be better.

I do that for my rice then someone said to do it for mashed potatoes and I felt so stupid I didn't think of it. I would definitely try it for Mac 😜
my potato’s, yuca, plantains, pasta, rice all get boiled in chx stock, it just always made sense lol

I am all for an all-vegan segment, BUT I make vegan mac and ain’t no way I’d be getting a 1. Idk where they be finding these vegans/vegetarians for these segments.

I knew Joey's was gonna be good once he said he used chicken stock. I do the same thing for any pasta I boil, my rice and anything I'm going to brine. If I have to use water, it's filtered or bottled water, never tap.

@@Jemzedmusic facts! That's how my mom and grams taught me. They said the same thing about the chlorine and fluoride in tap, only use filtered or bottle if you don't have stock/broth.
I’m so glad to know it’s not just me, I get called bougie by everyone because I cook with bottle water. If I don’t drink tap water why would I wanna cook with it.

i was watching this and i realized that joey looked familiar, then i realized where i know him from. we went to middle and high school together. i cant believe i just randomly stumbled upon this video. he was always an amazing, friendly person, and amazing trumpet player and singer. we were never close but i always liked and looked up to him.

There's a reason for the black/white thing. “Black” mac and cheese is made in the tradition of blacks in the American South, baked mac and cheese using egg as a binding agent, so it’s firmer throughout and sometimes crispy on top. Typical “white” mac and cheese is influenced by French or broadly European cooking where they make a roux, a cheesy sauce made on the stove with flour and butter. So it’s creamier and lighter in color (think Kraft Mac and cheese), which is why they called it saucy and soupy. Joey made his the black way.
Edit: Macaroni and cheese was invented by James Hemings, an enslaved black man who created it in the American south after seeing Parisian pasta. So when I say BLACK Southerners and WHITE Europeans, that’s what I mean. I’m commenting on the history of the dish and not your own personal story. Good day y’all.
the best mac and cheese i ever had was in rome .... it used egg as a binding agent and was golden i think people do it different all over the only nationality to make soupy mac and cheese was the french. mac and cheese just evolved alot like america has more variety means more flavors everyone has something to bring to the table.
Now sometimes the roux cooked Mac & cheese CAN be good IF they use all scratch ingredients, NOT no Kraft fake “cheese” mix now lol nawl
I use a roux and do not use egg and mine is not saucy and soupy. I think the egg is specific to certain regions…not black people everywhere.
The soupy ones either don’t make the roux properly or many times don’t use one at all. They just melt cheese with milk and add noodles
i find it funny i love the "white" way i just almost cant stand thick and brown mac n cheese

I wouldn’t be surprised to find out Joey used Stovetop Kisses (Danni Rose)’s recipe. She boils the pasta in chicken stock, it looked like hers, and her recipe is viral. Her mac & cheese is always a hit.
Whatever the case, Joey’s dish looked like it was the best one there

I’ve never heard of that person and my family has been boiling the mac in chicken stock since I can remember. Y’all seem to be under the impression that only black people can cook southern staples.

5:04 Yes! American cheese does not belong in Mac and cheese!!! I once ordered mac and cheese from a "soul food" restaurant and it had American cheese in it. I wanted my money back 🤢
I disagree. Good american cheese is fine, but it has to be less than the other cheeses. My recipe calls for 6+ cups of cheese, I might use one cup of american and the rest are other cheeses.
When you use Velveeta or American cheese, it's just as a creamy element. You need at least one, two, or three other cheeses in that Mac and cheese or that's a L 🤢 i once knew someone WHO ONLY used Velveeta.
Velveeta and American cheese are ingredients that should be used as a part of a whole for the Mac. If you want a cheese sauce that stays creamy, less to no separation, won't get gummy or pasty, then the emulsifiers in these processed cheeses are a sure fire way to achieve it.
If you have something against the specific flavor of these processed cheeses, buy some Sodium Citrate. That is the emulsifying salt used and it will allow you to get what processed cheese has to offer but only using the types of cheese you want.

I wouldn’t think to put American cheese in mac n cheese, BUT, I could see using white American cheese. I get a block from the deli to shred when I make queso. It has a creaminess to it that could fit with a mac.

Love this series. It is funny, people don’t hold their punches, even the host, but it not nasty and off putting. I think having the taster and the host together tasting at the same time makes for more honest critiques being good or bad, or maybe just really good casting so far. Well made series for both episodes, please keep this up and I will keep coming back.

Mac&Cheese like a lot of other things are a matter of preference. Some people like to add egg, some don’t. Some like one cheese, and some like multiple cheeses. Some people only use salt and pepper in it, some people add a lot of seasonings. It’s really how YOU like it.

The key to good Mac and cheese in my opinion is cooking the pasta in chicken broth, grating my cheese because already shredded cheese is gross to me because they add a caking agent to it and it doesn't melt right. I use provolone, swiss and extra sharp cheddar cheese in my Mac and cheese.and the milk mixture I use to bind it all together makes it taste amazing. Using chicken broth will not make it taste like chicken in case you're wondering, it just adds a really nice flavor to the dish.
The shredded cheese has a wax preservative caking agent on it, and we can agree it’s disgusting when making Mac and cheese but not with baked potatoes or broccoli casserole for some odd reason.
I agree. My mom doesn't use it cause she says it makes the dish oily and thus stops the cheese from sticking to/coating the noodles like it should..
Never been a big Mac and cheese person, but love that Joey got the credit he deserved. His looked the best. I don't know what everyone else was doin.

Not surprised by any of the results.
1. The moment he said he boiled his pasta in chicken stock, I knew was going to be banging.
2. When the lady said 7 cheeses I was already skeptical because that sounded like too much. And not all cheeses go together like that. She sounds like an over seasoner
3 . Last, I'm sure no one in the comments was surprised when the vegan mac was dry and considered to be the Plus 1 dish 🤣
Now that I'm grown I realize the cooks in my family were doing a lot of guessing when it comes to making mac & cheese. Just throwing a bunch of stuff together in a pan and hoping for the best. I've learned you definitely do not need 5 & 6 cheeses. You can but it can be just as good ( and less$$$$) with just extra sharp cheedar (great cheese flavor) and mozzarella for the "pull" plus proper seasoning. Absolutely no eggs. They aren't needed. Eggs interrupt the creaminess plus cheese setts up well without any help. Lastly, (which is actually foundational) you must make a white sauce. Don't just do what you saw auntie do. Auntie made everything with love but there is always room for improvement.

Boiling noodles in stock is an actual cooking hack. The noodles absorb some of that chicken flavor. I just don’t know if the reuse the stock or throw it out?

I boil mine in chicken broth too. That way your noodles are already tasty
