Windows 10 IoT Enterprise LTSC 2021 is still the best. It will get its extended support (security updates) till 2032, and Windows 10 is not going to get any more of those "feature upgrades" anyway.
Edit: Not to mention that it has the traditional activation system that the main Windows 10 Home/Pro uses of digital licensing, unlike the chore that is setting up the core LTSC versions (the non-IoT ones), and has better/longer support cycle.

I either use Windows Server or Windows Pro for Workstations if I want it up to date. Both equally good choices, I consider server to be something like LTS Linux distro. It doesn't get updated as much, but it's insanely stable (considering it's windows).

I have been running Windows Server 2022 Datacenter Edition as my main OS since May 2022. I have no regrets, and I've gotten it to run pretty much everything I want. The only thing I don't have is the Game Bar/DVR thing and Cortana, which are things I really don't care or need. Windows Store isn't there either, but you can manually install msix packages to get around that, and most work, including HEVC/HEIF formats as I've come to discover. Haven't really had any other major issues, the server features are useful to have around even if you don't use them that often.
P.S. If you aren't using a true workstation or server grade motherboard, with dual LAN ethernet ports, only one will work properly due to Intel market segmentation between consumer/business LAN drivers/chipsets, so you will have to driver .INF mod to get both ports to work. You will have to change some settings in Group Policy Editor to get NVIDIA drivers to work properly also.

If someone does make a good Windows Server to workstation converter app, I think it could be great for the power users out there. My biggest argument against Windows Server for personal use is that some software refuses to run without more expensive licenses or just flat out refuses to run at all. If this could be fixed on a per software basis, I think Windows Server could be the perfect version of Windows for all the reasons you mentioned.
Basically last time I checked, Wi-Fi/audio support needs to be manually enabled, adjust priority for background processes vs logged-in user running apps, password strictness requirements, shutdown/restart/standby/hibernation fix since Windows Server is designed for maximum uptime, and find a way to trick user installed programs that expect a consumer version of Windows that they are running on a more normal Windows equivalent version

What I did for AMD drivers on Windows server is use SDI like you did here but instead of lettting the program do the installing, I first let it download the AMD files, then I extracted the zip it downloaded with 7zip, then I went to Device Manager and pointed the "Microsoft Basic Display Adapter" to where I extracted the AMD drivers and told it to look in there... and then the driver installed and works perfect for me.

Some free tools are not free for server installations. Seems like there were a couple other annoyances when I was using server 2016 as a workstation. Modifying intel networking drivers was kind of annoying but not too big a deal. There was nothing that I couldn't live without or work arround but there where some annoyances that I can't specifically recall now. I used that system with server 2016, from 2016 to 2020, so obviously there was no major problem with that, but the annoyances where enough that I did decide not to bother trying that again, and I can't say I would recommend it. Ultimately, for most users, LTSC is probably a better option.

I use MBR on all my machines because UEFI boot is a pain to get working, especially if you dual boot with Linux or anything non Windows, or have a UEFI Class 3 system. For example, I was doing a dual boot setup for a friend on their HP laptop, and it kept forcing Windows as the default and I had to do some hacky method to get it to temporarily show. I don't even remember what it was. On more normal computers you're forced to use GRUB over Windows Boot Manager, Linux can't be added to UEFI boot Windows Boot Manager. GRUB has tiny text while you can actually read Windows Boot Manager especially if you have a high DPI display.
Also if I remember correctly Cyberpunk 2077, Horizion Zero Dawn, and Death Stranding require 1809. HZD used to run on 1803, but an artificial block was introduced at some point iirc.

In Conclusion the more Beblotted windows the more problems for programs and gaming dependency so in result windows sever is not a good os for gaming not not even LTSC is a good version of windows in my opinion because i had problems with LTSC as well when installing games so i personally run your debloat on windows 11 pro and do some gaming optimizations and thats all i do for my pc because again if you go to far in the weeds then you will break some games dependency if you have a modern pc/laptop that can run windows 11 it does not need that much blot remover because your pc/laptop is modern but if i had a very old laptop from 2009 running windows 7 with 4gb ram then i would had used windows 10 ltsc or sever edition because i wont be gaming in that laptop so tehn its a good version of windows

LTT: Ordinary users are unlikely to install Linux on a computer because it's to complicated.
CTT: Let's install Windows Server 20xx umm now which version, which edition, which feature update…
The Windows installer GUI sometimes cannot figure out how to partition the drives
    Let's use a CLI method instead …
Seems there's a huge difference in user experience between either updating Windows in-place or installing Windows on a single empty drive with the computer already in UEFI mode and drive already using GPT partitioning vs anything more complicated.
To be fair Windows Server 2016 is quite old for installing now in 2023, even if security updates are available until 2027, unless you are willing to forgo compatibility with newer capabilities.
I admit I had also forgotten how recent WinGet was.
Ventoy - I am not surprised because I while it is supposed to have a Secure Boot mode, Windows might still not be quite expecting the environment presented to it compared with when it's just booting the regular USB made by the media creator tool from the single ISO.

Ordinary users don't want to use cmdline or to deal with unstable jank; They want things simple, working and with a GUI Apple understand this, but sadly the Linux community did not. If the Linux community got some UI designers, focused on the graphical user experience and stopped fragmenting they could be the next big OS, but they're too busy self sabotaging themselves to listen to what users want.
All the fragmenting means the Linux community has nothing on the market, no software on shelves, no products working out of the box on a retail shelf for users to purchase and no TV or digital marketing.
