    I used my prison kitchen job as a reference, i just used it to show that I wasn't lazy during my incarceration, idk if it helped at all but I did get the job and I still have it 5 yrs later.

    Made it to staff dining on a 13 month county bid. Everything Joe described is accurate. When you handle the gaurds food they tend to treat you like an actual person, ie. Starting conversations with you, joking around... it's almost as if you become a person again in a way instead of just a number. The other prisoners hate you, you get full access to all food as much as you want, total freedom to come and go from the block to work anytime during the day. That first time you eat with the real silverware instead of a plastic spork... priceless. You need to demonstrate you are clean and presentable and be creative in what you make for the staff. Basically see the cell when you sleep... time flies by.

      agreed, even the guard/s back there with you would let you do whatever. had guys making pizza's, pies, whatever we wanted and agreed on to eat for our breakfast and dinner. we ate twice a day. lunch was whatever we was let to sneak out by the guards. usually a PB&J or fruit salad. loved the kitchen. only difference was there was no ladder. guard assigned the jobs.

    It’s true, I worked at the bakery on Rikers Island 🏝. I brought back Sugar, bread 🥖, pastries 🥮, all kinds of stuff. When your OK, the CO”s let you slide. It Helped my bid and helped me stayed out of trouble.

    Dry storage is normally gonna contain beans, rice, can goods, and seasonings for the food, likely special dietary food like fish in packets, ex; Tuna, Sardines ect.. Peanut butter boxes, chips, sauces, juice for the dorms, or housing units. A lot of the stuff they want for making buck.

    I started in the kitchen running trays but after awhile I got a gig working in the ODR. They got real food in that joint, real soda too not that mystery juice shit, so I did too lol. I had a blast working in the kitchen, the time goes by waaaaay faster.

    Only a complete simpleton doesn't know how to cook.
    Cooking is just like art.
    Saying you can't cook says you can't read, conquer a coherent thought and be creative. (Even when reading directions/instructions)
    People who say they can't truly are probably just too lazy.

    I was lead pots and pans 08-09 at CIW CALIFORNIA institution for women and it was the best! I got to work pretty much by myself and eat as much leftover food as I could handle! I also got an awesome letter of recommendation from my boss when I paroled. Good ol C.I. WONDERFUL! good times surprisingly enough!!

    Im Canadian and was in the the hole ( solitary confinement). The guards did are meals and one guard was not letting me out for shower. So I took a Dookie in the tray and sent it back.
    Bit I would of never did it if inmates did the trays.

    Thinking of uniform, whilst he was training there were a few people who they didn’t think would make it. They were given uniform towards the end of training. A woman came the next day in her official top of her body uniform AND....jeans! She didn’t like the cut of the trousers 😂😂😂

    In NY, we love our tray knockers, we feed them the same stuff we feed the line, always something special- the kitchen dont eat the same as the facility we cook something like fried chicken etc. Now the cooks and hierarchy, we get the shit from the officers mess🤣 but no one wants to bang trays🤣 so we take care of them dudes

    I was a baker at a work Camp Road prison in Florida I used to hustle I would make the state cookies the sugar looking cookies and then I would take that vanilla cake with white icing they would always serve in Florida prison and I put the icing in between the two cookies selling for a dollar piece

    Na trying to establish a relationship with a CO or any person who is a civilian worker in some prisons, maybe jail , to get you another charge or sent to confinement. We're told if an inmate tries to establish a relationship, We're to shut that down. Also, taking any gifts from an inmate is not allowed and can lead to both the inmate being put in confinement and the civilian being fired or given a disciplinary write up.

    In Texas you don't necessarily start in the tray room or as it is called here dish room you might start on the line or floor or on the carts, delivering food to look down. And texas pays good time that is worthless and does not count for anything

    I worked for the WV Division of highways while locked up and used it as a reference when I got out. The man that ran the District warehouse let me use his info with telling it was DOC related

    Hello joe. I have been a subscriber for awhile and I have a legit question for you. Have you noticed while working in the prisons kitchen that most of the guys that have been working a shift near the food tend to be bigger guys maybe the “jacked ones” because they can consume more calories in a day? (nutritional standpoint)

    I got head chef pay at $88 a month, at a guess of 8 hours a day, 5 days a week. Having never been anywhere near a prison (I do see the uniform a fair bit) so I don’t know if they work more or less hours or how many days a week. Anyone who knows please share 🤣
    I see a uk prison uniform because a relative’s husband does it. Occasionally I’ve touched a prison officers’ shirt, while I’m babysitting their kids I’ll now and then be nit and iron uniform if they’re running late.

    Virginia is nothing like WV in the kitchen. Where I was every kitchen worker got 2 trays and 4-5 days a week you got to pick what you ate from that week’s menu. I was at 2 institutions that ran this way. We got our choice of three different milks including strawberry, chocolate, white or 2%. These were state prisons not regional jails.

    I cooked and managed for 14 years at a restuarant. We hired this kid out of prison. (The prison was literally across the street) his name was Angel. He was awful. I would tell him he was awful, and he wasnt meant to be a cook. I was just honest with him and not hating....not everyone is a cook, it is what it is. He was making my job and the other managers, cooks waitresses jobs harder. He took me being honest with him as "talking s***" and took it very personal. In 13 years hes the only employee who made me openly admit that he shut me the F up. He became one of the better cooks almost over night. I would just be honest with him though, I would pull him aside like, dude i dont think this for you, i dont want you on my shifts, it's like your not even trying, I have Bill's to pay and you are hurting my store.

    Food Service Manager’s clerk or clerks were by far the most powerful inmates in prison. Order anything they wanted to eat, literally anything, alter performance evaluations on any inmate, change your job or shift, leave your name and # off any list, for promotion etc.. The list is long.

    Forcing people to work whether they like it or not… also known as slavery. Frankly with how little people prisoners get paid, that might as well be slavery

      @Brown Incel Why would forced employment in prison stop fights between inmates? And even if it did decrease them somewhat, does that make forced labor okay? Some prisoners don't get paid at all for their work & the rest get paid less than literal pocket change (for example, a whole year worth of full time work for an inmate is likely to earn them less than what a single paycheck would be for typical employees doing the same job. Furthermore, 70% of employed inmates said they couldn’t even afford essentials such as basic hygiene products on their wages). To make matters worse, Incarcerated workers often see much of their pay withheld for taxes, court costs, room & board expenses, visits to medical staff & dental services (aka having a tooth yanked out that often could be filled). Inmates often also do dangerous jobs that they are often not be properly trained for- in fact 70% or more report receiving no training of any kind for their prison job. Plus, they tend to lack basic labor protections that typical employees have (for example, they may not be given breaks which typical employees would be legally mandated to receive, workman's compensation is not guaranteed in case of injury on the job, they certainly dont get benefits, & they might receive punishment if, for example, they got lightheaded & needed to sit down for a bit or needed to take a bathroom break or something of that nature. More than 75% employed prisoners reported that if they can’t work or decline to do so, they are subject to punishment ranging from solitary confinement, to the loss of family visits, to denials of sentence reductions, etc.
      Assaults are gonna happen anytime you force a bunch of people who inevitably wont all like each other (plus many prisoners also suffer from mood disorders, personality disorders, behavioral issues, histories of severe emotional, physical, & sexual trauma, etc.) to cohabitate in shitty conditions & provide them little-to-no therapy, psychiatric care, job training, or other rehabilitation related services- (ya, know things that might actually reduce the violence & recidivism rates...) There are more effective & less inhumane ways to reduce violence in prisons, as well as recidivism.

    Hey Joe! Big A.P.S. fan ever since i came home a few years ago. When you mentioned getting snitched on just because some jealous MFer wants your job, it totall rang true to me. When i first got to quarentine, i noticed that the porters got to be out of their cell almost all day and got to use 1 of the 3 phones for our side anytime they wanted. I got lucky and asked the CO about a proter job less than 5 mins after one of the current porters was told to pack up for a transfer. I got "hired" on the spot and only did it for 10 days before some body got envious and tossed a blade in my cell rt when we got calles for chow then dropped a kite on the COs desk. When i returned to the block after chow the immediately cuffed me and threw me in the cell for 60 days followed by 30 days of loss of privelidge. Never found out who did it.😈😈😈

    I can tell you that if Food Service runs the kitchen, we likely pick people who we see want to move out of that area. If we see you're doing the job and you're not walking around stealing stuff because the kitchen is known for where stuff goes down, it depends on location inmates try and send stuff to a dorm on a food cart or they try and pass it off in a chow hall window or so other means. But inmates who are less of a problem don't complain a lot. I've worked with get moved up, or I at least look out for so if theirs inmates I know that are like yo man where you need me at and I say hey man look we need 20 pans of cabbage made or salad for dinner can get prep it for me and say yeah I got you and they do it get it done that's the inmates I'm gonna reward. You get a lot of inmates who don't want to work in the dish room area and times if it's not an open dish room where inmates can kinda block the view they're smoking dip they found in CO spit bottles or smoking k2 or something else and then snatch and grabbing cookies or cakes or Patty's and then some how we run out of stuff.
