The only thing I do differently here is I roast my garlic and ginger - just to give a nice robust and deep flavor. Additionally, I typically always soak my eggs in soy-sauce, sake, sugar, and mirin for 1-2 days in the fridge, they yield excellent flavor. One more thing - creating your own ramen noodles from scratch is easier than you think! Take a weekend to learn it, it's a lot of fun and a lot more delicious.

This was sooooo amazing! I cooked for my girlfriend for the first time for valentines day and she was blown away by this, the pork belly came out perfect.
The only additional step I did is boiled the pork belly in a seprate pot first, similar to what you did with the pork bones, and I had to add more water as the broth was low @the 3 hour mark.
Keep it up! Can't wait to try another one of your recipes!

Sadly at least here in the states if you can find a place that makes legit ramen they tend to overcharge. Sometimes they have ramen on the menu but don't advertise it.

I made a version of this with a chicken ramen noodle packet. Added soy sauce, garlic powder, onion powder, a tiny bit of olive oil, and sugar to the “broth”. I fried up some spam and boiled up some eggs which was the hardest part. And sautéed the green onion.
This was great! Not as good as this I’m sure but this was the inspiration. Thank you, Seonkyoung!
EDIT: ramen stored in the fridge overnight and eaten the next morning is BOMB!!! The flavors marinate together longer and the egg soaks in some of the broth. 😭❤️
