Salted Caramel Babka

  • You may have noticed I'm a little obsessed with caramel.
    I think I have every reason to be because caramel (especially the salted variety) is just divine! Mix that with sweet bread, some sugar syrup and dates - then you have a swirling delight made in heaven!
    My family was very surprised when they tasted this. It's exactly as a traditional babka could be, minus the gunk, which includes dairy and an overload of sugar. For this recipe, I used dates, which provide a natural sugar alternative. I also used plant-based butter, which did such a great job.
    If you are intolerant or allergic to dairy, this is a wonderful alternative. You could easily swap the caramel with chocolate, but the caramel matched perfectly with this recipe. I also topped a slice I had with melted biscoff, and let's say that one slice isn't enough!
    Since I have SIBO, I need to be super careful with what I eat, and I allow myself something sweet like this once a week. It allows me to keep my strict diet in place for 98% of the time, and I truly believe that we should all indulge in what we like once a week. I make my own sweets, so I know what goes in them, and it makes a huge difference.

    Babka Dough
    - 5g (1 1/2 teaspoons) active dry yeast
    - 146g (2/3 cup) lukewarm plant-based milk
    - 38g (3 tablespoons) granulated sugar
    - 3 egg yolks
    - 10g (1 tablespoon) vanilla extract
    - 1g (1/4 teaspoon) ground cinnamon
    - 275g (2 cups and 3 tablespoons) bread flour
    - 8g (2 teaspoons) kosher salt
    - 75g (5 tablespoons) unsalted plant butter, room temperature
    - 30g (1/4 cup) bread flour
    - Extra-virgin olive oil or neutral oil, such as grape seed oil or sunflower seed oil, for greasing your hands and the bowl
    Date Caramel
    - 160g (about 10) pitted Medjool dates
    - 4g (1 teaspoon) kosher salt
    - 100g (1/2 cup) Coconut sugar (or brown sugar)
    - 1g (1/4 teaspoon) ground cinnamon
    - 75g (5 tablespoons) unsalted plant butter, room temperature
    Egg Wash
    - 1 egg
    - 2 tablespoons water
    Syrup
    - 40g (3 tablespoons) granulated sugar
    - 45g (3 tablespoons) water
    - You can choose a flavouring, but I left mine as is but added melted biscoff on top - YUM!.
