  • I welcome you to today's video where you could see the renovation of this old hand machine, which could come from the end of the 19th century to the first half of the 20th century.
The manufacturer was Antonín Veith and it is marked with the label "Mechanické dílny Hodonín", protected by law no. 3715.
Antonín Veith was the younger son of Jacob Veith, the owner of the castle and manor of Liběchov. And also one of the founders of Czech sugar confectionery.
Antonín, like his father, was popular with his subjects, he supported Czech and German schools, scholars and artists.
But this time we did not find out what this hand machine was used for.
If anyone knows its correct use, please write it to us in the comments.
    And that's all for today.
If you liked the video and would like to see more content, don't forget to subscribe, like, share with friends, leave a comment :)

My Hungarian Grandmother had a machine very similar to this (if not exactly) And I recall her making noodles with it to go along with cabbage and sliced sausages and some soups.. She also made dumplings (I call Them slickers) to go along with her chicken and "dumples" as she called them. I'm 71 years old and the images and recollections kind of fade after awhile but the taste of her food never will. I'm pretty sure that it was used for other things as well. I will try and find some pictures of her using this wonderful device and send them to you. If my father was still with us either he or his seven brothers could certainly fill us in. Great restoration!!!!!!!

This takes me back to my childhood. My older brother worked at Cadbury's in Birmingham, and in the visitors center there, they had a machine like this that dated back to the early 1900's. It could be used for various activities, but was primarily for scoring blocks of chocolate, before being wrapped, and creating a line where the customer could break a piece of chocolate from the block.
The discs could be set ar different distances apart, simply by changing the wooden rollers, as there were different sets, all with different widths, so bigger or smaller pieces could be scored, depending on which type of chocolate they were making that day. At some point the other sets of wooden rollers must have been lost, but I am sure you would be able to make them - as you can do anything and everything so this would be no problem for you at all. All that is needed is wooden bars the same diameter, but cut to different widths to make the new sets. With your skills it is easy for you.

    Considering a few things...
Since the family had some kind of connection to the confectionary business, I would believe it to be for cutting candy.
You can see that the thickness can be varied quite a bit, and quite thick at that. (Probably thicker than typical noodles.) The metal disks were not sharpened at all. The slots they fit into on the opposite roller were rather wide so the metal disks could not "cut" the material going through. (Look at the spot where he is sanding the slots in the opposing roller. Those slots are much wider than the metal disks so cutting is impractical.) Also, the opposing roller with the slots is made of wood making cutting with the metal disks impractical. So that brings us back to more the idea of the machine making orderly impressions in a material than cutting it.
With this info, I am going with a confectionery machine that makes strips of candy for either folding into ribbons, or blending with other color strips to make candy canes, or double cutting to make small square candies.
    What do you think?

    • @sfogarty2

@@brianthesnail3815 I have seen most hot sugar candy slightly cooled down some and then aerated, before being streched and portioned. So I wonder how hot sugar candy actually would be at this stage. I have seen it being aerated, stretched and formed by hand, that would sure not happen if it is too hot and too sticky. Sure it can´t be the piping hot sugar stuff that is poured onto a slab anymore. That would also be way to liquid. and slightly oiling everything, I would not yet rule out sugar candy completely.

Very similar items are used in the production of flat noodles. The first roller is the dough sheeter, and can be used without the cutters in place to sheet the dough to a specific thickness, then passed through the machine again, this time through the cutters to create the cut noodles.

I would tend to think the hot sugary candy would be coated in either a powdered sugar or corn starch to keep it from sticking to the machine.
I don't think this machine could "cut" because the disks do not rub against the wood rollers. They seem to have more like a groove. So the product going through the machine would be scored or dented and then broken apart once cooled a bit.

Wonderful restoration. It looks like one of those machines used for cutting something into strips. Anyway, it looks much better and works like a charm as well. Excellent work.

Another excellent restoration. I appreciate the care and attention you give to these detailed restorations. The example you set is useful to other restorers. I will guess that this machine was used to cut pasta or dough, and would have been used in a bakery. Thank you, and smiles from the USA.

Another superb restoration! My first thought for use was pasta dough, then leatherworking, then I saw the comments about confectionery, and then finally dressmaking/fabricworks.

Another fabulous piece and great work on the restoration as always. It looks like it could be used for either pasta or possibly for cutting soft candy into strips. Whatever it is it is very interesting. Best wishes from your friend in Australia 🇦🇺, Rob T

You must open a hand machines museum with all those machines that you have restored so far. 👍👍

This is for Noodles. You put the dough on the table and make it flat with the first roller and then the roller with the little round blades cuts it in stripes. You can still buy very similar machines today.

It looks ready to slice ribbon candy, nougat or fudge again. I remember ribbon candy was special for the holidays. I've seen straight and bow ribbon candy. Great work!
