    Absolute perfection!!! I have tried so many recipes looking for a moist delicious white cake with no luck. Then one day your sweet video came across my feed and now my search is over!     A lot of times I'm looking for tips on how to bake better cakes. Although I do put parchment paper on the bottom of my cake pans, I hadn't come across the tip that says to line the entire cake pan. So I think that was a great tip. Thank you.

    This is one of the best tutorials on white cake that I have ever seen.
    I am going to try it out, because besides chocolate cake, I grew up loving white cakes from our bakery.
    It closed down 40 years ago and I have been looking for a white cake recipe as good as those since then.
    I think this one may be just the right one.

      Mia Harrison I made two rounds and cut them in half. Put the cake in the freezer or fridge to chill before cutting.

      Make sure you are not overbaking your cakes. That can harden them and make them dry. Is this happening to all of your cakes?

      It's a great recipe. White cakes are super delicate and tend to be dry but this ones is very moist. Hope you enjoy!

    Thanks for your video. I have taken courses and looked at dozens of tutorials. Your video for this cake is the most detailed lesson on CZcams. You leave out nothing. I am going to try your recipe because I want to see how the cake will taste. If I flop this cake, then I am surely losing it. I haven't done icing, etc., for years, but I want to do some special cakes again. Is it 4 cakes or you sliced the cakes? Thanks

      I hope it helps. I haven't had a complaint about it. Always make sure you are using the proper ingredients and your oven is working properly. Same with using the right measuring tools.

    Wow, this looks amazing and your instructions are perfect! I see specks of vanilla bean in the finished cake. I've been told to use clear vanilla in a white cake to keep it white. Can I use the vanilla bean paste without it ruining the white color? Thanks in advance!

    Hi,
    1)Can the white cake recipe be used for cupcakes without changing anything. If not do you have a white cake that taste just as good for cupcakes?
    2) how do you double or triple this recipe. Do you just 2× or 3× each ingredient or do you have to change the whole recipe

      I don't use this for cupcakes since it tends to shrink. I don't have a white cake recipe for cupcakes but I need to create one. You can double the recipe but make sure it fits in your mixer.

    Hi Edna, hope all is well? I love this cake and I love that you beat the egg whites and then fold them in like a genioise cake. This is why a white cake is delicate and moist. I just made a white cake two weeks ago. Love your cake and thanks for sharing! :)

    Hi Edna! Thank you so much for sharing this recipe...it's exactly what I've been looking for. I have 2 questions though. 1. I'm wondering if I can make this cake with mini chocolate chips in the batter? I don't think it will mess up the texture (moist vs. dry) but wanted to double check with you. 2. This would be for my mom's birthday so I'd love to make a super easy gum paste flower for the center. What supplies do I need (this is my first gum paste design ever) and what flower is the easiest? You're so talented...so happy I found you on here; I'm hooked!

      I don't think it should mess up the texture. As far as flowers, the calla lilies are super basic. I Have a tutorial on them. I also have a tutorial on roses made with circle cutters if you want to play with that and I have DVD's on more advanced ways of making them fast and pretty.

    Hi Edna, I recently discovered That adding butter flavor extract will boost and enhance the taste, what do you think? I tried it and it definitely brings out a more buttery flavor, and is there an extract that you would recommend without preservatives?

      Yes, you can add it if you like buttery flavor. Usually White Cake is not meant to be a buttery cake but you can change the extracts as you want. You can also add some almond to it and it's delicious too!

      yes you can, I don't typically add more salt if I don't have the salted butter than what I ask on the recipe, but I do prefer the salted one. It works with the unsalted also.

    Hello! Made this cake and it turned out great!
    Making it again next week for a wedding, how long is the cake good for in the fridge? Does it freeze well? I’m try to make it two days before the wedding, do you think it will retain the moisture or should I use syrup in between the layers?

      I usually seal it well with plastic wrap and then place it in the refrigerator. The cake is naturally moist but if you want it even more moist you can add syrup.

      It breaks the egg whites. If you don't add the sugar, the egg whites might not break fully and you might find areas in the cake with white spots or holes.

    I tried this recipe and thought it turned out great and soft UNTIL I frosted the cake and placed in the refrigerator. I got the cake out for trying it out and it had gone so tough! Not sure what went wrong ....

      That's the whole idea to place in the fridge well covered so it hardens and it makes it easy to frost. Once it comes to room temperature it will be soft again.

      @@EdnaDelacruz But bakery baked frosted birthday cakes keep soft all the time even if they are placed in the fridge for 2 days. How do they do it?

      @@kamranki Some bakeries use oil in their cakes and the oil doesn't harden as much as butter does. I worked for many years making cakes and I worked on a custom cake shop also. We usually recommend to bring the cake to room temperature because the cold cake won't be as flavorful as a cake that is at room temperature.

      @@kamranki I don't do that exchange in my recipe since the recipe works really well. It would be best to find a recipe that uses oil instead. I would have to try and test before doing that suggestion.

      You can double if you have a mixer that is able to handle the amount of batter. When I bake at home I prefer to do separate batches for quality control.

      @@EdnaDelacruz I was able to double everything but the meringue. I am blessed with 2 large stand mixers that can handle the heavy loads. The meringue was done in two batches and I folded one batch into the batter while the second was mixing. Thank you so much for the video and the recipe. My daughter is getting married on Sunday and for some reason she thinks mom can do anything including her wedding cake and the flowers for the wedding. Once this is over I will take a vacation from the craziness of the past month

    Hi Edna, This looks delicious. I'm curious about the filling. How did you make it? Did you just add chopped up strawberries to your buttercream recipe? Which icing do you prefer with this cake - swiss meringue, cream cheese.....? This cake looks scrumptious!

      The recipe for the buttercream is an Italian Meringue. Its not meant for underneath fondant and it has it's tricks. I need to do a tutorial on it but I need to film that. The filling on this one I made with homemade strawberry jam. I use a stabilized whipped cream but you can use swiss or italian buttercream too. I prefer to use the first because I don't like too much butter flavor. I will share too how I made the filling but I need to film and edit that too!.

      I used here in Florida a non dairy stabilized whipped cream. I can eat dairy but it actually holds great outside the fridge.

    May I ask what kind of plastic wrap you use? And does it come in different sizes? I like that you could just lay it down and wrap over it in one easy step. I I used to cling wrap but it's so difficult to get it around the larger cakes without lifting over and over to wrap it around it.

      I know what you mean. I love the press and seal from Glad. I usually lay the plastic in a cross shape on the plate
      I am using to turn the cake and that way I don't have to lift the cake at all!

    Yes baking is a science. And you need accurate measurements. Which is why you should weigh your ingredients rather than use by volume.

      I do agree but with that said I will also add that measurements in cups work well when done correctly and with the right tools. I've been working in this business for over 25 years and used both methods. Most Americans are used to working with cups more than weighing. Maybe that will start changing but it still used a lot.

      That can change depending on how much you fill them up and your oven. 18 to 20 minutes is around the normal for a standard cupcake.

    Hola Edna, thanks for the video. Once done baking cakes, do you let them cool in the pan at all, before removing from the pans? Or do you immediately after they come out of the oven while cakes are still really hot, do you place them in plastic paper?

      I let them cool in the pan around 15 to 20 minutes and then take them out and seal them in some plastic wrap and place them in the fridge.

    Hi Edna, I made this cake and I loved it. It tasted great. The problem I have is that the cake fell to half the size. I don't know what I did wrong.

      It shrinks some but I have never had it shrink to half it's size. Try baking it with Parchment paper to see if it helps. Make sure to cook in 325.

      Oh my!....I realized my mistake. I used a cup and a half of butter instead of a stick and a half. I read it wrong. Now it's perfect :)

    i been doing at home cakes trying to practice for my kids parties in august and sept. i just wanted to know the difference in the butter. does salted make a difference in the cake ? if so what is the difference? or is unsalted better? if so why?

      It really depends on the recipe you are using. A lot of people like using unsalted butter. I like to use salted because I think the extra salt does make the cake taste better. But before you go and change a recipe, make sure you are not overdoing the salt. I make sure the flavor is good. Many years ago when I started doing cakes, I used to use margarine for my cakes. Margarine has salt in it. When I decided to change to real butter, I was not a fan of the decrease of flavors in my cakes. I figured out it was the fact that I change to real butter. I was using unsalted so I decided to use salted and by doing that, it helped bring back the flavor I liked in my cakes. I guess is a matter of what your tastebuds like. The only way for you to know is to test it yourself and see if you like it. If you do so, remember that you will need to do a test first to find out if you have to play with the salt to increase or decrease it or if you just rather stay with the unsalted butter. In my recipes, I adjust things all the time.

      Some people put the simple syrup before the cake cools down completely. I tend to let the cake cool down so I can torte it and then I place the syrup. I do let the cake rest overnight in the fridge so the simple syrup has time to settle around the cake.

      If you want a tall cake you can make 2 recipes. I tend to bake them separate for ease of baking.
